1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup vegetable shortening
1 cup granulated sugar
1 cup light-brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups old fashioned oats
2 cups Rice Krispies
1 cup sweetened flaked coconut
1 (6 ounce) bag semi-sweet chocolate chips

Steps:

  • 1. Heat oven to 350. Place parchment paper on 4 baking sheets and set aside.
  • 2. In small bowl, blend flour, baking soda, baking powder and salt with a whisk; set aside.
  • 3. In large bowl, beat shortening and both sugards on medium-high speed about 3 minutes or until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
  • 4. On low speed, gradually add flour mixture and beat until just combined. Stir in oats, Rice Krispies, coconut and chocolate chips.
  • 5. Form balls with 2 tablespoons of dough and place 2 inches apart on prepared sheets. Bake at 350 for 10 minutes. Cool on sheets for 5 minutes then transfer to cooling rack to cool completely.

1/3 cup sugar
1/3 cup margarine
1 egg
1 teaspoon maple extract or 1 teaspoon vanilla
1 cup whole wheat flour
1 cup bran flakes
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 cup carrot, grated
1/2 cup raisins

Steps:

  • Combine sugar, margarine, egg, extract in a large bowl.
  • Add whole wheat flour, bran flakes, cinnamon, baking soda, and baking powder, mix until almost combined.
  • Add grated carrot and raisons, mix.
  • Drop spoonfuls of batter onto cookie sheets, and lightly press each cookie to flatten a bit with a fork or bottom of glass.
  • Bake at 350F for 8-10 minutes. Let cool one minute before removing from sheet.
  • Makes 2 1/2 dozen.

1/2 teaspoon kosher salt
1/2 teaspoon baking soda
3/4 cup soft butter
1 cup light brown sugar
1/2 cup sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
1 cup semi-sweet chocolate chips (I like NESTLE)
1 cup bittersweet chocolate chips (I like Ghiradhelli)

Steps:

  • Preheat oven to 350 degrees.
  • Line cookie sheets with parchment.
  • Beat butter and both sugars until well blended.
  • Add in vanilla, egg and yolk until light and creamy.
  • Add in flour, salt and baking soda just until incorporated.
  • Stir in chocolate chips by hand.
  • Chill if you have time but not necessary!
  • Drop by 1/4 cup amounts onto parchment.
  • Mine baked 14-16 minutes until edges are browned and centers no longer look wet.
  • Press a few more chips into the hot cookies and let cool completely on sheets.

1 cup sugar
1 cup brown sugar
2 large eggs, beaten
1 cup rolled oats
1 cup crushed corn flakes
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons vanilla
3/4 cup sweetened flaked coconut
1 cup raisins
1 cup chocolate chips
3/4 cup toffee pieces
3/4 cup chopped walnuts

Steps:

  • Preheat oven to 375°F.
  • In a large mixing bowl, combine oats, corn flakes, sugars, raisins and coconut.
  • Add eggs, vanilla and melted butter.
  • Mix till well blended.
  • Mix in chocolate chips.
  • In a separate bowl, mix flour salt, baking powder and baking soda.
  • Add flour mixture and stir until it is all incorporated into the dough.

1 cup sugar
1 cup brown sugar

1 cup oats (uncooked oatmeal)
1 cup crushed corn flakes
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons vanilla
3/4 cup sweetened flaked coconut (optional)
1 cup raisins (optional)

Steps:

  • Preheat the oven to 375.
