I don't remember where I got this recipe from but it sure is good. It makes a great dish for gatherings. Everybody seems to want the recipe.

1/2 cup sour cream
1/2 cup Miracle Whip
1/4 teaspoon salt
1 tablespoon sugar
2 tablespoons vinegar
1 medium onion
2 medium cucumbers
dill weed or fresh chives, to your tasting

Steps:

  • Peel Cucumbers and scoop out seeds with a spoon.
  • Cut into bite size pieces and sprinkle with salt (no special amount).
  • Let drain for about an hour then rinse cucumbers well with cold water.
  • Cut onions into bite size pieces and add to cucumbers.
  • Mix sour cream, miracle whip, salt sugar, vinegar, and dill weed or chives together and pour over cucumbers & onions.
  • Stir thoroughly.
  • Refrigerate for at least an hour.

We moved here about 3 years ago and we love our home in the country. We plant a garden each year, making sure there's always plenty of cucumbers. I must admit I never really cared for cukes until my mother-in-law prepared them this way. Now they're one of my favorite vegetables.

5 cucumbers, peeled and thinly sliced
1 bunch green onions with tops, chopped
1 cup mayonnaise
1/4 cup evaporated milk
1/4 cup vinegar
1/4 cup sugar
2 drops hot pepper sauce
1 teaspoon dried parsley flakes
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic salt
1/4 teaspoon onion salt

Steps:

  • Combine cucumbers and green onions in a large bowl. Cover and let stand for 1 hour. Combine all remaining ingredients; pour over cucumber mixture and mix well. Refrigerate for several hours.

I don't know where this recipe came from, it's a true midwestern dish that's sure to please anyone who likes cucumbers.

16 ounces sour cream
1/2 cup sugar
1/2 cup vinegar
1/4 teaspoon pepper
1/4 salt
3 cucumbers, medium sliced
1 large onion, medium sliced (sweet or regular)

Steps:

  • Medium slice cucumbers and soak in salt water (6 cups water 2Tbs. salt) this will take the burb out of the cucumbers.
  • Mix sour cream, sugar, vinegar, salt and pepper until smooth.
  • Add DRAINED cucumbers.
  • Slice onion and add, stir until well mixed.
  • Put in a sealed container and place in fridge.
  • Stir whenever you think about it.
  • Takes about 2 days to ferment and get done.
  • It is normal to see air bubbles from the fermentation process, it's ok, let it do it's thing.
  • Serve as a side salad, or the sauce can be a topper on potatoes.

This is a recipe that has been handed down through many generations in my family. I have had people who hate cucumbers tell me that this salad is excellent.

4 peeled sliced thinly cucumbers
1/2 large onion, diced
8 ounces sour cream
8 ounces half-and-half
1 tablespoon vinegar, more to taste
salt

Steps:

  • Salt the cucumbers and onions throughout and place in large bowl; place a plate that will fit inside the bowl on top of them.
  • Let stand in refrigerator for 2 or more hours.
  • When the time is up, drain the water from the cucumbers and onions; add the sour cream, half and half, vinegar and a tablespoon more of salt, if desired. If you do not like it to be too soupy, you can decrease the amounts of the half and half and sour cream by half or more, depending on your taste.
  • Mix thoroughly; place in refrigerator for another half hour to a hour to chill the ingredients and serve.
  • Makes about 10 servings.

1 tablespoon salt (if cucumbers are not firm)
2 tablespoons butter
1/2 cup onion, chopped
pepper, Freshly ground
1/2 cup sour cream or 1/2 cup yogurt
to taste fresh dill, snipped (Lots of)
1 lb cucumber

Steps:

  • Peel the cucumbers if waxed.
  • Cut them in half lengthwise and scoop out the seeds with a spoon.
  • Cut them into 3/4 inch chunks.
  • If the cucumbers are not super-firm, place the chunks in a colander and sprinkle them with 1 tablespoon of salt. Shake to distribute the salt and let them drain for about 20 minutes.
  • Rinse and dry.
  • If the cucumbers are already firm, proceed with the recipe. Place butter in a medium to large skillet over medium heat. When it melts, add the onion and cook, stirring occasionally, until the onion softens, about 5 minutes.
  • Do not let the onion brown.
  • Add the cucumbers and cook, stirring for about 5 minutes, until the cucumbers are just tender.
  • Add pepper and, if you did not salt them earlier, salt. Turn heat to low, then stir in the cream or yogurt and a good handful of dill.
  • Stir until well blended, then serve, garnished with more dill.
