Macaroni Pasta Salad is an old Southern classic recipe. Great for home, picnics, potluck dinners, any old place. Can be prepared a day or two ahead of time if needed and travels well. Best if served chilled.

1 8oz. package Elbow Macaroni, cooked and drained.
1 cup Duke's Mayonnaise
2 Tablespoon Apple Cider Vinegar
1 Tablespoon prepared Mustard
1 teaspoon Sugar
1 teaspoon Salt
1/4 teaspoon Black Pepper
1/2 cup Celery, sliced
1/2 cup Green or Red Sweet Pepper, chopped
1/4 cup Onion, chopped

Steps:

  • Prepare macaroni pasta according to package directions.
  • Drain pasta, set aside.
  • Place Dukes mayonnaise In a large mixing bowl.
  • Add vinegar.
  • Add mustard.
  • Add sugar.
  • Add salt.
  • Add black pepper.
  • Mix together well.
  • Add the drained pasta.
  • Add celery.
  • Add peppers.
  • Add onion.
  • Toss everything to coat well.
  • Cover bowl. Refrigerate for 2 or more hours to chill.
  • Enjoy!

CAROLINA MACARONI SALAD

This recipe comes from kraftfoods.com. This salad is so easy and can be increased as needed to serve many. This is great for potlucks or when cooking for a crowd. The original recipe calls for sandwich spread; however, that is very expensive and I use the alternative of Miracle Whip Salad Dressing and chopped sweet pickles.

1 (7 1/4 ounce) package macaroni & cheese dinner mix
1/4 cup butter
1/4 cup milk
1/3-1/2 cup Miracle Whip
2 -3 hard-boiled eggs, chopped
1 small green pepper, chopped
1 small onion, finely chopped
1 -2 sweet gherkin, chopped
black pepper
paprika

Steps:

  • Boil the macaroni, drain thoroughly.
  • To the macaroni add the butter, milk and cheese packet mixing well.
  • Add the Miracle Whip, eggs, pepper, onion, sweet pickles and black pepper; mix lightly.
  • Sprinkle with paprika, cover and chill several hours or overnight.

2 cups elbow macaroni, or any shape you like
1 cup avocado oil mayonnaise
1/3 cup sweet, tangy tomato-based salad dressing (I use Dorothy Lynch Home Style dressing )
1/3 cup diced onion
1/3 cup diced radishes
1/3 cup frozen peas, defrosted for 10 minutes
Kosher salt and freshly ground black pepper

Steps:

  • Cook the macaroni according to the package directions. Drain the pasta and rinse under cold running water to cool completely. Drain well, put in a large bowl and set aside.
  • Mix the mayonnaise, salad dressing, onion, radishes and peas together in a medium bowl until well combined and evenly distributed. Pour the mixture over the macaroni and fold to combine. Taste and adjust the seasoning with salt and pepper. Serve immediately or cover and refrigerate until ready to serve.

This is my take on macaroni salad. There was not a recipe on Zaar using sandwich spread, so I used it with the mayonnaise.

2 cups elbow macaroni
3 hard-boiled eggs, peeled and diced
1 teaspoon onion powder
1/4 cup pickle relish
1 cup relish sandwich spread, Kraft
2 tablespoons salt
1 tablespoon black pepper, freshly ground
1/2 tablespoon Worcestershire sauce
1/2 teaspoon celery seed
1 cup mayonnaise
1 dash sriracha sauce

Steps:

  • Boil macaroni for 10 to 12 minutes or until cooked. Drain and cool. Boil eggs for 6 to 7 minutes. Cool, peel and dice eggs.
  • Put pasta in large bowl, add spread, pickle relish, celery seed, eggs, salt, pepper, mayonnaise and Sriracha sauce. Mix until well combined. Refrigerate to meld flavors.
  • Refrigeration does not include cook time.

¼ cup white vinegar
2 tablespoons Dijon mustard
2 teaspoons kosher salt, or more to taste
½ teaspoon ground black pepper
⅛ teaspoon cayenne pepper
1 tablespoon white sugar, or more to taste
1 cup finely diced celery
¾ cup diced red bell pepper
½ cup grated carrot
½ cup chopped green onions, white and light parts
¼ cup diced jalapeno pepper
¼ cup diced poblano pepper
1 (16 ounce) package uncooked elbow macaroni
1 tablespoon mayonnaise
1 tablespoon water

Steps:

  • Whisk 1 cup mayonnaise, vinegar, Dijon mustard, salt, black pepper, and cayenne pepper together in a bowl until well blended; whisk in sugar. Stir in celery, red bell pepper, carrot, onions, and jalapeno and poblano peppers. Refrigerate until macaroni is ready to dress.
  • Bring a large pot of well salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through, 8 to 10 minutes. Drain but do not rinse. Allow macaroni to drain in a colander about 5 minutes, shaking out moisture from time to time. Pour macaroni into large bowl; toss to separate and cool to room temperature. Macaroni should be sticky.
  • Pour dressing over macaroni and stir until dressing is evenly distributed. Cover with plastic wrap. Refrigerate at least 4 hours or, ideally, overnight to allow dressing to absorb into the macaroni.
  • Stir salad before serving. Mix 1 tablespoon mayonnaise and 1 tablespoon water into salad for fresher look.

I take this salad to a lot of picinics during the summer and it is always a big hit. I know it looks like a lot of ingredients, but it is really simple to assemble. I vary it with diced ham, turkey or chicken as well. The recipe is easy to double and the serving amount really depends on what you intend on having it for a side dish or a buffet type item.Enjoy!

2/3 cup sour cream (i use low fat)
1/3 cup mayonnaise (i use light here too)
2 tablespoons fresh parsley, chopped
2 tablespoons sweet pickle relish
1 tablespoon spicy brown mustard
1/4 teaspoon white pepper (although black works fine here)
4 cups cooked elbow macaroni (about 8 oz uncooked)
1 cup sliced green onion
1 cup frozen peas, thawed
1 cup shredded sharp cheddar cheese (i use reduced fat)
1/2 cup diced baby carrots
1/2 cup green pepper
1/2 cup sliced celery

Steps:

  • Combine first 6 ingredients in a large bowl; stir well.
  • Add macaroni and remaining ingredients.
  • Toss well to coat.
  • Cover and chill for at least 2 to 4 hours before serving.

  • Cook the pasta in salted water according to the package directions, Drain in a colander and rinse under cold water until cooled. Shake the colander to toss the pasta, and drain for about 5 minutes, tossing occasionally.
  • Transfer the drained pasta to a large bowl. Add the eggs, celery, red bell pepper, red onion and sweet pickles. In a small bowl, mix the mayonnaise, pickle juice, sugar, and Dijon mustard; season with kosher salt and freshly ground black pepper. Add to the macaroni and toss until evenly coated. Season with more salt and pepper to taste then refrigerate for 1 hour before serving. Sprinkle with chopped parsley to add a little color if desired.
