1 dozen fresh large mushroom
3/4 lb bacon
3/4 cup grated cheddar cheese
1/2 cup chopped green onion
2 tablespoons olive oil

Steps:

  • Wash the mushrooms, remove the stems and drain on a paper towel. Fry the bacon until crisp and drain it. When cool, crumble the cooked bacon into small pieces. Mix bacon together with cheese and green onions. Brush mushrooms lightly with olive oil. Place 2-3 teaspoons of bacon mixture in the hollow of each mushroom. Place on broiler pan. Preheat oven to broil. Place stuffed mushrooms under hot broiler and broil 2-3 minutes or until the cheese bubbles. Serve immediately.
  • Note: May be stuffed and refrigerated for several hours before broiling.

Spicy Bacon and Spinach Stuffed Mushrooms image

Mushrooms are stuffed with spinach, bacon and mozzarella cheese and baked until golden brown.

24 large white or cremini mushrooms, wiped clean, stems finely chopped for the filling
2 tablespoons extra-virgin olive oil
Kosher salt
4 tablespoons (1/2 stick) unsalted butter
1 cup packed, chopped stemmed spinach
Kosher salt and freshly ground black pepper
1/2 cup cooked and finely chopped bacon
1/2 cup grated mozzarella
1/4 cup chopped fresh chives
1 cup coarse fresh white breadcrumbs

Steps:

  • Preheat the oven to 425 degrees F.
  • For the mushrooms: If your mushrooms caps are very rounded, trim a very thin slice from the top of the caps to help them sit upright for baking. Toss the mushroom caps with the olive oil and 1/4 teaspoon salt in a large bowl.
  • For the filling: Heat the butter over medium-high heat. Add the chopped mushroom stems and spinach and cook, stirring occasionally, until just soft and wilted, 6 to 8 minutes. Scrape into a large bowl, season with 3/4 teaspoon salt and a few grind of pepper and set aside to cool.
  • Add the bacon, mozzarella and chives to the cooled mushroom stem mixture. Stir in the breadcrumbs until well moistened.
  • Pack each mushroom with an equal amount of filling and transfer the filled mushrooms to a rimmed baking sheet. Bake until the mushrooms are tender and the filling is brown and crispy on top, about 15 minutes. Let cool 5 minutes before removing from the baking sheet.

1/4 teaspoon garlic powder
8 bacon strips, cooked and crumbled

Steps:

  • Preheat broiler. Mix cream cheese and garlic powder. Stir in bacon and green onion., Place mushrooms in an ungreased 15x10x1-in. pan, stem side up. Fill with cream cheese mixture. Broil 4-6 in. from heat until heated through, 4-6 minutes.

4 slices bacon
2 (12 ounce) packages fresh white mushrooms
3 tablespoons butter, melted
6 pitted black olives, finely chopped
¼ cup finely chopped green onion
1 teaspoon oil-packed minced garlic
½ teaspoon salt
¼ teaspoon ground black pepper
1 pinch cayenne pepper
1 tablespoon all-purpose flour
¼ cup milk
4 slices Swiss-flavored American cheese, chopped
3 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon slices to paper towels, reserving bacon drippings in the skillet. Crumble bacon when cooled.
  • Remove stems from mushrooms and set stems aside. Place mushrooms, hollow sides up, on a baking sheet; brush the insides with melted butter.
  • Chop mushroom stems; cook and stir chopped stems, black olives, green onion, and crumbled bacon in the bacon drippings over medium heat until mushroom stems release their liquid, about 5 minutes. Add garlic, salt, black pepper, and cayenne pepper; stir to coat.
  • Tilt the skillet slightly; move vegetable-bacon mixture to one side, allowing the bacon drippings to pool to the other side. Whisk flour into bacon drippings until smooth and paste-like; slowly stir in milk until gravy is smooth. Mix vegetable-bacon mixture into the gravy. Add American cheese and Parmesan cheese; cook and stir until cheeses melt, about 5 minutes. Spoon filling into mushroom caps.
  • Bake in the preheated oven until mushrooms are tender and filling is lightly browned, about 20 minutes. Remove mushrooms from baking sheet and cool on platter for 2 minutes before serving.

1/3 cup diced sweet red pepper
1/4 cup diced red onion

1/2 teaspoon seasoning salt

2 tablespoons vegetable oil
1/2 cup goat cheese or 1/2 cup feta cheese, crumbled
1/2 cup cheddar cheese, shredded

Steps:

  • Remove stems from mushrooms and finely chop; set caps aside.
  • In large skillet, saute the mushroom stems, bacon, red pepper, onion, garlic, salt and pepper in oil until vegetables are crisp-tender.
  • Remove from the heat.
  • Stir in cheeses.
  • Fill each mushroom cap with about 1 T of filling.
  • Place on foil-lined baking sheets.
  • Bake at 400 degrees for 16-20 minutes or until mushrooms are tender.

Nonstick cooking spray, for muffin tin
6 slices Applewood-smoked bacon
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/8 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter, softened
1/2 cup light brown sugar
1 large egg
1/2 teaspoon vanilla extract
1/2 cup half-and-half
6 teaspoons plus 2 tablespoons jarred caramel sauce
1/2 cup clotted cream

Steps:

  • Preheat the oven to 350 degrees F. Spray a 24-cup mini muffin tin with cooking spray.
  • Arrange the bacon in a single layer on a rimmed baking sheet and bake until very crisp and brown, turning once, 18 to 20 minutes. Drain on a paper-towel-lined plate, then chop very finely.
  • Whisk the flour, baking powder and salt together in a medium bowl.
  • Combine the butter and brown sugar in a large bowl and beat with an electric mixer until well combined. Add the egg and vanilla extract and beat until well mixed. Whisk in the half-and-half, and then add the flour mixture; beat until just incorporated, scraping down the sides of the bowl with a rubber spatula as needed. Stir in the chopped bacon.
  • Distribute the batter evenly among the muffin cups, smoothing the surface with moistened fingers. With your finger or a small measuring spoon, make small divots in the center of the batter and spoon 1/4 teaspoon of the caramel sauce into each divot.
  • Bake until a wooden pick inserted into the center of the scuffins comes out clean, about 15 minutes. Cool in the pan for 5 minutes, then remove from the pan and cool completely on a rack.
  • While the scuffins bake, gently swirl together the clotted cream and the remaining 2 tablespoons caramel sauce.
  • Serve the scuffins with the caramel clotted cream.

This is by far my most requested recipe. It has turned many non-mushroom lovers into converts. They will start by just trying the filling and eventually try one with the mushroom. I usually peel my mushrooms, instead of washing them. (I know you lose some of the vitamins), This way they can be prepared up to the baking point a day ahead.

1 tablespoon minced onion
1 teaspoon Worcestershire sauce (optional)

  • Dice bacon and fry until very crisp. Drain on paper towel.
  • Mix onion and Worcestershire sauce with softened cream cheese.
  • Add bacon; mix well.
  • Clean and remove stems from mushrooms.

3 drops Worcestershire sauce

1 pound mushrooms, stems removed

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place the bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until crisp and evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate; crumble the drained bacon into a bowl. Stir in the cream cheese, 2 tablespoons Parmesan cheese, Worcestershire sauce, and pepper until evenly mixed. Spoon the filling into the mushroom caps and place into an 8x8-inch baking dish. 3/4 cup Miracle Whip (may use mayo also)
10 slices bacon
1 small onion, chopped
grated cheddar cheese (as desired)

Steps:

  • Clean mushrooms, remove stems.
  • Fry bacon until crisp and then crumble.
  • Sauté onions in a bit of the bacon grease until softened.
  • In a small bowl mix crumbled bacon, Miracle Whip and onions. Sometimes I go ahead and mix in cheese.
  • Fill each cap with mixture, then if you didn't mix in your cheese already, sprinkle the tops with cheese.
  • Bake at 300°F until cheese is melted and warmed through.

20 mushrooms (pop stems and chop stems)
1 medium onion (chopped)
1 package bacon (cooked very crisp and crumbled)
1 1/2 packages cream cheese (can use light)
parmesan cheese

Steps:

  • Microwave onion and chopped mushroom for 2 minutes on high.
  • Stir and cook a bit longer.
  • While hot, mix in cream cheese.
  • Add bacon.
  • Spoon into mushroom caps.
  • Sprinkle freshly grated parmesan cheese on top.
  • Cover with foil.
  • Bake 20-30 minutes at 350 degrees.
