A luscious, tender Mexican beef stew with very basic ingredients. The oven baking makes the meat extremely tender, and the cumin gives it so much flavor! This is a typical Mexican beef stew, simple, with not a lot of vegetables. Serve folded up in warm tortillas, or on rice or with your favorite cornbread.

2 1/2 lbs chuck roast, trimmed of fat and cut in bite-sized pieces
4 tablespoons flour
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, chopped
2 -3 jalapeno peppers, seeded and minced
3 cups beef stock
2 tablespoons tomato paste
4 teaspoons cumin
1 teaspoon chili powder

Steps:

  • Preheat oven to 350 degrees F.
  • Toss meat pieces with flour, then brown quickly in oil in an ovenproof Dutch oven.
  • Add onion, garlic, jalapeño, beef stock, tomato paste, cumin and chili powder; bring to a simmer on the stove.
  • Cover Dutch oven and place in the preheated oven, baking for about 2 to 2-1/2 hours, until meat is extremely tender.
  • Serve as is, or on rice, or folded into warm tortillas.

AUTHENTIC CARNE GUISADA

A mexican style beef stew. You can also serve this over rice or noodles, but I prefer it on tortillas like a burrito. This doubles and freezes well.

1 lb stewing beef
1 large onion, chopped
3 garlic cloves, chopped (more or less to taste)
4 cups low sodium beef broth (water can be substituted, adjust seasonings)
1 tablespoon chili powder
1 tablespoon comino
2 teaspoons salt
1 teaspoon black pepper
1/3 cup flour
1/3 cup vegetable oil
flour tortilla
fresh cilantro, stems removed
chopped onion
shredded cheddar cheese
sour cream

Steps:

  • Brown beef well in a large cast iron dutch oven, a heavy stainless steel pot can be used with good results.
  • Add onion and garlic and cook until onions are translucent.
  • Add stock, chili powder, comino, salt, and pepper.
  • Bring to a simmer and cook for 2-3 hours or until beef is very tender.
  • In a separate skillet mix flour and oil together to form a roux.
  • Cook over medium high heat until a dark beige color, about 5 minutes.
  • Be careful not to let it burn.
  • Carefully add roux to stewed beef.
  • Be very careful because it can splatter.
  • Bring back to a simmer and thicken, simmer for 5-10 minutes to allow flavors to meld.
  • Serve like a soft taco on flour tortillas with fresh cilantro, chopped onions, shredded cheese and sour cream for garnish.

SOUTH TEXAS CARNE GUISADA

In this recipe, chunks of lean beef are simmered with fresh tomatoes, bell pepper, onion, garlic, and Mexican seasonings to make a rich spicy gravy (guisada). Serve with warm tortillas and garnish with guacamole, sour cream, and/or cheddar cheese for awesome guisada tacos. If your gravy is too thin, whisk a 1/2 cup of the gravy with 1 tablespoon of flour and stir it back into the meat mixture; cook until the sauce thickens, about 10 minutes.

3 tablespoons oil
1 large onion
2 large bell peppers
1 1/2 teaspoons salt

water, to equal 2 cups total liquid

  • cut roast up into bite-sized chunks, discarding fat.
  • brown beef well in oil on all sides.
  • chop onion and peppers, and add to pot. Cook 7 min or so, until softened.
  • Add all spices and flour, and stir. Mixture will be thick. Cook 2 minutes.
  • Combine can of tomatoes in measuring cup with water to equal 2 cups, then add to pot.
  • Bring to boil.
  • Turn to simmer, cover and cook 2 hours, stirring occasionally.
  • Add 4oz tomato sauce and cook another 15 minutes.
  • Dish is finished when beef is very tender, and flakes with fork.

2 ½-3 lbs beef stew meat, cubed
1 small onion, diced
1/2 cup sofrito
8 oz tomato sauce
1 tablespoon adobo
½ teaspoon garlic powder
¼ teaspoon oregano
¼ teaspoon black pepper
1 packet Sazón (optional)
1-2 cups water
1 lb potatoes (about 2), peeled and cubed
1/4 lb carrots (about 2), peeled and cubed
½ cup Spanish green olives or alcaparrado
White rice, for serving

Steps:

  • Heat the oil in a large 6-quart pot over high heat. Add the beef and brown on all sides.
  • Add the sofrito and onion; saute for 2 minutes then stir in the tomato sauce, adobo, garlic powder, oregano, black pepper and Sazón.
  • Add just enough water to cover the meat, about 1-2 cups, and bring to a boil. Cover, reduce heat to a simmer and cook for 1-2 hours, or until meat is tender (check after 1 hour).
  • After meat is tender, add the potatoes, carrots and olives. Add additional water, if needed. Cover and cook for about 30 minutes, or until vegetables are soft.
  • Taste the stew and season with additional adobo or salt if desired.
  • Serve with rice.

7 1/2 pounds shoulder-cut beef, cut into 1/2-inch cubes
1/8 tablespoons salt
3 ounces chili blend (chili powder mixture)
1/2 cup vegetable oil
1/2 cup flour
Flour tortillas, for serving
Cheese, optional, for serving

Steps:

  • Bring 1/2 gallon water to a boil. Add the beef and cook for about 1 1/2 hours. Add the salt and chili blend and cook for another 15 minutes.
  • Start the roux: Heat the oil in a pot over medium heat and stir in the flour until thick. Then add to the beef and water. Stir and let simmer until it comes together.
  • Keep warm and serve on flour tortillas with cheese, if desired.

  • Preaheat oven to 350.
  • Season meat with adobo.
  • Toss meat with flour.
  • In a frying pan large enough to put a single layer of meat add EVOO add olive oil and heat until hot. Add meat and brown.
  • Add all remaining ingredients, scraping up browned bits, and cook over medium high heat until bubbling.
  • Transfer to a 11 by 8 baking pan (holds a single layer of meat) and bake uncovered for 3 hours. The sauce should be very thick and the meat VERY tender.

1 teaspoon ground cumin

2 medium jalapenos, chopped

This is an easy Tejano version of the classic Carne Guisada (Stewed Beef), a recipe that has been passed down for several generations. Made on the stove or in the slow cooker, this meat is perfect for tacos, burrito bowls, salad, etc. Or pick it all out of the pot with your fingers, I'm not gonna judge.

2-3 pounds cheap steak or roast (chopped into bite size pieces*)
1 large onion (chopped well)
3 cups water
8 ounces tomato sauce
2 tablespoons garlic powder
1/2 teaspoon salt
2 tablespoons beef bullion (good quality)
1/2 teaspoon pepper
1/2 teaspoon cumin

Steps:

  • Heat a large, high-sided skillet (or a wide-bottomed pot), over medium high heat.
  • Salt and pepper the beef chunks.
  • Add about a tablespoon of oil to the pan and swirl. It should start to shimmer if the pan is hot enough.
  • Add 1/3 of the seasoned meat to the pan. Place the pieces of meat so that they are not touching each other (You don't want them to steam--see photos). Turn the pieces with tongs to brown all sides. Remove to a plate and repeat 2 more batches, adding more oil as necessary.
  • Remove the final batch of meat, then add the onions to the pan, adding more oil first if there is none left.
  • Saute the onions over medium heat for 5-8 minutes, or until mostly cooked through. Do your best to scrape up the browned bits.
  • Return the meat to the pan. Add the water, tomato sauce, garlic powder, salt**, beef bullion, pepper, and cumin.
  • Bring the mixture to a boil, then reduce to a low simmer. You want there to be some movement. If the mixture is completely still, turn it up a little. I had my burner set just below medium.
  • Simmer for 2-3 hours, or until the meat is tender and the gravy has thickened. Stir occasionally.
  • To serve authentically, put the meat, some rice, cheese, and guacamole in a warm flour tortilla.
  • It's important to note that this is not a shredded beef recipe; "Carne Guisada" literally means "Stewed Beef" so you want it to be just like beef stew, but without any veggies.
  • Don't add 3 cups of water! Read on:
  • Brown the meat and saute the onion as instructed above. Add the meat and onion to a crock pot. In a glass measuring bowl, measure out 1/4 cup HOT water. Add the beef bouillon and dissolve. Add the tomato sauce, garlic powder, salt**, pepper, and cumin to the measuring cup. Stir and combine, then pour over the meat in the crock pot, stirring to coat.
  • Cook on low for 6-7 hours.
  • Remove the lid for the last half hour of cook time, and turn the heat up to high. This is to burn off some of the excess liquid. If it's at a consistency you like, you can skip that step.
  • It's important to note that this is not a shredded beef recipe; "Carne Guisada" literally means "Stewed Beef" so you want it to be just like beef stew, but without any veggies.

  • Browning the meat: Heat the oil in a heavy-bottomed pot over high heat and add the meat and brown.
  • Cooking the meat: Add 4 tablespoons of water, stir and cover. Lower the heat to medium-low.Repeat the process of adding water, stirring, and cooking covered until the meat is very tender, being careful not to burn it.This process can take 35 mins. to 1½ hours depending on the meat (see notes).
  • Cooking vegetables: Once the meat is tender, add peppers, onion, tomatoes, and garlic. Stir, then cook covered until the vegetables are soft.
  • Making sauce: Add the tomato sauce and 1 cup of water and let it reduce to obtain a light sauce.Season with salt to taste, and sprinkle with the parsley. Remove from heat.
  • Serving: Serve with arroz blanco, a side dish (or salad), and beans. It also goes great with moro de habichuelas (Dominican rice and beans).

There's always something comforting about this meal that makes me feel close to home, and especially close to my family. I make this dish every week for my children, but when I do I eat it all day too.

2 pounds chuck roast or other beef stew meat, cut into 1/2-inch cubes (see Cook's Note)
1/2 cup adobo
2 to 3 tablespoons olive oil
1/2 cup tomato paste
1 cup thick-cut carrot rounds (1 to 2 large carrot)
1 cup peeled and diced potatoes (1 medium potato)
1/4 cup sofrito with recao (culantro)
2 tablespoons sazón con achiote (5 packets)
10 pimento-stuffed olives
3 dried bay leaves
1/2 cup fresh cilantro, chopped
Cooked white rice, for serving

Steps:

  • Place the beef in a medium bowl, sprinkle with the adobo, toss to coat and set aside.
  • Heat the oil in a large pot or Dutch oven over medium-high heat. Add the beef and cook, stirring frequently, until seared and mostly browned on all sides, 3 to 5 minutes. Add the tomato paste and cook, stirring constantly to avoid burning, until the meat is coated. Stir in the carrots, potatoes and sofrito until coated. Stir in the sazón until coated. Stir in the olives and bay leaves. Add 4 cups water or enough to fully cover the beef and bring to a boil. Reduce the heat and simmer, stirring occasionally, until the meat is tender, about 1 hour.
  • Remove the stew from the heat and adjust the seasoning if needed. Discard the bay leaves. Stir in the cilantro before serving with white rice.

  • Heat the lard in a Dutch oven or other large, lidded pot over high heat. When it is just barely smoking, add the venison and stir well. Sear the venison well. If it gives off a lot of water, just keep searing it until the water boils away. While this is happening, mix in the salt and cumin.
  • Meanwhile, char the onion, garlic and tomatillos either under a broiler or on a comal or cast iron frying pan. You want some blackening. Roughly chop the onion and put it, the tomatillos, and the garlic (peel it first), into a blender with the sage. Puree this, adding broth as needed.
  • Add the contents of the blender to the pot and stir well. Pour broth into the blender to get all the good bits left there, and pour that in the pot. If by chance you happened to have used chiles pasado and rehydrated them, pour some of the rehydrating water into the pot, too. At the start, everything should be rather thin. Bring this to a simmer and let it cook, stirring occasionally, for 1 hour.
  • After 1 hour, add the green chiles and continue to simmer until the meat is tender. You can eat this as a stew, or continue to cook it down until thickened, in which case you can eat it as a guisado on tortillas.

  • Lightly toss the beef with salt and pepper. In a large pot or a Dutch oven, brown the beef on medium high heat in 2 tablespoons of the oil. You may have to do this in batches.
  • Remove beef from pot, add the final 2 tablespoons of peanut oil and cook on medium heat the onions, jalapeños, and Serranos chiles for about 10 minutes or until the onions are translucent. Add the garlic and cook for another minute.
  • Throw in the browned beef, add the cumin, chili powder, oregano, cilantro, bay leaf, tomatoes, water, and beer and mix everything really well. Add salt to taste.
  • Turn the heat up to high and bring to a boil and then turn the heat down to low and simmer uncovered for 2-4 hours, depending on how tender you want your meat. Taste and adjust seasonings. Serve warm.

  • Dry beef pieces with a paper towel then evenly sprinkle 2 teaspoons salt and 1 teaspoon of pepper over the beef. Heat 1-2 tablespoons of oil in the dutch oven over medium-high heat.
  • When oil shimmers, add half the beef and brown on all sides, about 7-10 minutes. Transfer beef to a plate, then repeat with remaining beef, adding more oil as necessary.
  • Heat 1-2 tablespoon oil, in the same Dutch oven, then add onion and 1/4 teaspoon salt and cook over medium heat, scraping up the brown bits from the meat, until soft, about 5 minutes.

Reduce the heat to low, cover and simmer until the meat is very tender, about 2 hours. Remove the casserole from the heat and skim off the fat.
  • Let the stew stand at room temperature for 15 minutes. Stir in the minced cilantro and season with salt and pepper. Garnish with the cilantro leaves, scallions and cheese and serve. Pass tortillas and lime wedges at the table.
