2 pounds skirt steak
1/2 cup cilantro leaves and stems, finely chopped
1/2 cup olive oil
1/3 cup freshly squeezed orange juice (1 large orange)
1/4 cup freshly squeezed lime juice (2 limes)
3 tablespoons honey
2 tablespoons Mexican oregano or other oregano
4 cloves garlic
1 serrano chile, seeds removed
Kosher salt and freshly ground black pepper
2 limes, cut into wedges, for serving

Steps:

  • Place the skirt steak in a large glass bowl or resealable plastic bag.
  • To make the marinade, add the cilantro, olive oil, orange juice, lime juice, honey, oregano, garlic and serrano chile to a blender. Season with a small pinch of salt and pepper. Blend for 35 to 40 seconds to combine.
  • Pour the marinade all over the steak, moving it around to make sure everything is covered. Cover or seal and transfer to the refrigerator and allow to marinate for at least 1 hour, but no more than 6 (too long in the marinade will cause the steak to begin breaking down).
  • Preheat a grill or grill pan over medium-high heat.
  • When ready, remove the steak from the marinade, letting the excess drip off. Sprinkle generously with salt and pepper and grill about 4 minutes per side for medium.
  • Remove to a cutting board and allow to rest for 5 to 7 minutes. Slice the steak against the grain and serve with the lime wedges.

1 tablespoon finely chopped fresh cilantro
1 teaspoon fresh lime juice
1 teaspoon minced garlic
1/2 teaspoon kosher salt

1/2 teaspoon dark brown sugar
1/2 teaspoon pure chile powder
1/2 teaspoon kosher salt

1 lb flank steak, trimmed of any surface fat (about 3/4 inch thick)
extra virgin olive oil
1 medium red onion, cut crosswise into 1/3 inch slices
1 medium red bell peppers or 1 medium green bell pepper, seeded and cut into flat sections
4 flour tortillas (10 inch)
Tabasco sauce

Steps:

  • Make the guacamole: scoop the avocado flesh into a bowl; add the remaining guacamole ingredients; stir with a fork until combined.
  • Cover with plastic wrap to prevent browning.
  • Make the rub: in a small bowl, combine all the rub ingredients.
  • Lightly brush or spray the flank steak on both sides with oil; season steak evenly with the rub.
  • Let steak stand at room temperature for 20-30 minutes before grilling.
  • Lightly brush or spray the onion and bell peppers on both sides with oil.
  • Grill over direct medium heat until tender, turning once; the onion will take 8-10 minutes and the bell peppers will take 6-8 minutes.
  • Cut the onion and bell peppers into bite-sized pieces.
  • Grill the flank steak over direct high heat until cooked to desired doneness, 8-10 minutes for medium-rare, turning once.
  • Remove from grill and let rest 3-5 minutes.
  • Wrap the tortillas in a foil package; grill the package over direct medium heat to warm the tortillas, 2-3 minutes, turning once.
  • To serve: cut the flank steak against the grain into ¼ inch slices.
  • Place the warm tortillas, sliced, meat, onions, peppers, and guacamole in separate serving dishes.
  • Let each person make their own fajita by placing the fillings down the center of each tortilla and adding Tabasco to taste; wrap and serve warm.

6 cloves garlic, minced
Juice of 2 limes
1 large handful fresh cilantro, leaves and stems, finely chopped
1 jalapeno, seeded and minced
2 tablespoons red wine vinegar
1 teaspoon freshly ground cumin, seeds lightly toasted
1/2 teaspoon sugar
Kosher salt and freshly ground black pepper

Steps:

  • Lay the skirt steak in a large nonreactive bowl or baking dish.
  • Combine the oil, soy sauce, garlic, lime juice, cilantro, jalapeno, red wine vinegar, cumin, sugar and 1 tablespoon each salt and pepper. Pour the marinade over the steak, making it's well coated. Cover and refrigerate for 4 to 6 hours, or overnight.
  • Preheat a grill or cast-iron skillet to high heat. Remove the steak from the marinade, sprinkle both sides with salt and pepper, and place it on the grill. (If cooking indoors, remove excess marinade, as the garlic may burn and smoke).
  • Grill the steak for just a few minutes per side, depending on thickness, until it is cooked to your preference. You may need to work in batches.
  • Transfer the steak to a cutting board and let rest for 5 minutes. Slice the steak thinly against the grain on a diagonal and serve.

2 garlic cloves, minced;

portobello and bell peppers*
2 to 3 large portobello mushrooms, sliced, stems removed;
2 bell peppers, sliced;
1 onion, sliced;
1 tbsp. taco seasoning;
1 tbsp. fresh lime juice;
1 tbsp. olive oil;

Steps:

  • 1.In a bowl, combine the lime, olive oil, cilantro, chilies, garlic, oregano, cumin, and salt and pepper to taste. 2.Pour the marinade over the steaks, and let marinate for 30 minutes. 3.Grill the steaks on both sides to your desired doneness (about 3 to 4 minutes per side for medium rare). 4.Let the steak rest for a few minutes. 5.Heat the olive oil in a skillet over medium heat, and cook the onion and bell peppers for 2 to 3 minutes. 6.Add the mushrooms, taco seasoning, lime juice, and salt and pepper to taste. 7.Cook for 4 to 5 minutes stirring until it starts to soften, but is still firm. 8.Slice the steak against the grain, and serve with the portobello and vegetable medley.

1/2 cup cilantro, chopped
1/2 cup canola oil
1/2 cup fresh lime juice
2 tablespoons chipotle chiles, minced
2 tablespoons adobo sauce
2 tablespoons garlic, minced
2 tablespoons white vinegar, distilled
1 1/2 teaspoons kosher salt
1 teaspoon ground cumin
1 teaspoon black pepper
1 1/2 lbs flank steaks, trimmed
2 teaspoons canola oil
2 red bell peppers, sliced
1 red onion, sliced
6 (10 inch) flour tortillas
2 cups romaine lettuce, chopped
1 -2 avocado, peeled, pitted and sliced
6 tablespoons pico de gallo
2 tablespoons cilantro, chopped

Steps:

  • Combine 1/2 c cilantro, 1/2 oil, lime juice, chipotle, adobo sauce, garlic, vinegar, salt, cumin and black pepper in a large bowl.
  • Add steak to marinade; toss to coat. Cover bowl with plastic and chill 4-12 hours, flipping steak occasionally.
  • Heat 2 T oil in a large cast iron skillet over high heat until it shimmers. Remove steak (reserving 1/4 c marinade) and season with salt and black pepper; cook 5-7 minutes per side for medium rare. Transfer steak to a cutting board and let rest for 10 minutes. Slice steak against the grain.
  • Saute' bell peppers and onion in drippings in skillet with reserved marinade over medium high heat until crisp tender, 3-5 minutes.
  • Warm tortillas in a large nonstick skillet over low heat.
  • Divide the steak, bell pepper-onion mixture, romaine lettuce, avocado, pico de gallo and 2 T cilantro among tortillas. Fold sides of tortilla into center, then roll edge closest to you over the filling; continue rolling and tucking in filling until enclosed.

A great marinade for steak!!! (You can even use it for chicken for Pollo Asada!) I use skirt steak for flap meat, but any thin cut steak would work. This recipe is for up to 4 pounds of meat. Cook time does NOT include marinating time.

1 lime, juice of
1 lemon, juice of
1 oranges, juice of or 1/2 cup orange juice
2 tablespoons chili powder
1 1/2 tablespoons dried oregano leaves
2 tablespoons ground cumin
1 1/2 teaspoons crushed coriander seeds
5 garlic cloves, COARSLEY CHOPPED (OR TO TASTE)
1/4-1/2 cup soy sauce (I USE 1/4 CUP SOY IF USING REGULAR SOY, 1/2 CUP IF USING LITE SOY)
2 sliced jalapeno peppers (or to taste)
1 medium onion, SLICED THIN
4 lbs skirt steaks (or flap meat)

Steps:

  • Combine all ingredients in a 1-gallon ziploc bag.
  • Add meat, seal and massage marinade into meat.
  • Marinate in bag for up to 24 hours, turning and massaging frequently.
  • Grill to medium rare.
  • Serve whole, sliced, or diced for tacos or burritos!

The spices found in the achiote rojo has a very complex and have a deep flavor. Avoid the urge to taste it before diluting it. You will most definitely get the wrong impression of this Mayan mix. If you have trouble finding achiote rojo in your regular market, try a store that caters to the local Hispanics. I direct grill this recipe with a mix of regular charcoal and mesquite charcoal. But it's your choice... you're the chef! Prep time does not include time to marinade.

1 ounce achiote paste
1/2 cup chicken stock
1 teaspoon chili powder
1 teaspoon liquid smoke
1/4 cup fresh cilantro, chopped
1/4 cup onion, chopped
1 garlic clove, chopped
2 lbs flank steaks

Steps:

  • Break up achiote rojo into a powder, or as best you can as it is a little moist.
  • Mix remaining ingredients except meat into the achiote rojo. Mix well to break up any large pieces of the achiote.
  • Place meat in a container or your choice to marinade in and pour the achiote rojo mixture on and work it into the meat.
  • Cover and marinade for as long as possible. Time DOES NOT indicate marinade time.
  • Get the grill going, pop a beer and get busy. Remember, the wood charcoal is very hot. I get it so my hand can stand the heat test for 2-3 seconds. Closer to 2 seconds, though.
  • Put the meat on the grill. Let the meat get good and charred then turn over. Grill for a few minutes and the meat is almost done. At this point make a foil sack to put the meat in . Push the coals away from one side of the grill, put meat in foil sack so that all the meat is covered. Then just put the meat sack on the side where no coals are. They will finish cooking in their own juices.
  • When done let the meat rest a few minutes. Cut on a bias and roll 'em up in tortillas and salsa of choice.

1/2 teaspoon salt
1 1/2 teaspoons ground cumin
3/4 cup red wine vinegar
2 tablespoons lemon juice
1 1/2 teaspoons dried Mexican oregano
4 -5 lbs sirloin tip roast
1/4 cup extra virgin olive oil
2 medium onions, chopped
3 tablespoons all-purpose flour
1/2 cup dry sherry
2 bay leaves
2 tablespoons Worcestershire sauce
7 ounces canned roasted bell peppers or 2 fresh bell peppers, roasted

Steps:

  • In mortar or heavy bowl, mash garlic, salt, cumin, and oregano; blend spices into vinegar and lemon juice and mix well.
  • Score meat in a cross-hatch pattern with deep cuts; rub spice blend into meat, making sure it gets into cuts.
  • Marinate meat 1-4 hours in spice marinade.
  • Preheat oven to 350 degrees F.
  • Drain marinade from meat and reserve.
  • Coat meat in flour and shake away excess.
  • In roasting pan over heat on stove, heat onions in olive oil.
  • Add meat and brown on all sides.
  • Add reserved marinade, wine, bay leaves, Worcestershire sauce, and roasted bell peppers.
  • Cover and roast in oven at 350 degrees F.
  • for 2 hours, basting occasionally, turning meat over several times.
  • Add a mixture of three parts water, one part wine to the pan if the meat starts to stick and the marinade gets low.
  • Remove meat from pan, slice, and roast for 20-25 minutes longer, until meat tests done.
  • Check sauce for seasoning; strain and serve over meat, if desired.

I recently ate Carne Asada Tacos at On the Border Restaurant and fell in love with them. Their menu description is: Premium, mouthwatering carne asada steak drizzled with Jalapeno Ranch dressing and topped with melted cheese and crispy-fried onion strings, all in grilled flatbread tortillas. I came up with this recipe (with some help from other 'zaars) which I believe is a pretty good copy cat. I used the marinade from recipe 103372 by Sharlene--W and modified the dressing recipe 195520 by --Miss Diggy*--.

1/3 cup freshly squeezed lime juice

  • Marinate meat, then prepare ingredients for dressing, before grilling meat.
  • Plan to have flatbread warmed as you are ready to serve meat.
  • Marinate steaks in lime juice in a shallow glass dish for 1 minute.
  • Next add garlic, crushed red chile, black pepper, and Mexican oregano.
  • Marinate in refrigerator for at least 20 but no longer than 40 minutes.
  • While marinating meat:.
  • Combine all ingredients for Jalapeno Ranch Dressing in a 1 cup dish.
  • Mix well and refrigerate to let flavors blend.
  • Preheat oven to 170 degrees (or lowest heat setting).
  • Grill meat to desired doneness
  • Remove steaks from grill and let "rest" for 5 minutes.
  • Before meat is about to be taken off grill or while it is resting, add 1/3-1/2 cup of cheese on each flatbread.
  • Lay the cheese covered flatbreads directly onto middle oven rack and warm until cheese is melted.
  • Once meat has rested, cut meat against the grain into thin strips.
  • On each flatbread add desired amount of meat, 1-2 tablespoons jalapeno ranch dressing and about 1 T french fried onion strings.
  • Enjoy!
