Caution: This recipe includes Almonds; anyone with a nut intolerance should eliminate this product entirely from the recipe. Farm-raised catfish is reported to be naturally low in overall fat and high in protein. Suggested serving with a plain green salad, (olive oil and balsamic vinegar dressing); steamed corn on the cob. A lovely, thick-meat fish, enjoyed frequently by our household. A recipe brochure by DELTA PRIDE, picked up at the supermarket, added to my files and referenced frequently for quick cooking meals.

4 catfish fillets
2 tablespoons low-fat margarine
1/4 cup green pepper, chopped
4 tablespoons onions, chopped
1/4 cup chopped almonds (optional)
1/2 cup fresh breadcrumb
1/4 teaspoon oregano
4 tablespoons fresh lime juice
1 tablespoon coriander or 1 tablespoon parsley (chopped)
1/4 teaspoon salt
2 cups water
2 cloves garlic, crushed
1 bay leaf
1 teaspoon red pepper flakes
lime peel

Steps:

  • Preheat oven to 400 degrees F.
  • Melt margarine in skillet.
  • Add green pepper and 2 tbsp onion.
  • Saute until onion is transparent.
  • Add almonds, (OPTIONAL) bread crumbs, oregano, one tbsp lime juice, coriander (or parsley), and salt.
  • Mix well.
  • Spoon filling down centre of each catfish fillet.
  • Roll up and secure with toothpicks.
  • In shallow baking pan, combine remaining 2 tbsp onion, water, garlic, bay leaf, red pepper and remaining 3 tbsp lime juice.
  • Place catfish in pan.
  • Bake in pre-heated oven for 30-35 minutes, basting occasionally until catfish flakes easily.
  • Remove catfish to serving platter.
  • Granish platter with strips of lime peel.

Adapted from a reader recipe submitted to a Women's magazine . To make this recipe gluten-free suitable- use a gf flour for dusting the fish (my preference is sorghum flour). The suggested fish was Sea Bass, but you can use any fish fillets of your choice.

4 fish fillets
1 lemons or 1 lime
4 garlic cloves, peeled
1 small onion, peeled and roughly chopped
4 spring onions, trimmed
1 scotch bonnet peppers (heat of choice) or 1 red chili (heat of choice)
6 stems fresh coriander
salt & freshly ground black pepper
oil, for frying
plain flour, for dusting (gluten-free if required for diet)

Steps:

  • Wash the fish and pat it dry with absorbent kitchen paper. Squeeze a few drops of lemon or lime juice on to the flesh.
  • Place the garlic, onion, spring onion, chilli, coriander and seasoning into a small blender and purée to a paste.
  • Spread the paste over the fish and leave it to marinate for at least 15 minutes.
  • Heat some oil in a frying pan.
  • Put some plain flour in a bowl and dip the fish in it.
  • Place the fish in the hot oil, without overcrowding the pan. Fry the fish on each side until golden brown.
  • Remove the fish from the pan and place on absorbent kitchen paper to absorb any excess oil.
  • Serve with a light salad on the side.

Now for something completely different, how about a little Caribbean/Creole feel? This can be done with fish or with scallops and will wake up the little taste buds. Please forgive me, I am not a real recipe follower, and I change it around all the time. Hope this works for you, love to hear about it. I never wrote it as a recipe, sort of a seat of the pants guy. One item to complete it that I may add is Zatarain's Caribbean Rice®, and in this I add 1/2 red bell pepper and 1/4 cup of fresh pineapple.

2 teaspoons curry powder
2 teaspoons ground cumin
1 ½ teaspoons ground allspice
1 teaspoon ground ginger
1 teaspoon ground coriander
¾ teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground fennel seed
⅛ teaspoon cayenne pepper
1 mango - peeled, seeded and diced
1 cup chopped fresh pineapple
½ red bell pepper, chopped
½ cup black beans, rinsed and drained
½ red onion, finely chopped
3 tablespoons chopped fresh cilantro
3 tablespoons fresh lime juice
1 egg
⅓ cup milk
1 cup panko bread crumbs
1 tablespoon dried unsweetened coconut, or to taste
1 tablespoon olive oil, or as needed
5 (4 ounce) fillets tilapia

Steps:

  • Mix together the paprika, curry powder, cumin, allspice, ginger, coriander, salt, black pepper, fennel, and cayenne pepper in a bowl; set the spice mix aside.
  • In a bowl, lightly toss the mango, pineapple, red bell pepper, black beans, red onion, and cilantro in a bowl; pour lime juice over the mango mixture, and toss again. Cover the bowl, and refrigerate until chilled, at least 30 minutes.
  • Whisk together the egg and milk in a bowl. In a separate shallow bowl, stir the panko crumbs with coconut. Stir about 1 tablespoon of the spice mix, or to taste, into the panko crumb mixture.
  • Heat olive oil in a skillet over medium heat. Dip tilapia fillets into the egg mixture, then press gently into the panko crumb mixture to coat both sides of fillets. Brush off any loose crumbs, then lay the fillets into the hot oil. Pan-fry until the fish is opaque inside and golden brown outside, 3 to 5 minutes per side or as needed. Serve with mango salsa.

2 tablespoons vegetable oil
½ pound peeled, matchstick-cut fresh ginger
4 (4 ounce) catfish fillets
2 tablespoons fish sauce
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 large yellow onion, sliced
¼ red bell pepper, cut into thin matchsticks
½ bunch green onions, cut into 1/4-inch pieces

Steps:

  • Heat oil in a large skillet over medium heat. Cook and stir ginger in the hot oil until slightly softened and brown, 5 to 7 minutes. Add catfish fillets; cook until firm, about 3 minutes per side. Remove fillets from the skillet to a plate and set aside.
  • Stir fish sauce, soy sauce, and oyster sauce together in the skillet. Add onion and red bell pepper; cook and stir until softened, about 4 minutes. Return catfish fillets to the skillet and spoon sauce and vegetables over the fillets. Continue cooking until the flesh of the fish flakes easily with a fork, about 3 minutes more. Garnish with green onions to serve.
