POTATO LATKES WITH CARAMELIZED ONION SOUR CREAM

Steps:
- For the caramelized onion sour cream: Heat the oil in a large skillet over medium heat and add the onion, sugar and 1/4 teaspoon of the salt. Cook, stirring, until the onions are golden brown and caramelized, 30 to 40 minutes. Add the garlic and cook for 2 more minutes. Let cool.
- Mix together the onion mixture, sour cream, onion powder, a few turns of black pepper and remaining 1/4 teaspoon salt. Taste and adjust the seasoning as desired. Cover and refrigerate until ready to serve.
- For the potato latkes: Meanwhile, using the shredding attachment on a food processor (or mandoline), shred the potatoes, onions and garlic. Line a colander with 2 layers of cheesecloth and set it over a bowl or in the sink. Add the shredded mixture to the cheesecloth and sprinkle with the kosher salt. Let sit for 30 to 45 minutes.
- Gather up the edges of the cheesecloth and use your hands to squeeze out any excess moisture.
- In a large bowl, mix together the breadcrumbs, lemon juice, eggs, a few turns of black pepper and the potato mixture. Stir in the scallions.
- In a large skillet, heat 1/4 inch of oil over medium-high heat until shimmering; it's ready when a strand of potato added to the oil immediately starts to sizzle. Use a 1/2-cup ice cream scoop to add compact scoops of the mixture to the oil, spacing them out so as not to crowd the pan. Press the scoops down lightly with a spatula to get 1/2-inch-thick patties. Fry until golden brown on both sides, a few minutes per side. Transfer to a wire rack or paper towels and sprinkle with flaky or kosher salt. Repeat with the remaining mixture, adding more oil to the pan as needed between batches.
- Sprinkle the caramelized onion sour cream with chopped scallions and serve with the warm latkes.
CARAMELIZED ONION POTATO TART

- Preheat oven to 350 degrees F.
- Set a large skillet over medium heat and add 4 tablespoons of olive oil. Add sliced onions and cook over medium heat for 10 to 12 minutes until they are tender and brown all over.
- Using a mandolin (or sharp knife), finely slice the potatoes into rounds (you can place them in a bowl with a wet towel over the top to stop them from going brown while you work). Place the potatoes into a bowl and season with salt and pepper. When ready, add the onions and toss to combine without breaking potatoes.
- Add about 1 tablespoon water to the same pan the onions were cooked in and allow it to come to a bubble. Using layered paper towels, wipe the pan clean.
- Add some extra-virgin olive oil to the pan and add the potatoes to the pan, making sure the potatoes are flat. Top with the diced butter.
- Take a piece of parchment paper and fold in half. Find the middle of the parchment along the crease and hold in place with your finger. Taking the right side of the parchment, pull it towards the center and fold it straight down to create a diagonal edge. Fold the parchment in half to create a triangle. Place the pointed edge in the middle of the saute pan on top of the potatoes to find its radius. Make a marker of where the pan edge ends (or starts). At this point you can cut the parchment at this marker and open to reveal a circle.
- Cover the potatoes with the parchment paper and press down. Drizzle some extra-virgin olive oil over the top so it down burn and rub it in.
- Place the pan into the oven on the top rack and bake for about 45 minutes.
- When done remove from oven and run a knife around the edge to separate from the pan. Place a large plate on top of the saute pan and flip. Remove the saute pan. Allow to cool slightly before cutting into slices.

These are all my favorite things, carmelized onions, potatoes and corn. I rarely use the red onion and use a vidalia instead but the red would also add a nice color. - Peel the cold potatoes carefully with a paring knife and gently grate them with the coarse side of a cheese grater and set aside.
- Lightly spray a sauté pan with nonstick cooking spray over medium-high heat.
- Sauté the onions and peppers for about 5 minutes until the onions begin to brown. Add the corn, garlic and herbs and cook 2 to 3 minutes longer.
- Set aside to cool.

- In a large frying pan, heat the 4 tablespoons oil.
- Add the onion and cook gently over low heat for 20 minutes, occasionally shaking the pan.
- In boiling, lightly salted water, cook the potatoes until tender, about 10-15 minutes. Drain; rinse in cold water, then peel.
- Add potatoes to the onions in the frying pan with a little extra oil if necessary. Turn up heat, sprinkle sugar over and allow to caramelize.
- Add a few tablespoons vinegar to soften the caramel, then remove from heat.

- Preheat oven to 325°F.
- Place potatoes in large saucepan with salted cold water to cover and bring to boil over high heat.
- Cook till tender, about 10 minutes.
- Drain well.
- Scatter on a baking sheet & let cool for several minutes.
- Place in oven to dry out, about 5 minutes.
- Press potatoes through a ricer or mash with a potato masher.

- Cook onions in butter in large saute pan over medium-high heat, 8-10 minutes or until golden brown, stirring frequently.
- Remove onions with slotted spoon and add to the cream mixture.

- Preheat oven to 375°F.
- In a large stone baking dish (or of your preference as long as it is at least 9x13 and deep enough to accommodate the ingredients); melt the stick of margarine in the oven.
- When the margarine is melted, or extrememly soft, toss in the rest of the ingredients.
- Cover with aluminum foil.
- Bake in the pre-heated oven for 30 minutes.
- Take the dish out, carefully remove the foil (be mindful of the steam,) and stir the vegetables.
- Place in the oven (without the foil, this time) and bake for an additional 30 minutes or until the potatoes are fork tender.

- Cook potatoes until tender, about 20 minutes. Let the potatoes cool slightly, then peel and cut them into 1/4 inch-thick slices.
- Meanwhile, heat the canola and olive oils in a medium skillet. Add the onions and cook over moderately high heat, stirring occasionally, until softened and just beginning to brown, about 5 minutes. Reduce the heat to moderately low and cook, stirring, until caramelized, about 15 minutes; add 1 to 2 tablespoons of water if the skillet is dry. I came up with this looking for an inexpensive lunch dish and or a quick bread accompaniment for stews and stir fries. My kids love them anytime of day or night, hot or cold, with mustard, ketchup, or sweet chili sauce or just in the hand and out the door.

- Dice the onion coarsely or slice.
- Add oil to a skillet or wok and caramelize the onions and garlic together. This may take up to 30 min and can be done the night before, in mass, or early. You want them a caramel looking brown color.
- Add your tarragon or herbs in the last 5 minutes of this process.
- Let the onions cool and prepare the batter.
- In a medium size bowl beat your eggs, milk and 2 Tablespoons of oil together. Set aside.
- In a small bowl mix dry batter ingredients, flours, baking powder, salt, sugar, and pepper. Stir well. Add the dry ingredients to the egg and milk mixture stirring until fairly smooth. Some lumps are fine.
- Now stir in the cooled caramelized onions and herbs.
- Fry as you would any other pancake on a hot sprayed or oiled griddle at around 400°F.
- Serve with stew, as lunch, snack, or breakfast.

- Heat butter in a large nonstick skillet over medium-high heat Add onion and cook, stirring occasionally, 12 to 15 minutes or until apples and onions are very tender and golden brown. Stir in brown sugar, vinegar, salt and pepper. Cover and set aside to keep warm.
- Combine potato pancake mix and water and whisk until smooth. Let stand 10 minutes to thicken. Heat a large nonstick skillet over medium high heat. Add 2 tablespoons oil to the skillet. Working in batches of 5 or 6 pancakes at a time, drop about 2 1/2 tablespoons of batter into skillet for each pancake, flattening with the back of a spoon to form 3-inch diameter pancakes. - To serve, divide potato pancakes among 8 serving plates, top evenly with caramelized apples and onions and top each with 1 tablespoon sour cream.
