- In a food processor, combine flour, yeast and sugar. With the machine running, add the warm water and allow the dough to come together for around 20-30 seconds. Let the dough rest for 5 minutes, then add the olive oil, egg yolk and salt and run the machine for another 30 seconds. Place the dough in a large oiled bowl and cover. Allow the dough to double in size. Divide the dough in half. If you're only making one pizza, wrap half the dough in plastic and refrigerate. Place one or both circles of dough back in the bowl, cover, and allow to rest while preparing the onions and sauce.
- Heat 2 tablespoons olive oil in a large skillet on low heat. Add onions and a pinch of salt. Have a measuring cup full of water nearby. Cook the onions on low heat, stirring frequently, until the onions begin to brown. Turn up the heat to medium and continue caramelizing the onions. As a glaze develops on the bottom of the pan, add a few tablespoons of water and scrape up the brown bits, incorporating them into the onions. The heat will cause the water to evaporate. Repeat this process for approximately 25-30 minutes, keeping a close eye on the onions to make sure they don't burn. When the onions have turned a dark brown color and are both bitter and sweet in flavor, remove from the heat and set aside.
- Preheat the oven to 500 degrees F. Sprinkle some semolina flour on a large baking sheet. You can also use a pizza stone and peel if you prefer.

- Follow the directions for this pizza dough recipe and make only ⅓ of the recipe, or feel free to sub your own if you have a favourite. Please note: the pizza dough that I linked to does take 18 hours before it is ready. You’ll need to plan ahead!
- Combine all the ingredients in a small saucepan with high sides and bring it to a boil. Reduce the heat to medium and let the sauce boil, uncovered, for 10 minutes, or until it has thickened. Whisk the sauce occasionally while it is cooking. It will splatter A LOT which is why you want a pot with high sides. Don’t cover it or it won’t thicken.
- Place the oven rack in the top third of your oven and preheat it oven to 500 degrees. If you are using a pizza stone or steel, place it in your oven before you turn it on.

- Make the caramelized onions: Place the onions, salt, and a bit of olive oil in a large skillet (cast iron works the best) over medium-high heat. Saute until they just start to brown, about 5 minutes. Turn the heat down to medium-low and continue to cook for another 60-90 minutes, stirring every 7-10 minutes.
- Make the pesto: Set a small skillet over medium-high heat and add the pine nuts and unpeeled garlic. Toss constantly until the pine nuts just start to brown. Transfer them to a food processor, but leave the garlic in the pan. Cook the garlic for about 10 minutes, turning every so often until some small black spots appear on the outside and the cloves feel soft.
- Add the basil to the food processor, along with the olive oil, nutritional yeast, sea salt, and lemon juice. Process until smooth. When the garlic is ready, peel the cloves, toss them in, and process until smooth. Add more salt or lemon juice to taste.
- Preheat oven to 450°F. Press or roll your dough into two 10″ rounds on parchment paper. Spread 1/3 of the pesto over the surface of each pizza and top with tomatoes, mushrooms, caramelized onions, and cheese. Sprinkle with some black pepper, if desired.

- In a large bowl, mix the yeast with the water and sugar and let stand until foamy, about 5 minutes. Add the olive oil, thyme and salt. Add 2 cups of the flour and stir until a very soft, wet dough forms. Turn the dough out onto a lightly floured work surface and knead, working in about 1/3 cup more flour, until the dough is soft and silky. Shape into a ball and put in a large, oiled bowl. Cover and let rise until doubled in bulk, about 1 hour at room temperature or overnight in the refrigerator.
- Preheat the oven to 450°. Oil 2 large baking sheets. Heat the olive oil in a large skillet. Add the onions and stir to coat with the oil. Cover and cook over moderate heat, stirring, until the onions are softened, about 5 minutes. Uncover and cook the onions over high heat until golden brown, about 8 minutes longer. If the onions dry out, add a few tablespoons of water. Season the onions with salt and pepper, transfer to a plate and let cool slightly.
- Punch down the dough and turn it out onto a lightly floured work surface. Divide the dough into 8 equal pieces. Roll each piece out to a 9-by-3-inch rectangle and arrange on the prepared baking sheets. Top the dough with the Fontina, sautéed onions and prosciutto. Bake for 25 minutes, or until golden and crisp.
- In a large bowl, whisk the grapeseed oil, truffle oil and vinegar; season with salt and pepper. Add the apple and arugula and toss. Top the hot pizzas with the salad and serve immediately.

- In a small saute pan over medium heat, add 1 tablespoon olive oil and the thinly sliced onion. Saute for 10 minutes until golden brown and fragrant. Remove from the pan and set aside.

- Spread the pizza dough out on a round pizza pan. Drizzle on the remaining 3 tablespoons of olive oil and spread out the minced garlic pieces across the dough, leaving a 1/2 inch around the perimeter for a crust. Layer on the caramelized onions, then sprinkle on the mozzarella and 1/4 cup of the gorgonzola. Spread out the cooked pear slices and place pizza in the oven for 15 minutes to bake. Pizza is done when the underneath is firm and golden and the cheese is golden brown.
