8 ounces light brown palm sugar or light brown sugar
5/8 cup fish sauce
2 tablespoons canola oil
2 medium shallots, sliced lengthwise into rings
2 Thai chilies, halved
1-inch piece fresh ginger, peeled and julienned
1/2 cup Caramel Sauce
Freshly ground black pepper
9 ounces boneless, skinless chicken thighs, cut into chunks
Cilantro, for garnish
Steamed jasmine rice, for serving (optional)

Steps:

  • For the caramel sauce: In a medium saucepan, melt the sugar with fish sauce over medium-low heat, about 10 to 12 minutes.
  • For the chicken: Heat the oil in a shallow claypot or sauté pan over medium heat. Add the shallots, chilies, ginger, ½ cup of caramel sauce, and plenty of freshly ground black pepper; bring to a boil. Continue cooking to reduce slightly, about 4-5 minutes, then add the chicken. Turn the heat down and simmer, stirring occasionally until the chicken is cooked through, about 20 minutes.
  • Garnish with cilantro and serve with steamed jasmine rice (optional).

This is a Vietnamese classic of caramelized, sweet and salty braised fish with a moutwatering sauce perfect with lots of white rice.

1 lb catfish filets (bone and skin optional)
salt to clean the fish
2 tbsp oil
5 cloves garlic (minced)
1/2 yellow onion (sliced)
1 tsp salt
1.5 tbsp fish sauce
About 1/2 teaspoon thick soy sauce
1/2 c water
1/2 c coconut juice (or replace water & coconut juice with 1 cup coconut soda)
1 chile (sliced (to taste, optional))
freshly ground black pepper (or add as a final topping when serving)
1 green onions (roughly chopped)
black pepper (freshly ground )
1 red chile (sliced, optional)

Steps:

  • Generously salt fish and rinse under water to clean it. Set aside to dry.
  • Add oil to a pan and saute garlic over medium heat until lightly browned.
  • Layer onion on top, then the fish, evenly spaced.
  • Add the seasoning & cooking liquid (& optional chiles) and turn the heat to high until boiling. Taste the sauce and adjust the seasoning.
  • Bring it to a simmer for ~20 minutes. Adjust seasoning if needed.
  • Gently flip the filets of fish over and simmer for a final ~10 minutes with the lid partially covered.
  • Stand there to watch it the final ~10 minutes to prevent it from burning! During this time you can continually spoon the sauce over the fish.
  • Add green onion during last 2 minutes to wilt & top with sliced chiles, and some freshly ground black pepper.

Vietnamese Fish Simmered in Caramel Sauce (Ca Kho To) image

This is one of my favorite dishes at a local Vietnamese restaurant. I searched around the internet for the recipe and this is what a came up with. I just made this tonight and am quite surprised how close it taste to the restaurant version. It is normally made in a clay pot but a 2-quart saucepan will suffice. Beware, fish sauce is a very pungent ingredient.

1 1/2 lbs catfish or 1 1/2 lbs red snapper fillets, cut up into about 4 inch pieces
1/3 cup white sugar
1/4 cup fish sauce (preferably Three Crabs Brand)
4 shallots, thinly sliced
1 tablespoon chopped fresh chili pepper
2 slices ginger, julienned
ground black pepper

Steps:

  • In a heavy 2-quart saucepan, cook the sugar over low to medium heat, swirling the pan constantly, until brown and caramelized.
  • Remove pan from heat and stir the fish sauce into the caramel.
  • It will smoke slightly.
  • Return the pan to low heat and gently boil for about couple minutes while stirring until the sugar is completely dissolved.
  • Stir in the shallots, chili and ginger.
  • Add the fish in the caramel sauce and sprinkle with black pepper.
  • Bring to a boil.
  • Reduce the heat to low and cover the pan.
  • Simmer for 30-45 minutes, turning the fish occasionally and carefully.
  • Serve with rice.

Vietnamese caramel chicken, known as ga kho, is easy to make at home with fish sauce, palm sugar, chicken, ginger, and black pepper. The recipe is authentic as it gets and comes from The Slanted Door restaurant in San Francisco.

1 pound Asian palm sugar* (coarsely chopped)
1 1/4 cups fish sauce ((we prefer Three Crabs brand but any fish sauce in a glass, as opposed to plastic, bottle is preferable))
12 ounces boneless, skinless chicken thighs ((about 4), trimmed)
2 tablespoons mild olive oil or vegetable oil
1-inch piece fresh ginger (peeled and julienned)
2 medium shallots (thinly sliced lengthwise into rings)
1 to 2 Thai or serrano chile peppers (halved lengthwise and seeded, if desired)
Cilantro leaves and stems (chopped, for garnish)
Freshly ground black pepper
Steamed jasmine rice (for serving)

Steps:

  • Dump the palm sugar in a small saucepan over medium-low heat and wait until the sugar sorta melts, which can take anywhere from 5 to 25 minutes. (If substituting light brown sugar for the palm sugar, you'll need to add a tablespoon or two cold water to the sugar before you place it over the heat and stir almost constantly as it melts.) Palm sugar is still a touch grainy even when it melts and that's okay. It may smoke ever so slightly, and that's okay. If the sugar appears to seize or scorch, though, lower the heat and go ahead and stir it.
  • Meanwhile, measure your fish sauce and have it at the ready.
  • When the sugar melts, turn off the heat under the sugar and slowly and carefully stir in the fish sauce, taking care as it may bubble and spatter. If the sugar seizes into clumps, simply return the pan to low heat and stir until everything melts once again. Let cool. The caramel sauce will thicken as it cools. Store in an airtight container for up to 1 month.
  • Cut the chicken thighs into bite-size pieces.
  • In a 10-inch claypot or sauté pan over medium heat, heat the oil. Add the ginger and shallots and sauté until softened, about 2 minutes. Increase the heat to medium-high and add the chiles, chicken, and 1/4 cup caramel sauce. Bring to a boil, then turn the heat down and simmer, uncovered, stirring or turning the chicken occasionally, until the chicken is cooked through and the sauce is bubbling, a shade darker, and thicker and stickier, 10 to 20 minutes. Garnish with cilantro and gobs of black pepper. Serve immediately with steamed rice.

½ cup mixed mushrooms
1 chicken thigh (chopped)
2 cm Lap Chong (finely sliced)
1 tbsp light soy
2 tsp dark soy
½ tsp sugar
1 ½ tbsp cornflour
1 tsp Shaoxing wine
2 tsp oyster sauce
½ tsp salt
¼ tsp white pepper
1 spring onion (chopped)
1 cup rice
1 cup chicken stock
1 tbsp Yeo's sesame oil
½ tsp ginger (finely chopped)
½ tsp salt

Steps:

  • Soak the clay pot and lid in water for 30 minutes to prevent it cracking.
  • In a bowl, mix together: mushrooms, chicken, light and dark soy, sugar, cornflour, Shaoxing wine, oyster sauce, salt and pepper, and lap chong. Marinate for 5 minutes.
  • Using the clay pot, pour in rice with the chicken stock, sesame oil, ginger and salt, stir.
  • Arrange chicken and mushroom mixture on top of the rice.
  • On the stove, turn the heat to high and cook the clay pot for 5 minutes.
  • Turn the heat to low, then cook for another 25 minutes. Once the rice is tender, sprinkle fresh spring onions - serve!
  • Be careful as the clay pot will be extremely hot!

This classic braised caramelized catfish is the heart and soul of home style Vietnamese food.

2 lb catfish (steaks)
2 tbs fish sauce
4 tbs sugar (divided)
1 tbs shallots (minced)
1 tbs garlic (minced)
2 tbs oil
3 green onions (sliced 1 inches long)
1.5 cup coconut water
1-2 thai chili (thinly sliced, optional)
1 ts Fresh cracked pepper

Steps:

  • Marinade fish with fish sauce, 2 Tb sugar, garlic, and shallots for at least min 10 min.
  • In heavy pot such as dutch oven, heat 2 tbs of sugar on medium high and stir until sugar melts and becomes dark mohogany, Immediately add the oil to stop caramelization and stir. Add the garlic and shallots and sear the fish steaks, turning once after it has browned. Add coconut water turn to med low heat. Cover pot for 3-4 minutes for fish to cook through and then remove cover to reduce the sauce to about 1/2. Season to taste, with fish sauce or sugar if needed. Add optional chili and stir into the sauce. Finish with fresh cracked pepper, green onions. Serve immediately with white rice.

1/2 pound chicken breast, cut into 3/4-inch cubes
1/2 pound chicken thigh meat, cut into 3/4-inch cubes
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons soy sauce
2 teaspoons dark soy sauce
1/4 cup water
2 tablespoons white vinegar
1 teaspoon lemon juice
1 teaspoon white sugar
1 1/2 ounces "brown candy" sugar (found in most Asian grocery stores), broken into smaller pieces or 1/4 cup lightly packed dark brown sugar
3 tablespoons fish sauce
1 or 2 Thai chiles, minced
1 clove garlic, minced
1 tablespoon fresh ginger, peeled and sliced into thin strips
Garnish: Two to three sprigs of cilantro

Steps:

  • Place the chicken cubes in a large bowl and add garlic powder, salt, and black pepper. Cover and place in refrigerator. Combine the soy sauce, dark soy sauce, water, white vinegar, lemon juice, and sugar in a bowl and set aside.
  • Heat a 4-quart saucepot or clay pot over low heat. Add brown candy pieces or brown sugar and melt slowly over medium heat, stirring frequently to avoid sticking and burning. When sugar comes to a slow boil, carefully add fish sauce. Add the soy sauce mixture, Thai chile, garlic, and ginger. Add chicken to the liquid and cook, stirring occasionally, until chicken is tender, about 8 minutes.

Nothing reminds me more of traditional Vietnamese home cooking than caramelized catfish. Gently braised in fish sauce and coconut juice, this classic sweet and savory side dish is the taste of home.

3 lbs catfish (slice into 1-1/2-inch thick steaks)
4 tablespoons fish sauce
1 tablespoon granulated sugar
2 tablespoons vegetable oil
1 tablespoon granulated sugar
1 shallot (mince)
3 garlic cloves (mince)
½ can Coco Rico coconut soda (6 oz)
1 green onion (slice thinly)
¼ teaspoon black pepper

Steps:

  • Marinate catfish steaks with fish sauce and sugar for at least 30 minutes.
  • In a clay pot or skillet, heat vegetable oil on medium-high. Sprinkle a thin layer of sugar (1 tablespoon) onto the oil and heat until the sugar caramelizes to an amber color. Immediately, add shallot and garlic and saute until fragrant (about 15 seconds).
  • Add marinated catfish and all its marinade liquid, if any, into the skillet. Flip catfish on all sides to evenly coat with aromatics and caramel sauce (color will darken while braising).
  • Add coconut soda and gently cook on a low simmer for a total of 20 minutes, partially covered. At the halfway mark, flip the catfish so that the top gets a chance to absorb the braising liquid. If you find that the fish its too delicate to flip, spoon braising liquid over the catfish instead.
  • Top with green onions and black pepper when ready to serve.
