APRICOT DESSERT BRUSCHETTA
Years ago, my mother took a trip to Italy, and this recipe reminds her of the sun-kissed fruits from the orchards there. It's a lovely apricot dessert that's not overly sweet or heavy. -Deborah Biggs, Omaha, Nebraska

- Place bread on an ungreased baking sheet. Bake at 350° for until toasted, 4-6 minutes. Cool., Meanwhile, in a small saucepan, combine apricots, nectar and lemon peel. Bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Remove from the heat; cool to room temperature. Strain and discard liquid., Combine cheese and preserves; spread over toasted bread. Top with apricot mixture. Sprinkle with almonds.

BRUSCHETTA WITH CARAMELIZED ONION AND FRESH BASIL
I might as well jump on the Bruschetta Bandwagon! Experiment using local onions in your area! Also, try other similar hard cheeses in place of the Parmesan: asiago, fontina, pecorino romano, etc. From the cookinglight.com website with some changes.

Steps:
- Preheat oven on BROIL.
- Heat the butter and olive oil in a small skillet over medium heat. Add the onion and sugar; cook 15-20 minutes or until very soft and golden brown; stirring frequently. Remove from heat.
- Cool mixture slightly then stir in the fresh basil.
- Cut baguette into 1/2" slices. Place bread slices on a baking sheet.
- Broil the bread for 2 minutes or until toasted. Watch oven carefully!
- Divide and spread caramelized onion mixture over each bread slice. Sprinkle with Parmesan cheese and season with fresh cracked black pepper.
- Return to oven and broil for 1 minute or until cheese melts.
- Garnish each slice with 1 or 2 fresh basil leaves if desired.
APRICOT AND CHICKEN BRUSCHETTA

- Preheat the oven to 350 degrees F.
- Slice the bread into 10 slices, each about 1/2-inch thick. Brush the bread slices with the olive oil and arrange on a baking sheet. Bake for 10 to 15 minutes until crisp and golden. Cool to room temperature.
- Spread each slice of the toasted bread with the apricot preserves then place a slice of the cheese on top. Arrange the sliced chicken on top of the cheese. Cut each piece of prosciutto in half and place on top of the chicken. Transfer the bruschetta to a serving platter. Drizzle with the extra-virgin olive oil and serve.

- Caramelize apricots: Pour honey/maple syrup into a cast iron (or non stick pan), add apricots and saute for about 10 minutes, or until apricots are caramelized
- Slice bread: While the apricots cook, slice the bread into 1-inch thick slices, set aside
- Lemon ricotta: Mix ricotta, lemon juice and zest, honey and salt in a small bowl
- Assemble: Spread ricotta mixture over each slice of bread, add caramelized apricots, garnish with mint, thyme and chopped pistachios. Enjoy!

- In a dry heavy saucepan (about 3-quart capacity) cook sugar over moderate heat, stirring with a fork until melted and then swirling pan, until sugar is a golden caramel. Remove pan from heat and carefully add 3 cups water down side of pan (it will bubble up and steam). Return pan to heat and simmer, stirring, until caramel is dissolved.
- Add apricots and simmer, covered, until soft, about 10 minutes. Cool mixture 10 minutes and in a blender purée with remaining 1 cup water and vanilla until very smooth. Sauce may be made 3 days ahead and chilled, covered. Reheat sauce to warm.
CREAMED-MUSHROOM BRUSCHETTA WITH CARAMELIZED ONIONS
Start by making the caramelized onions. These take a great deal of time. The onions here, barely slicked with neutral oil, surrounded by sweet wine, can take up to 30 minutes to achieve the excellence you are looking for. You stir and stir and stir.

- Heat a heavy-bottomed pan over high heat. Once the pan is hot, add vegetable oil. Once the oil shimmers, add the onions and salt. Do not stir immediately. Wait 1 minute, then begin to stir frequently over high heat for 5 minutes, or until the onions have released liquid and started to become translucent.
- Turn the heat down to medium and add Marsala. Cook, stirring often, for what will seem like an eternity, until the onions are fully melted and dark brown, approximately 20 to 30 minutes.
- Heat a heavy-bottomed pan with high sides over high heat. Once the pan is hot, add vegetable oil. Once the oil shimmers, add butter. When butter foams, add mushrooms and cook, stirring occasionally, until the mushrooms have released their liquid and are golden brown, approximately 15 to 20 minutes.
- Reduce heat to medium low and, using a wooden spoon, create a well in the middle of the mushrooms. Add thyme, salt, black pepper and shallots; sweat until shallots have cooked through and become translucent, approximately 3 to 5 minutes.
- Return heat to high and add sherry vinegar to deglaze pan, then add cream and bring to a low boil.
- Check for seasoning. Mushrooms can be reserved until needed, then reheated over a medium flame. Add a splash of extra cream to loosen, if needed.
- Grill or toast bread to a light char.
- Spread 2 tablespoons caramelized onions over each piece of toast, followed by approximately 1/4 cup of creamed mushrooms.
- Garnish with minced chives.
APRICOTS IN CARAMEL COGNAC SAUCE

- Cook sugar in a dry 12-inch heavy skillet over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a fork, until sugar is melted into a deep golden caramel, 8 to 10 minutes. Carefully add water, then add Cognac and lemon juice (caramel will harden and steam vigorously) and cook over moderately low heat, stirring, until caramel is dissolved. Stir in apricots and simmer, stirring occasionally, until apricots are tender but still hold their shape, about 10 minutes.
- Serve warm or at room temperature.
CARAMELIZED APPLE AND ONION BRUSCHETTA WITH MELTED BRIE
I posted a Fresh Strawberry and Almond Baked Brie that I sometimes make a different way...with apples and walnuts. This gave me inspiration to come up with this Bruschetta recipe. It is great in the fall for dinner parties and other occasions.

- Heat Olive Oil in a pan to medium high heat. Add Onions, seasoning with a pinch of salt. Cook until they begin to turn brown and caramelize. DO NOT BURN!
- Add apples, vinegar, and brown sugar. Reduce heat to medium. Saute until apples are cooked through and vinegar/brown sugar are absorbed.
- In the meantime, slice the brie into pieces that are similar in size to the baguette slices. Place one slice of cheese on each baguette slice. Broil for about 2-3 minutes, or until cheese melts and bread is crispy.
- Top each baguette slice with a spoonful of the caramelized apple/onion mixture. Serve warm.
- Idea! - This appetizer is great for a dinner party where pork is the main dish.
