DATE PECAN TEA BREAD
Packed with dates and pecans, this sweet bread is excellent on its own and even better topped with the chunky cream cheese spread. We enjoy it during the holiday season, but also for after-school and late-night snacks. -Carole Resnick, Cleveland, Ohio

- Place dates in a large bowl. Combine boiling water and baking soda; pour over dates. In a small bowl, combine the flour, cloves, cinnamon, ginger and nutmeg; set aside. , In another large bowl, beat butter and sugar until crumbly. Beat in egg and vanilla. Add flour mixture alternately with date mixture. Stir in pecans. , Pour into a greased and floured 9x5-in. loaf pan. Bake at 350° for 65-75 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to wire rack to cool completely. , In a small bowl, combine spread ingredients. Cover and refrigerate for 1 hour. Serve with bread.

- Spray a microwave safe 2-quart square casserole dish with nonstick cooking spray. Place bread cubes in casserole; sprinkle in pecans, then pour melted butter over all. Toss lightly.
- Preheat oven to 425 degrees.
- Whisk together half and half, eggs, sugar, cinnamon and nutmeg.
- Pour evenly over bread cubes and let stand 5 minutes.
- Microwave on Medium (50% power) 10-12 minutes, until mixture is just beginning to set.
- Place in preheated oven 12-15 minutes until pudding is puffed and golden brown.
- Remove from oven to wire rack; let stand 15 minutes to cool slightly.
- Soften caramel topping in microwave to a pourable consistency; drizzle over warm bread pudding.
- To serve, cut into squares or spoon into dessert dishes.
- Serve, if desired, with whipped cream or thawed non-dairy whipped topping.

- Prepare Bread Puddings: Whisk together eggs and next 8 ingredients in a large bowl until well blended. Add bread pieces, stirring to thoroughly coat. Cover with plastic wrap, and chill 8-24 hours.
- Preheat oven to 350. Spoon bread mixture into 11 (6oz) lightly greased ramekins. (Ramekins will be completely full, and mixture will mound slightly). Place on an aluminum foil-lined jelly-roll pan.
- Bake at 350 for 50 minutes, shielding with foil after 30 minutes.
- During last 15 minutes of baking, prepare Caramel-Pecan Sauce: Heat pecans in a medium skillet over medium-low heat, stirring often, 3-5 minutes or until lightly toasted and fragrant.
- Cook brown sugar, butter, and corn syrup in a small saucepan over medium heat, stirring occasionally, 3-4 minutes or until sugar is dissolved. Remove from heat; stir in vanilla and pecans.
- Remove bread puddings from oven; drizzle with Caramel-Pecan Sauce. Bake 5 minutes or until sauce is thoroughly heated and begins to bubble.
- Try This Twist: Prepare as directed in Step 1. Spoon chilled bread mixture into a lightly greased 13x9-inch baking dish. Cover with aluminum foil. Bake, covered, at 350 for 35 minutes. Uncover and bake 15 minutes. Proceed with recipe as directed in Steps 4 through 6.

- Heat oven to 350 degrees F.
- Grease 13x9 inch pan.
- In large bowl, combine cake mix, margarine and egg.
- Mix at highest speed until crumbly.
- Press into prepared pan.
- In small bowl, beat milk, egg and vanilla until blended.
- Stir in pecans and toffee bits chips.
- Pour over base in pan; spread to cover.
- Bake at 350 degrees for 25-35 minutes or until light and golden brown.
- Center may appear loose but will set upon cooling.
- Allow bars to cool completely before cutting.

- In a large bowl, cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in milk and vanilla. Combine flour and salt; gradually add to creamed mixture. Cover and refrigerate for 1 hour or until easy to handle., On a lightly floured surface, roll out the dough to 1/4-in. thickness. Cut into 2x1-in. strips. Place 1 in. apart on greased baking sheets. , Bake at 325° for 12-14 minutes or until lightly browned. Remove to wire racks to cool completely., For filling, combine caramels and milk in a large saucepan. Cook and stir over medium-low heat until caramels are melted and smooth. Remove from the heat; stir in the butter, sugar and pecans. Cool for 5 minutes. Spread 1 teaspoon over each cookie. , For icing, in a microwave-safe bowl, melt chips and milk; stir until smooth. Stir in the butter, sugar and vanilla until smooth. Cool for 5 minutes. , Spread 1 teaspoon icing on each cookie; top each with a pecan half. Let stand until set. Store in an airtight container.

This is a recipe I tore out of a magazine. i made it this week, and it was so delicious! It disappeared very quickly, and I have been asked to make another. My kids loved it and took slices in their lunch boxes. Even my eldest, who is kinda fussy and never eats cake..just LOVED it!

- Grease a 14cmx21cm loaf pan, line base and long sides.
- Combine flour, bicarb, and nutmeg in a large bowl. Stir in dates and brown sugar. Make a well in the centre, add juice, butter, egg, and bananas. Mix with a wooden spoon until smooth. Pour mixture into prepared pan.
- Cook at 180C for about 1 hour.
- Stand cake in pan for 5 minutes before turning out on a rack.
- Serve warm or cold, with a little butter.

- Rolls:
- Place ingredients in machine following the specifications of that particular machine. Set for dough cycle. If bread machine seems to be working too hard to mix dough, sometimes I add 1 - 2 Tbls vegetable oil to get it moving better.
- After complete on dough cycle, remove from machine and roll out to about 17x10" rectangle. The larger you roll the rectangle, the more layers you have, which is really nice.
- Caramel Pecan Topping:.
- Mix butter, brown sugar and water together in a small saucepan, heat on low until butter is melted.
- Increase heat to medium and boil, stirring constantly, for 3 minutes.
- Stir in vanilla and remove from heat.
- Pour into cake pan, then place pecan halves over the caramel.
- Filling:
- Mix together brown sugar, pecans and cinnamon.
- Moisten the dough by brushing with milk.
- Sprinkle brown sugar, pecan and cinnamon mixture over top.
- Roll tightly from long end, pinching edges closed when completely rolled (sometimes putting a little milk on the edge helps seal it).
- Slice rolled dough into 1/2" slices (or larger if a larger bun is preferred).
- Place into pan on top of caramel.
- Let rise until doubled (about an hour, or quicker if you put the pan on a heating pad).
- Bake at 350° for 20 minutes, until golden. Do not overbake.
- Invert onto a cookie sheet immediately, before caramel hardens.
