CARAMEL PEAR COOKIES

These yummy cookies overflow with caramel and fresh pears - delicious!

Number Of Ingredients 11

2 cups + 2 Tbsp. all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
12 Tbsp. (1.5 sticks) unsalted butter, melted and cooled until just warm
1 cup packed brown sugar
1/2 cup granulated sugar
1 large egg, plus 1 large egg yolk
2 tsp. vanilla extract
1 cup caramel bits
1 pear, finely diced (about 1 cup)

Steps:

  • Preheat oven to 325 degrees. Line two large baking sheets with parchment paper.
  • Whisk the flour, baking soda, salt and cinnamon together in a medium bowl. Set aside.
  • Use an electric mixer to cream together butter and sugars until well blended. Beat in the egg, yolk, and vanilla until combined. Add in the dry ingredient mixture and beat on low speed until just combined. Carefully stir in the caramel bits and diced pears until combined.
  • Use a small cookie scoop or a spoon to form the dough into tablespoon-fulls. Place on a cookie sheet at least 2.5 inches apart, and then dot on top with a few additional caramel bits. Bake cookies until the outer edges are golden and begin to slightly harden, about 15 minutes. Remove and let the cookies cool on the baking sheets.

3 medium pears, such as Anjou or Bartlett, quartered and cored
1/4 cup packed light-brown sugar
1 teaspoon pure vanilla extract
Salt
Vanilla ice cream, for serving

Steps:

  • In a large skillet, melt butter over medium-high. Add pears, one cut side down, and cook until browned, then reduce heat to medium and cook 3 minutes. Turn pears to other cut side and cook 4 minutes. Add sugar and 1 tablespoon water, swirling pan to combine. Turn pears skin side down and cook until sauce is thickened slightly, 2 minutes. Stir in vanilla and pinch of salt. Serve warm with ice cream.

If you like making home-made preserves, then this easy to prepare Pear Butter is just for you. I found this recipe in an old Home Canning book many years ago and have been making batches every year. There's extra flavor richness in this pear butter that is contributed by the spices and some caramelized sugar. Enjoy!

15 bartlett pears
2 cups water
6 cups sugar
1 teaspoon ground cloves
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
2 tablespoons lemon juice

Steps:

  • Wash the pears but do not peel or core them; slice pears into a heavy saucepan (at least 5-quart size).
  • Add water, cover, and cook until tender (about 30 minutes).
  • Remove from heat and press the pears through a colander or a food mill.
  • Measure the pear pulp (you should have about 8 cups) and return to the pan.
  • Using a frying pan, heat 1 1/2 cups of the sugar, stirring until it melts and caramelizes to a medium brown color.
  • Pour immediately into the pear pulp (the syrup will sizzle and harden, but dissolve again as the preserves cook).
  • Add the remaining sugar, cloves, cinnamon, and ginger.
  • Cook uncovered, until thick (about 45 minutes).
  • Stir frequently as it begins to thicken to prevent it from sticking.
  • Stir in lemon juice just before removing it from heat.
  • Pour hot mixture into steralized 1/2 pint jars, put on lid, and crew band tightly.
  • Process in boiling water bath for 15 minutes.

1/2 cup apple juice
2 tablespoons Spiced Simple Syrup, recipe follows
Pear slice
2 cups packed brown sugar
2 cups water
3 cinnamon sticks
2 tablespoons juniper berries
2 tablespoons cloves
5 whole star anise

Steps:

  • In a martini shaker filled with ice, combine the vodka, juice and simple syrup. Shake well and strain into a martini glass. Garnish with a slice of pear.
  • In a pot combine the sugar, water, and spices. Bring up to a simmer, stirring occasionally until all the sugar has dissolved. Pour the mixture thorough a strainer and discard the whole spices.

8 fresh black Mission figs
8 3-inch pieces black licorice laces
16 sliced almonds
16 orange sprinkles

Steps:

  • Put the chocolate in a microwave-safe bowl; microwave in 30-second intervals, stirring, until melted. Let cool slightly.
  • Dip the figs in the melted chocolate, turning to cover completely; lift out with a fork and transfer to a parchment-lined baking sheet. Use the remaining melted chocolate to attach a licorice piece to the rounded end of each fig for the tail.
  • While the chocolate is still soft, stick 2 sliced almonds on the pointy end of each fig for ears, then add 2 orange sprinkles for eyes. Refrigerate until serving, at least 20 minutes.

1 12-ounce bag white candy melts (about 3 cups)
1/2 cup black candy melts

Steps:

  • Remove the stems from the pears. Halve lengthwise, then core. Insert a paring knife about 1/4 inch into the tapered end of each pear, then push a thin wooden pop stick about halfway into each. Arrange the pears on a parchment-lined baking sheet.
  • Microwave the white candy melts in a medium microwave-safe bowl, stirring, until melted, 2 to 3 minutes. Hold each pear by the stick and dip into the melted candy; swirl to coat and let the excess drip off, then return cut-side down to the baking sheet.
  • While the coating is still wet, microwave the black candy melts in a small microwave-safe bowl, stirring, until melted, about 1 minute. Transfer to a resealable plastic bag and snip off a corner. Pipe faces onto the pears. Let set, at least 1 hour.
