Let the caramel cool a bit before serving -- but not too much. Keep the fondue warm in a double boiler 10 to 30 minutes before you serve it. Dessert fondues are delectable with basic partners, including cookies, berries, marshmallows, and candied ginger.

2 cups sugar
1 cup heavy cream
1 vanilla bean, split lengthwise and seeds scraped
Assorted accompaniments for dipping

Steps:

  • In a saucepan, combine sugar and 1/4 cup water. Cook over medium-low heat, stirring with a wooden spoon, until sugar has dissolved. Cover; bring mixture to a boil. Keep covered, about 1 minute, to let condensation wash down inside of pan to prevent crystals from forming (or wash down sides of pan with a wet pastry brush).
  • Raise heat to medium-high. Without stirring, cook, swirling pan, until mixture turns a medium to dark amber. At arm's length, carefully add cream (it will spatter). Add vanilla-bean seeds to pan, and whisk to combine. Transfer to a fondue pot, and set over a warming candle. Serve immediately with assorted accompaniments, as desired.

1/4 cup water
1 tablespoon instant coffee crystals
1 can (14 oz) sweetened condensed milk
1 bag (14 oz) caramels, unwrapped
1/2 cup coarsely chopped pecans
2 apples (1 Braeburn, 1 Granny Smith), cut into 1/2-inch slices
2 cups fresh pineapple chunks
1/2 package (16-oz size) pound cake, cut into 1-inch cubes (about 4 cups)

Steps:

  • In 2-quart nonstick saucepan, heat water over high heat until hot. Dissolve coffee crystals in water.
  • Add milk, caramels and pecans to coffee. Heat over medium-low heat, stirring frequently, until caramels are melted and mixture is hot. Pour mixture into fondue pot and keep warm.
  • Arrange apples, pineapple and cake on serving plate. Use skewers or fondue forks to dip into fondue.

4 tablespoons folgers automatic drip regular grind coffee
4 1/2 cups cold water
1/2 cup caramel ice cream topping, I like to add 2/3 - 3/4 cup
french vanilla cool whip, thawed
English toffee bits or chocolate-covered toffee bits

Steps:

  • Place coffee inside paper filled (brewing) basket.
  • Adjust basket to fit coffee maker.
  • Pour the 4-1/2 cups cold water inside coffee maker.
  • Add the caramel topping to the coffee pot.
  • Return coffee pot to coffee maker.
  • Start brewing the coffee; when completed; stir until well mixed.
  • Pour into coffee cups, or mugs.
  • Add a large dollop of Cool Whip to each cup.
  • Sprinkle on bits of chocolate toffee bits, or the English toffee bits.
  • Makes 6 servings (Six 3/4 cups coffee each).
  • Note: You can top your coffee off with regular Cool Whip, but I prefer the French Vanilla Cool Whip.

8 ounces soft cream cheese

Steps:

  • Combine caramels, milk, and cream cheese in a large Dutch oven; cook over low heat, stirring constantly, until caramels melt and mixture is smooth.
  • Add additional milk if mixture is too thick for dipping.
  • Spoon into fondue pot or chafing dish.

Who knew you could fondue while camping? This sweet and salty dip is super easy to make. Just pack a saucepan, add the ingredients and stir over the fire until melted. Put your dippers in coffee cups and pass them around the fire.

Two 4-ounce good quality semi-sweet chocolate bars
One 15.85-ounce jar prepared dulce de leche (about 1 1/3 cups)
Kosher salt
Marshmallows, for dipping (optional)
Graham crackers, for dipping (optional)
Fresh fruit, such as berries, pineapple chunks and red and/or green grapes, for dipping (optional)
Cookies, shortbread or vanilla wafers, for dipping (optional)

Steps:

  • Build a medium-low campfire that has a grate for cooking. Break the chocolate bar into small pieces using the handle of a wooden spoon (or you can smack it against a picnic bench).
  • Unwrap and add the pieces to a medium saucepan along with the dulce de leche, 1/2 cup and 1 teaspoon salt.
  • Place the saucepan, on the grate and over the fire, and cook, stirring occasionally, until the chocolate melts and the sauce is completely smooth, about 5 minutes. If it?s too thick, then add 1 tablespoon of water at a time until desired consistency. Serve with suggested dippers, such as marshmallows, graham crackers, berries, pineapple chunks, red and/or green grapes, shortbread cookies or vanilla wafers (see Cook?s Note).

4 cups sugar
1 cup light corn syrup (recommended: Karo)
1/2 cup water
3 cups heavy cream
2 sticks unsalted butter, cut into cubes
4 teaspoons pure vanilla extract
Marshmallows, graham crackers, strawberries, raspberries, blueberries, pound cake cubes

Steps:

  • Add the first 3 ingredients to a saucepan and bring it to a boil over medium heat. Cook the mixture until the sugar has dissolved, about 10 to 15 minutes.
  • Lower the heat to a simmer and cook until the sugar mixture becomes an amber color, about 20 to 30 minutes. Remove from the heat and stir in the remaining ingredients. Bring the mixture back to a light simmer and cook for 5 minutes. Set aside and let cool for about 30 minutes.
  • Serve in a fondue pot with dipping choices surrounding the pot so they can be easily dipped in the caramel.

CHOCOLATE CARAMEL FONDUE

Another recipe I adapted from a local fondue restaurant. This is comforting in winter and yet goes perfect with fresh summer fruits. Also a great way to serve dessert at a dinner party. One year for our neighbors for Christmas we layered all the ingredients substituting marshmallows for the marshmallow cream and w/o the cream in fancy gift bags. We tied it with ribbon and a tag explaining how to finish the recipe. What a hit!!!

1/2 cup milk chocolate chips
1/2 cup double chocolate chips
0.5 (7 ounce) jar marshmallow cream
1/2 cup caramels or 1/2 cup caramel apple dip
1/2-2/3 cup cream

Steps:

  • Melt caramels with 1/2 c cream.
  • Add chips and save marshmallow cream for last.
  • Use remaining cream to control thickness of fondue.
  • Place fondue in electric fondue pot on low.
  • We add 1/2 c loosely chopped pecans to make a turtle fondue.
  • Serve with bananas, strawberries, angel food cake, bite size brownies, mini chocolate chip cookies, marshmallows, pretzels, apples etc.

1/2 lb cake, chunked (may substitute angel food cake)

  • Gently heat caramels, cream, coffee, and chocolate in the top of a double-boiler over simmering, but not boiling water.
  • Stir constantly until smooth.
  • Next transfer the toffee mixture to a fondue pot, keep warm and serve with an assortment of fruits, marshmallows, pretzels, cake chunks and cookies.

1/2 cup light corn syrup
1/4 cup butter

Pound cake and assorted fresh fruit, cut into pieces

Steps:

  • In a heavy saucepan, combine 1/2 cup cream, sugar, corn syrup, butter and salt. Bring to a boil over medium heat until a candy thermometer reads 234° (soft-ball stage), stirring constantly. Cool to 220°; stir in remaining cream. Bring to a boil. Remove from the heat; stir in vanilla., Transfer to a fondue pot and keep warm. Serve with pound cake and fruit.
