APPLE CINNAMON ROLLS

Warm and gooey apple cinnamon rolls with delicious caramel icing on top. Fall breakfast has never tasted so good!

Number Of Ingredients 15

1 cup (240ml) whole milk*
2/3 cup (135g) granulated sugar
1 and 1/2 tablespoons (14g) Platinum Yeast from Red Star instant yeast (2 standard size packets)*
1/2 cup (115g) unsalted butter, softened to room temperature and cut into 4 pieces
2 large eggs, at room temperature
1/2 teaspoon salt
4 and 1/2 cups (563g) all-purpose flour (spoon & leveled), plus more for dusting/rolling
6 Tablespoons (85g) unsalted butter, softened to room temperature
1/2 cup (100g) packed light or dark brown sugar
1 and 1/2 Tablespoons ground cinnamon
2 cups chopped apples (peel if you'd like, about 2 medium apples)
1 cup (120g) confectioners' sugar
1/2 teaspoon pure vanilla extract
2 Tablespoons milk
2 Tablespoons warmed salted caramel

Steps:

  • Heat milk to about 95°F (35°C)- use microwave or stovetop. Pour the warm milk into the bowl of a stand electric mixer fitted with the dough hook attachment (OR you can use a handheld mixer OR no mixer, but a stand mixer is ideal). With a whisk, manually whisk in the sugar and yeast. Cover with a towel and let sit until the yeast is foamy, about 5-10 minutes. If the yeast does not dissolve and foam, start over with fresh active yeast. On low speed, beat in the softened butter until it is slightly broken up. Next add the eggs, one at a time, and then the salt. The butter won't really be mixing into the mixture, so don't be alarmed if it stays in pieces. On low speed, gradually add the flour. Once it is all added, beat on medium speed until a soft dough forms. Increase speed to medium-high and beat until the dough is soft and supple, about 6 minutes longer. *If you do not have a stand-mixer with a hook attachment, knead the dough by hand in this step.
  • Transfer the dough to a lightly floured surface and knead it with your hands for 1 minute. Form the dough into a ball and transfer it to a lightly greased bowl. Cover the dough loosely with plastic wrap, a paper towel, or aluminum foil and let sit in a warm place until doubled in size, about 1 to 2 hours. Here's what I do: turn the oven on to 200°F (93°C). Once heated to that temperature, turn the oven off. Stick the covered dough inside the oven and allow it to rise in this warm environment.
  • Grease the bottom and sides of a 9×13 inch baking dish. Turn the risen dough out onto a lightly floured work surface, punch it down and, using a rolling pin, roll into a 12×18 inch rectangle. Make sure the dough is smooth and evenly thick.
  • Spread the softened butter all over the dough. In a small bowl, toss the brown sugar and cinnamon together until combined and then sprinkle evenly over the dough. Top evenly with chopped apples. Tightly roll up the dough to form an 18-inch-long log. Cut into 12 equal rolls. Arrange them in the prepared baking pan. Cover the rolls very tightly with aluminum foil.
  • Allow rolls to rise in a warm environment again for about 45-60 minutes or until doubled in size.
  • Preheat the oven to 375°F (191°C). Bake rolls for about 25 minutes until they are golden brown. About halfway through the bake time, I like to cover the rolls loosely with aluminum foil so the tops don't brown too much. Remove pan from the oven and allow to cool on a wire rack for 5 minutes.
  • Whisk all of the icing ingredients together and drizzle over warm rolls. Serve warm. Cover leftover frosted or unfrosted rolls tightly and store for up to 3 days at room temperature or up to 5 days in the refrigerator.

2 cups whole milk
1/2 cup vegetable oil
1/2 cup sugar
4 1/2 cups all-purpose flour
1 (1/4 ounce) package active dry yeast (2 1/4 Teaspoons)
3/4 teaspoon baking powder

1 1/2 teaspoons salt
4 whole Granny Smith apples, finely diced
1/2 cup butter (1/2 stick)
1 cup lightly packed brown sugar
1/2 cup heavy cream
1 teaspoon ground cinnamon
1/2 cup butter (1/2 stick)
1 cup packed brown sugar
1/2 cup heavy cream
2 -4 cups powdered sugar, sifted
1/4 teaspoon salt

Steps:

  • DOUGH:.
  • To make the dough, combine the milk, vegetable oil and sugar in a large saucepan or small pot. Heat it until just about to boil, but don't allow it to boil. Turn off the heat and let it cool until warm (110° - 115°).
  • Add 4 cups of the flour and the yeast; stir to combine. The dough will be very sticky at this point. Cover the pot and let it rise for an hour.
  • Add the remaining flour, the baking soda, the baking powder and the salt. Stir to combine. Then you can proceed with the rolls OR refrigerate the dough, covered, until you need it.
  • FILLING:.
  • To make the filling, saute the apples in a large skillet over medium-high heat for 3 to 4 minutes. Remove them to a plate; set aside.
  • In the same skillet over medium heat, add a stick of butter and a cup of brown sugar. Stir it around until the butter melts and the sugar dissolves, then pour in the cream. Stir it around and let it bubble up and thicken for about a minute. Turn the heat to low and add the apples back to the skillet. Sprinkle in the cinnamon, stir the mixture and let it thicken for another 1 to 2 minutes. Spoon it into a bowl to cool.
  • ROLLS:.
  • When ready to make the rolls, preheat the oven to 375°. Roll out the dough on a floured surface to a rectangle about 10 x 30 inches. Spoon the caramel apples all over the dough and spread it out evenly. Roll the dough toward you into a long, tight roll. Pinch the seam when you get to the end, then turn the roll over so that it's seam side down.
  • Slice the dough into rolls 1/2 inch to 3/4 inch thick and place them into disposable roil cake pans with a little melted butter spread into the bottom of each pan (the rolls will fill about 3 to 4 pans.) Set the rolls aside and let them rise for 20 to 25 minutes. Place in preheated oven and bake for 15 to 18 minutes, or until they're golden.
  • ICING:.
  • While the rolls are rising or baking, make the icing: Melt the butter and brown sugar in a saucepan over medium heat. Add the brown sugar and let it dissolve and start to bubble. Add the cream, then cook for 2 minutes, whisking constantly. Turn off the heat and add the powdered sugar and whisk together. Add up to 2 more cups of powdered sugar to get to the consistency you want.
  • Remove the rolls from the oven and immediately frost with the icing and spread to coat all the rolls generously.
  • Serve warm.

4 cups sugar
1/4 cup corn syrup
10 tablespoons unsalted butter, cut into pieces
2 cups heavy cream, at room temperature
Crushed chocolate cookies, for coating

Steps:

  • Insert a wooden stick into the stem end of each apple. Coat a baking sheet with cooking spray.
  • Make the caramel: Melt the sugar and corn syrup in a large pot over medium-high heat, stirring with a wooden spoon until combined. Don't stress if it starts to clump: It will eventually even out. Cook, swirling the pan but not stirring, until dark amber in color and a candy thermometer registers 245 degrees F, 8 to 12 minutes.
  • Add the butter all at once, stirring until incorporated. Turn down the heat to medium and pour in the heavy cream (the mixture will foam up); whisk until smooth.
  • Increase the heat to medium high and bring the caramel up to 250 degrees F, 8 to 10 minutes. Turn off the heat and let cool for 5 to 10 minutes. Dip the apples in the caramel and roll in crushed cookies; place on the baking sheet to set, 5 to 10 minutes.
