CARAMEL APPLE SPONGE PUDDING
Oh wow! This is seriously good! Slightly tart apples topped with a light sponge and drizzled (before cooking) with a caramel sauce that works its way through the whole dish! Real comfort food! I found this recipe in Australia's 'Delicious' Cooking Magazine and have adapted it slightly. It will serve 8 generously but could stretch to more if necessary.

Steps:
- Preheat oven to 180°C (350°F).
- Butter a large glass or ceramic baking dish approx 32cm x 23cm x 5cm (12" x 9" x 2").
- Peel, core and slice apples 1cm (approx 1/2") thick.
- Pile apples into the baking dish, adding more apple if necessary to generously cover the bottom of the dish.
- Sift flour, baking powder and sugar into a large mixing bowl.
- Make a well in the centre and add milk, butter and eggs and beat with an electric mixer until the mixture becomes pale and the beaters leave a trail.
- Spoon batter evenly over the apples and smooth out with the back of a large spoon.
- Combine brown sugar, golden syrup and water in a small saucepan.
- Stir over medium heat until the mixture has become liquid and the brown sugar has melted.
- Stop stirring and allow mixture to come to the boil.
- Remove immediately from heat and pour evenly over the batter.
- Place dish on the centre shelf of the preheated 180°C (350°F) oven.
- Bake for 30-35 minutes or until the top is golden brown.
- Dust lightly with icing sugar to serve and serve with thick cream.

BAKED CARAMEL APPLE PUDDING
I am specifying Baked in this pudding title as opposed to the creamy, soft set, chilled type. This old fashioned pudding is sticky, rich and oh so wonderful. A bit more dense than Sticky Date pudding with toffee sauce. But if you like Date pudding then chances are you will like this too. This is also a self saucing pudding.

- For pudding: Combine flour, sugar, baking powder, cinnamon, salt, milk, and apples in a medium mixing bowl until well blended.
- Preheat oven to 375°F.
- Spread in a greased 1 1/2 quart casserole or 1-9 inch square or round, greased, metal baking pan.
- For sauce: Mix brown sugar, butter, and water. Stir until butter is melted.

- Make the caramel apples: Melt the butter in a large skillet over medium heat. Add the apples, lemon juice, brown sugar, cinnamon and salt and cook, stirring occasionally, until the apples are tender and the liquid is reduced but saucy with the consistency of chunky applesauce, 15 to 20 minutes. Set aside to cool slightly.
- Meanwhile, make the whipped cream: In a large bowl, using a large whisk or an electric mixer, whisk the cream, brown sugar, cinnamon and salt until soft peaks form. (When you lift the whisk out of the bowl and turn it whisk-side up, a peak of cream should flop over onto itself.) Don't overbeat; you're looking for a soft-set whipped cream that drapes rather than plops.
- Assemble the pudding: In a medium bowl or other serving vessel (preferably clear), arrange one-third of the vanilla wafers at the bottom, top with half of the caramel apples, then spread with half of the whipped cream. Repeat these layers once more and end with a final sprinkle of crushed vanilla wafers on top. (If you want crunch, save this final sprinkle for right before serving.) Cover and refrigerate until the cookies are soft, about 8 hours and up to 24 hours.

- Place the baking rack in the center of the oven and heat to 350 degrees F.
- Butter a shallow 1 1/2-quart baking dish (11 by 7 by 1 1/2 inches), or spray generously with cooking spray.
- Cut the apples into 1/2-inch-thick slices. In a large bowl, mix together apples, lemon juice and cinnamon. Set aside.
- Melt the 1/4 cup of butter and 1/4 cup brown sugar in a 10- to 12-inch heavy skillet over medium-high heat. Stir in the apple mixture using a wooden or heat-resistant spatula and cook over same medium-high heat, stirring frequently until the apples are softened and begin to turn golden brown, about 10 to 15 minutes. Stir in the walnuts or dried fruit and transfer the mixture to a large bowl. Set aside to cool slightly, about 10 minutes.
- While the caramelized apple mixture is cooling, toast the bread on a baking sheet in the oven until crisp and the edges are just starting to color, about 6 to 8 minutes. Set aside on baking rack.
- Once the caramelized apple mixture is slightly cooled, gently and evenly spread half into the buttered baking dish. Add the toasted bread to the remaining apples in the bowl and stir to combine; then spoon the mixture into the baking dish.
- In a medium bowl combine the eggs, egg yolks, milk, remaining 1/4 cup of brown sugar, vanilla and nutmeg and whisk until the sugar is dissolved, about 2 minutes. Then pour evenly over the apple and bread mixture and let it sit for 10 minutes until the bread has absorbed the liquid.
- Bake until puffed and browned on the top and the custard is set, about 45 to 55 minutes. Serve hot, warm or chilled.

- Place caramels in microwaveable bowl. Add 2 Tbsp. evaporated milk; set aside. Pour remaining evaporated milk into large bowl. - Bring 3 cups water and 1/4 teaspoon salt to boil in heavy large saucepan. Add rice and boil 10 minutes. Drain rice; discard cooking water. Rinse saucepan. Combine milk and sugar in same saucepan; bring to boil over medium-high heat, stirring until sugar dissolves. Add rice; reduce heat to medium and simmer until rice is very tender, most of milk is absorbed, and pudding is thickened but still creamy and reduced to scant 3 cups, stirring occasionally, about 35 minutes. Remove from heat. Stir in vanilla extract. Transfer rice pudding to medium bowl. Press plastic wrap onto surface of pudding; let pudding cool to room temperature. Refrigerate until cold. Remove from heat; add butter to skillet and swirl until melted (mixture may bubble vigorously). Return skillet to medium heat; add cider and pinch of salt and bring to boil. Add apples and simmer until tender, stirring often, about 6 minutes. Add 1/2 cup whipping cream and boil until sauce thickens slightly, about 2 minutes. Transfer apples with caramel sauce to heatproof bowl. Cool caramel apples until lukewarm or room temperature. DO AHEAD: Caramel apples can be made 1 day ahead. Cover and refrigerate. Stir over medium heat until just warm before using.
- Divide half of caramel apples among 6 Martini glasses or lowball glasses. Top each with rice pudding, dividing equally. Top with remaining caramel apples, dividing equally. Garnish each with dollop of whipped cream, if desired, and serve.

- Heat the oven to 180C/160C fan/gas 4. Butter a 30 x 20 x 4cm baking dish. Put the eggs, extra yolks, sugar, milk, cream, 200g of the caramel, the vanilla and a large pinch of sea salt in a large bowl, then whisk until combined. Stir in the flour until the batter is smooth.

- In a saucepan, add apples and water; bring mixture to boiling; lower heat.
- Cover and cook over medium-low for 5-7 minutes or until apples are tender; stirring frequently.
- Drain apples and transfer to a small bowl.
- Stir in cinnamon and set apples aside.
- In the same saucepan, add brown sugar, corn syrup, and butter.
- Cook and stir over medium heat until just reaches boiling.
- Remove from heat.
- Pour mixture into an ungreased 2-quart square baking dish.
- Sprinkle evenly with pecans.
- In another bowl, add eggs, milk, vanilla, and nutmeg; mix well.
- Place half of the bread slices on top of the caramel, trimming bread to fit.
- Spoon apples evenly over the bread slices.
- Place remaining bread slices over apples.
- Pour egg mixture evenly over bread slices; press bread down gently to moisten completely.
- Cover and chill if refrigerator for 3 to 24 hours.
- In a 325°F oven, bake, uncovered, for 40-45 minutes or until knife comes out clean.
- Run a knife around the edges to loosen.
- Cool in pan on a wire rack for 15 minutes.
- Carefully invert pudding onto a platter (Spoon any remaining caramel mixture in dish over pudding).
- Cut and serve warm.
