- Wash, peel, and core the apples making sure to reserve the peels and cores. To prevent discoloration, place the sliced apples into water containing an ascorbic acid solution.
- In a large saucepan add sugar and water to make the simple syrup. Add the fruit slices and boil for 5 minutes, make sure to stir occasionally to prevent burning.
- Fill hot jars with hot slices and hot syrup or water, leaving 1/2-inch headspace. Use an air bubble remover to remove all bubbles, add additional simple syrup as needed.
- Using a clean wet dish towel wipe the rims of the jars, add warmed lids and rings to finger tight.

- Wash your jars, lids, screw bands, and canning tools in hot soapy water. Rinse thoroughly to remove all suds. Set aside to air dry on a clean kitchen towel.
- Place the canning rack into water bath canner, place jars in the canner, and add water to cover. Bring the canner to a simmer (180˚F) for 10 minutes, and keep hot until you are ready to fill them.
- Add the sugar and water to the large saucepan and bring to a boil over medium-high heat to dissolve sugar, keep warm.
- To prevent browning, dip the peeled and sliced apples into a lemon water bath as you work. Fill a large bowl with about a gallon of cold water and 1/2 cup of lemon juice (or use Fruit Fresh).
- Wash the apples well under clean, running water. Peel, core, and cut the apples into halves, quarters, or slices. Add the apple pieces to the prepared lemon bath as you work.
- Drain the apples and add them to the sugar-syrup pot. Cover the pot, raise the heat, and bring the pot to a boil, and boil for 5 minutes. Reduce the heat to low and fill the jars.
- Spread a towel on the counter. Use your jar lifter to remove a warm jar from canner, drain the water into the canner, and place on the towel. Keep the rest of the jars in the canner so they stay hot.
- Use your canning funnel and ladle, to fill the warm jars with hot apples and top off with the syrup leaving 1/2-inch headspace.
- Run you bubble popper through the apples to release air bubbles, and wipe jar rim with a clean, damp kitchen towel.
- Place a lid on the jar, and screw the metal band down fingertip tight. Place the jar back into the canner, and repeat with the remaining jars.
- Once all the jars are in canner, adjust the water level to two inches above the tops.
- Cover the canner and bring to boil over high heat. Once water boils vigorously, process pints and quarts for 20 minutes at altitudes of less than 1,000 ft. Adjust processing time for your altitude if necessary. (see notes below)
- When processing time is complete, turn off the heat and allow the canner to cool down and settle for about 5 minutes.
- Lay a dry towel on the counter. Remove the cover by tilting lid away from you so that steam does not burn your face.
- Use the jar lifter to remove the jars from canner and place on the towel. Keep upright, and don't tighten bands or check the seals yet. Let the jars sit undisturbed for 12 to 24-hours to cool.
- After the jars have cooled for at least 12 hours, check to be sure lids have sealed by pushing on the center of the lid. The lid should not pop up. If the lid flexes up and down, it did not seal. Refrigerate jar and use up within a few days.
- Remove the screw on bands and wash the jars. Label, date, and store your jars in a cool, dark place and use within 12-18 months. Yields about 9 pint of apples.

- Take the prepared apples and cover with just enough water to prevent sticking in a large stainless steel saucepan.
- Bring the apples and water to a boil over medium-high heat. Reduce heat and boil gently, stirring occasionally until apples are tender (time will depend upon the variety of apple and their maturity). Remove from heat and let cool slightly, about 5 minutes.
- If making smooth applesauce, puree the apples until smooth with a food mill or food processor.

- Peel, core and quarter apples.
- You will need 3 to 3-1/2 pounds per quart of applesauce.
- Place in large saucepot.
- Cook apples with just enough water so they don't stick.
- Cook over medium heat until soft.
- Puree in food processor or food mill until smooth.
- Return to pan and bring to a boil.
- You may add sugar if desired.
- Taste to see how sweet the apples are.
- You can also add cinnamon, nutmeg or allspice the last 5 minutes of cooking time.
- Keep applesauce boiling and ladle hot sauce into hot jars leaving 1/2 inch headspace.
- Remove air bubbles and adjust two piece caps.
- Process pints and quarts for 20 minutes in a boiling water canner.
- If you like chunky sauce, only puree half of the apples and crush the other half with a potato masher.
- Prep time is an estimate as it depends on how many quarts of sauce you are preparing.

- First peel, core, and cut your apples into slices. (An apple peeler/corer/slicer may come in handy for this part, but you can do it by hand.)
- Place apple slices in a large pot and add 1 cup of water. Cook the apples over medium heat, stirring often, until tender. Mash the apples with a potato masher. If you want an even smoother consistency, puree them in a blender.
- At this point you can add a little extra water if you need to, depending on how thick or thin you want your applesauce. I like to reach the consistency of slightly runny pudding.
- You can also add sugar at this point, depending on how sweet you want your applesauce. Add a little at a time and taste it until it's how you like.
- The applesauce will also sweeten over time, in the jars, so keep that in mind when adding sugar. I use white granulated sugar because brown sugar makes the applesauce dark, but either will work.
- Sprinkle with cinnamon. Enjoy warm or cold! Store in the fridge for up to 7-10 days.

HOMEMADE APPLE PIE FILLING

- Blanch apple slices by dipping them in a large pot of boiling water for 1 minute. Drain set aside.
- Combine sugar, clear jel, cinnamon, and nutmeg (if using) in a large pot. Whisk in the cold water and apple juice. Set over medium high heat and cook, stirring almost constantly, until mixture thickens and begins to boil.
- Add the bottled lemon juice and cook for 1 minute. Remove from heat. Mixture will be very thick.
- Add the blanched apples to the mixture and immediately ladle into hot sterilized jars, leaving 1 inch headspace at the tops of the jars. Remove air bubbles with a long knife or thin spatula. Wipe rims and cover with lids and ring bands.
- Process in a large pot of boiling water for 25 minutes (see notes for high altitude processing time). Make sure jars are completely covered by the water and water is at a rolling boil for the entire processing time.
- Let jars cool and ensure lids have sealed (lids should not bounce back when pressed). Store any unsealed jars in the fridge and use within a few weeks.
- To bake a pie, simply pour it into a prepared pie shell. Bake at 400°F until filling is bubbling and crust is golden brown.

APPLE BUTTER RECIPE

- Once the fruit butter is made, you will need to start by preparing jars and getting water in the canner heating. You want the canner hot, but not boiling, when the jars are ready to be processed. See full water bath canning instructions here.
- Peel, core, and quarter apples. Simmer in 2 cups water until apples are soft.
- Puree and measure out 2 quarts pulp.
- Add sugar to taste. Suggestion is 4 cups sugar to 2 quarts pulp.
- Add spices to taste. A suggestion is 1 tsp. cinnamon, 1/4 tsp. ground cloves, 1/4 tsp. salt.
- Stir well and continue to cook on low, stirring occasionally until sauce is the consistency you like. Butter will round up on spoon. Leave lid off or ajar to allow steam to escape.
- Process in a water bath canner.

- Prepare a very large pot or bowl with acidulated water in it (by adding lemon juice or ascorbic acid. This is to prevent the apple going brown.)
- Wash, peel, core and slice the apples.
- As you work, work in such a way that peeled apple never rests for long outside the water, to prevent discolouration.
- Put drained apple slices in a large pot.
- For every 2 kg (5 lbs / 16 cups ) of drained apple slices in the pot, add 1/2 litre (2 cups / 1 US pint) of water. Bring to a boil, then start timing and let it boil for 5 minutes.
- Pack hot apple slices into half-litre (US pint) jars or 1 litre (US quart) jars.
- Leave 3 cm (1 inch) headspace.
- Top up with the blanching water or if there isn't enough, clean boiling water (such as from a kettle, for instance).
- Leave 2 cm (1/2 inch) headspace after the filling liquid.
- Debubble, adjust headspace.
- Wipe jar rims.
- Put lids on.
- Process in a water bath or steam canner or pressure canner.
- Water bath / steam canner: either size jar for 20 minutes; increase time as needed for your altitude.

- Place pickling spices into the center of the pre-cut cheese cloth. Create a little satchel by tying the cloth together with the cotton cooking twine.
- Add all ingredients to a large non-reactive pot
- Bring mixture to a boil and allow to boil for 10 minutes. Reduce heat to simmer and cook until the apples are soft, roughly 1 to 2 hours.
- Remove and discard the satchel of pickling spice.

- Fresh Canned Corn. This is a great recipe to help you store your summer harvest. Canning recipes for corn does take a little more preparation than other vegetables.

- Fresh Canned Green Beans. Most farmers raise a bunch of green beans each year. They are an easy crop to raise and don’t take a lot to can. Green beans are a great addition to a vegetable soup on a cold day.
- Shell Peas. Growing peas can be a tricky task. Seriously, we tried for three years before we finally got the planting time and balance right that they finally sprouted and produced.
- Crushed Tomatoes. Crushed tomatoes make up the bulk of my canning season. My husband loves to eat these straight from the can. However, crush tomatoes are very versatile.
- Rotel Tomatoes. This is a recipe I’m going to have to try this year. I use Rotel tomatoes a lot. The only downsides to them are that I have to go to the store to buy them (and I try to avoid doing that) and the cost is higher to buy versus making them myself.
- Spaghetti Sauce. I want to start off by saying there is no comparison between homemade tomato sauce and the store bought stuff. You still have time this year.
- Creamed Style Corn. Creamed style corn takes a little extra work compared to regular canned corn. However, I certainly think it is worth it. It is great to go in Mexican cornbread and corn pudding.
- Strawberries. I like canning recipes for whole fruits. Why? Because I don’t have to decide at that particular moment what I’m going to do with them. What if you want jelly, jam, pie filling, or a dessert topping?
- Fresh Blueberries. Blueberries are so delicious, and they are good for you too. So why not can them whole? Canning recipes for fruits whole takes a lot of the work out of canning immediately.

- Prepare jars. Inspect jars for chips and cracks. Wash jars in hot soapy water, rinse well. Fill the canner half full with clean warm water. Center the canner over the burner and preheat the water to 140°F for raw-packed foods and to 180°F for hot-packed foods.
- Wash apples. Rinse apples well under running water. Scrub each apple with a clean produce brush while rinsing under running water.
- Peel, core and prep apples. Wash hands. To prevent browning, dissolve 1/2 teaspoon (1500 mg) ascorbic acid in 2 quarts of water. Peel and core apples. Trim any bruised or discolored areas.
- Prepare syrup. In a large kettle, per 5 pounds of sliced apples, add 1 pint water or 1 pint very light syrup (1/2 cup sugar per quart water) or 1 pint apple juice.
- Prepare lids. According to research done by Jarden Home Brands quality assurance team, pre-heating metal canning lids is not necessary. To prepare lids, wash them with warm soapy water and keep at room temperature until ready to use.
- Fill jars. Use jar lifter to remove jars from canner pouring water from jars back into the canner. Place hot jars into a towel or cake cooling rack. Ladle hot apple slices and hot syrup (or liquid) into hot jars using a funnel (jar filler).
- Load the canner. Place filled jars in canner one at a time using a jar lifter. Make sure the jar lifter is securely positioned below the neck of the jar (below the screw band of the lid).
- Unload the canner. When timer rings, turn off heat and remove cover. Wait 5 minutes before removing jars to prevent 'spill overs' and ensure good seals.
- Cool and store. Let the jars sit undisturbed while they cool, from 12 to 24 hours. Do not tighten ring bands on the lids or push down on the center of the flat metal lid until the jar is completely cooled.
