TUNA SUSHI BURRITO

Tuna Sushi Burrito image

This easy mash-up combines the best of both worlds: the satisfying heft of a big burrito and all the flavors of your favorite hand roll. Also nice, the recipe uses canned tuna so you don't have to make a special trip to fish counter.

Categories     main-dish

Time 1h15m

Yield 4 servings

Number Of Ingredients 13

1 1/2 cups short-grain white rice
2 tablespoons granulated sugar
Kosher salt and freshly ground black pepper
6 tablespoons unseasoned rice wine vinegar
1/2 cup mayonnaise, preferably Japanese style
Three 5-ounce cans tuna in water, well drained
2 scallions, white and light green parts only, thinly sliced
8 roasted nori sheets (about 8 inches square)
1/4 cup furikake rice seasoning (see Cook's Note)
1/2 medium carrot, peeled and cut into matchsticks
1/2 English cucumber, seeded and cut into matchsticks
1/2 medium red bell pepper, thinly sliced
1/2 large ripe avocado, thinly sliced

Steps:

  • Cook the rice according to the package directions.
  • Meanwhile, put the sugar, 1 teaspoon salt and 4 tablespoons of the vinegar in a medium microwave-safe bowl and microwave until hot, about 30 second. Stir to dissolve the sugar and salt. Let cool completely.
  • Gently fold the vinegar mixture into the rice (reserve the bowl for the tuna). Let cool to room temperature, uncovered.
  • In the reserved bowl, whisk together the mayonnaise, a pinch of salt and pepper and the remaining 2 tablespoons vinegar. Stir in the tuna and scallions.
  • Put a 20-by-15-inch piece of parchment on a clean work surface. Place 4 sheets of the nori shiny-side down on the parchment to create a 15-inch square, overlapping them by about 1/4 inch. Lightly brush the overlapping edges of the nori with water and press them together to help seal them.
  • Dampen your hands with a bit of cold water and spread half of the rice in an even layer all over the nori, leaving a 2-inch border around the edges. Sprinkle half of the furikake evenly over the rice. Lay half of the carrot, cucumber, pepper and avocado on top of the furikake horizontally along the bottom third of the rice, not going onto the nori. Spoon half the tuna on top of the vegetables.
  • Wrap like a burrito: fold the nori edge closest to you over the filling. Fold the 2 sides inward to seal the ends and roll the whole thing over once more to completely seal; use a little water if needed to help close the seal. Wrap the burrito up tightly in a large piece of parchment or wax paper. Repeat this process to make a second burrito with the remaining ingredients. Cut the burritos in half on the bias and serve.

CANNED TUNA SUSHI

Canned Tuna Sushi image

Canned tuna sushi isn't the first thought for camping, picnics, or packed lunches, however, it is easy to make, and as there are no raw ingredients it travels well if kept cold.

Time 20m

Number Of Ingredients 8

2 tablespoons sugar
1 teaspoon mirin
1 1/2 cups cooked sushi rice
1 can tuna (in brine or water, drained)
2 tablespoons sweet chili sauce
1/2 small onion (finely diced)
6 sheets toasted nori (seaweed)
1 teaspoon wasabi (optional)

Steps:

  • Add the sugar and mirin to the cooked sushi rice. Leave to cool.
  • In a bowl, combine the drained tuna, sweet chili sauce, and finely diced onions.
  • Place a nori sheet, rough side up, on a sushi mat. Spread the rice over the nori, pressing firmly and leaving a 5cm gap on the side furthest from you.
  • Place the tuna on the closest edge. Using the mat to get started, roll the sushi tightly to form a roll. Moisten the 5cm gap at the end of the nori with water to help seal the roll. Chill until needed.
  • Just before serving, slice the rolls into 1/2 inch (1 1/2cm) slices.Option: You can add wasabi into the sushi before rolling, or serve it on the side and let people decide how much they want.

SIMPLE SUSHI

Simple sushi image

Kids can help with this Japanese dish. They can help cook the sticky rice and then roll and assemble the pieces with their preferred ingredients

Provided by Barney Desmazery

Categories     Lunch

Time 55m

Yield Makes enough sushi for 6 as a main, or 4 with leftovers for lunchboxes

Number Of Ingredients 11

300g sushi rice
100ml rice wine vinegar
2 tbsp golden caster sugar
3 tbsp mayonnaise
1 tbsp rice wine vinegar
1 tsp soy sauce
25g bag nori (seaweed) sheets
choose from the following fillings: cucumber strips, smoked salmon, white crabmeat, canned tuna, red pepper, avocado, spring onion
wasabi (optional - and fiery!)
pickled ginger
soy sauce

Steps:

  • KIDS the writing in bold is for you. ADULTS the rest is for you. TO MAKE SUSHI ROLLS: Pat out some rice. Lay a nori sheet on the mat, shiny-side down. Dip your hands in the vinegared water, then pat handfuls of rice on top in a 1cm thick layer, leaving the furthest edge from you clear.
  • Spread over some Japanese mayonnaise. Use a spoon to spread out a thin layer of mayonnaise down the middle of the rice.
  • Add the filling. Get your child to top the mayonnaise with a line of their favourite fillings - here we've used tuna and cucumber.
  • Roll it up. Lift the edge of the mat over the rice, applying a little pressure to keep everything in a tight roll.
  • Stick down the sides like a stamp. When you get to the edge without any rice, brush with a little water and continue to roll into a tight roll.
  • Wrap in cling film. Remove the mat and roll tightly in cling film before a grown-up cuts the sushi into thick slices, then unravel the cling film.
  • TO MAKE PRESSED SUSHI: Layer over some smoked salmon. Line a loaf tin with cling film, then place a thin layer of smoked salmon inside on top of the cling film.
  • Cover with rice and press down. Press about 3cm of rice over the fish, fold the cling film over and press down as much as you can, using another tin if you have one.
  • Tip it out like a sandcastle. Turn block of sushi onto a chopping board. Get a grown-up to cut into fingers, then remove the cling film.
  • TO MAKE SUSHI BALLS: Choose your topping. Get a small square of cling film and place a topping, like half a prawn or a small piece of smoked salmon, on it. Use damp hands to roll walnut-sized balls of rice and place on the topping.
  • Make into tight balls. Bring the corners of the cling film together and tighten into balls by twisting it up, then unwrap and serve.

SPICY TUNA SALAD SUSHI ROLL

Spicy Tuna Salad Sushi Roll image

This recipe tastes very similar to the spicy tuna rolls found in Japanese restaurants, but the best part is that you use canned tuna rather than raw tuna. Don't get me wrong, I love raw tuna; I just don't feel comfortable playing with it at home. I created this recipe when I wanted sushi rolls but didn't have a lot of fresh ingredients on hand. This can also be adapted to use in an asian salad. I plan on putting up that recipe at a later time. Note: the sumeshi (the term for cooking rice in the japanese style) portion of the recipe is copied from Sushiday.com.

Categories     Spreads

Time 1h

Yield 8-10 rolls

Number Of Ingredients 13

1 1/2 cups uncooked short-grain rice
1 1/2 cups water
6 tablespoons rice vinegar
5 tablespoons sugar
2 (6 ounce) cans tuna (albacore or regular)
1/3 cup mayonnaise
1 tablespoon chili paste
2 teaspoons chili oil
1/2 teaspoon garlic powder
1/2 teaspoon ginger powder (if using fresh ginger use 1/4 tsp)
1/2 teaspoon sesame oil
4 green onions, chopped
8 -10 lettuce leaves

Steps:

  • Sumeshi: Rinse the rice thoroughly to drain some of the gluten from the rice.
  • Cook the rice, using equal parts rice and water. I use a rice cooker, but you can also cook it on the stove if you don't have a rice cooker.
  • Put the rice vinegar and sugar in a small pot over medium heat.
  • Stir until the sugar has melted into the rice vinegar.
  • Once the rice is finished cooking, take the rice out of the pot and put it in the hangiri (japanese wooden bowl), or a large bowl if you don't have a hangiri.
  • Cool the rice and rice vinegar mix, then slowly pour the rice vinegar mix over the rice, using a cutting motion to mix it into the rice with the rice paddle (or wooden spoon). Keep a little leftover to use in the sushi preparation.
  • To Prepare the sushi: Drain your tuna and mix all of the tuna salad ingredients together.
  • Now take one piece of nori and place it on your sushi roller (recommended for getting tight rolls but in a fix you could use a stiff towel). Wet your fingers with the cooled rice vinegar mixture and press a fairly thin sheet of rice onto the bottom 3/4 of the sheet, leaving room at the top of your roll to seal it.
  • Using a spoon, place a generous line of tuna a little lower than the half way point on your rice square. Then add a line of your lettuce leaves on top of the tuna.
  • Begin rolling from the bottom, tucking firmly with each roll to tighten it. Be careful not to smoosh it though, it's a delicate balance but you'll get the hang of it after awhile.
  • Once you've gotten to the blank top of your roll take a little of the rice vinegar mixture and apply it to the inside, roll it up and use a little more on the closed roll if it's not fully sealed.
  • Using a sharp, wet knife cut into bite sized pieces. You can serve this with the traditional wasabi-soy sauce mixture but it's so flavorful it's not necessary.
