CANNED PEACHES AMARETTO

This is a quick canning recipe for a lug of peaches, about 20 to 24. I like to take the juice from the jar after opening and make a gelatin dessert.

20 -24 peaches
3/4 cup lemon juice
8 cups ice water
4 cups orange juice
4 cups pineapple juice
4 cups sugar
10 cinnamon sticks, broken in pieces
1 cup Amaretto
3/4 cup juice, from each jars
1 cup carbonated pop 7-up
3 ounces knox unflavored gelatin

Steps:

  • In a large stockpot bring about 6 quarts water to boil, drop in peaches for about 2 minutes, with slotted spoon take out and drop into sink of cold water. Peel the skin from the peach with your hands, cut in half,pit,then quarters.
  • In another large stockpot have ice water and lemon juice. Place the prepared peaches in the lemon juice water.
  • Wash 12 to 14 pint jars. Place in a pan upside down with hot water in the oven at 200 degrees. Make sure seals are also in hot water.
  • Combine orange juice, pineapple juice, sugar and cinnamon sticks.Heat and stir so sugar melts and does not burn.Add Amaretto. Drain peaches and add to hot syrup. Cook about five minutes. Hot pack peaches into jars, put one cinnamon stick in each jar. Use a jar funnel to pour syrup into jar.Make sure you leave 1/2 inch head room in the jar. Wipe the rim of each jar clean with a hot sterile cloth.
  • Apply lid seal and screwbands. Place in a hot water bath for 20 minutes or use a pressure cooker canner and follow directions for your specific pressure cooker.Take out and cool on a towel covered counter. Keep out of drafts.Make sure each jar is sealed, seal will be dented in when sealed. If not sealed, reprocess.
  • Store on a cool dark shelve or in a canning room.About two hours before serving,.
  • open the jar,drain the peaches and chill.
  • PEACH JUICE GELATIN DESSERT.
  • Reserve the cold juice from the jar to measure at least 3/4 cup add water to make 1 cup place in saucepan, add 7-UP, stir in one packet of unflavored gelatin, stir until dissolved, heat and pour into bowl and chill or pour into parfait glasses and chill.

1/2 stick unsalted butter, softened
1 cup coarsely crumbled amoretti
2 1/2 Tbsp. whole wheat flour
2 Tbsp. sugar
1/8 tsp. salt
1 large egg
8 firm, ripe small peaches, halved lengthwise and pitted
8 oz. mascarpone cheese

Steps:

  • Put oven rack in middle position and preheat oven to 350 degrees. Melt 2 Tbsp. butter and pour into a 13 x 19 inch glass or ceramic baking dish. Pulse 3/4 cup crumbled amoretti in a food processor until finely chopped, then add flour, sugar, salt, and remaining 2 Tbsp. butter. Blend until butter is incorporated, then add egg and blend until smooth.
  • Scoop out just enough peach pulp from center of each peach half with a melon ball cutter or small spoon to create a 1" deep cavity. Arrange peaches, cut sides up, in baking dish, then brush skins with melted butter from dish. Divide amaretti mixture among cavities, then sprinkle remaining 1/4 cup crumbled amoretti over filling. Bake until filling is puffed and crisp, 40 to 50 minutes. Serve warm or at room temp.
  • Wisk mascarpone with a few tablespoons of milk until it reaches a consistency suitable to dollop on peaches. Spoon on 1 Tbsp. per peach.

1 1/2 ounces amaretti cookies (about 12 small cookies)
3 ripe, firm peaches (about 5 ounces each), halved and pitted
3 teaspoons sugar (1/2 teaspoon per peach half)
3 teaspoons unsalted butter (1/2 teaspoon per peach half)
2 cups fresh whipped cream

Steps:

  • Preheat the oven to 375 degrees F. Butter the bottom of an 8-inch baking dish and set aside.
  • Using a melon baller, clean out the red flesh from the center of each peach. Arrange the peaches cut side up in the prepared dish. In the bowl of a food processor, add the amaretti cookies and pulse until finely crumbled. Divide the amaretti crumbs between the peaches. Fill the center of each peach with the amaretti cookie crumbs. Sprinkle 1/2 teaspoon of sugar over each. Dot each peach with 1/2 teaspoon of butter.
  • Bake until the peaches are tender and the filling is crisp on top, about 30 minutes. Serve warm with whipped cream.

GRILLED PEACHES WITH AMARETTI

8 ripe peaches, cut in 1/2 and pitted
1/4 cup vanilla sugar, recipe follows
1/4 cup good dark rum (recommended: Mount Gay)
1/4 cup good almond liqueur (recommended: Amaretto Di Savonna)
8 amaretti cookies, crumbled
Creme fraiche or vanilla ice cream to serve, optional

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat a grill with a single layer of charcoal. When the coals are hot, brush the grill with a little oil to make sure the peaches don't stick. Place the peaches, cut side down, on the grill and cook for a few minutes, until they're slightly charred.
  • Place the peaches in an oven-proof dish, sprinkle each half with a little vanilla sugar. Combine the rum and amaretto and drizzle 1/2 of it on the peaches. Bake the peaches for about 10 minutes, until they're very tender. Serve hot, at room temperature, or cold with crumbled amaretti cookies on top or with the cookies on the side. I like to serve them with a dollop of creme fraiche or vanilla ice cream.
  • Vanilla Sugar:
  • Find a jar tall enough to hold 2 vanilla beans. Fill the bottle with sugar and cover tightly. Store on a pantry shelf. After about 3 months you will have a wonderful ingredient for cooking and baking. Keep adding vanilla beans and sugar to the jar and you will have it for years.

I saw Graham Norton cook this on a recent episode of Gordon Ramsay's UK cooking show 'The F Word'. It looked really easy and tasty so I wanted to jot it down. On the show, Graham sprinkled lavender flowers over the finished product. I don't know about you but I can't easily get those even if I wanted to eat them. So, I have written the recipe down without them but you could add them if you wish.

4 fresh peaches
4 tablespoons amaretto liqueur
1 tablespoon white sugar
2 tablespoons maple syrup
2 tablespoons creme fraiche
4 amaretti

Steps:

  • Preheat the oven to 350 degrees.
  • Bring a pan of water to the boil.
  • Plunge the peaches in for approximately 30 seconds - this makes the skin easier to peel.
  • Drain and refresh in cold, iced water.
  • Carefully peel the peaches once cool.
  • Cut in half and remove the stones.
  • In a large bowl mix the peach halves with the amaretto and maple syrup.
  • Sprinkle over the sugar and mix well.
  • Allow the peaches to sit in the marinade for a few minutes.
  • Place the peaches, cut side up, on a non-stick baking tray.
  • Spoon the marinade into the holes in the peaches to keep them moist while cooking, pour over any excess.
  • Sprinkle with a little extra sugar.
  • Bake in the oven for approximately 5- 8 minutes, then remove and baste with the cooking juices, return to the oven to for a further 5 minutes, or until the peaches are tender.
  • Remove from the oven.
  • Serve two peach halves per person, cut side down on the plate.
  • Spoon a little crème fraiche on each plate and drizzle the remaining juices over the crème fraiche.
  • Lightly crush the Amaretti biscuits and sprinkle over the plates.

1 cup golden raisins
3/4 cup boiling water
2 pounds peaches, peeled and chopped
4 teaspoons grated orange zest
1/3 cup orange juice
2 tablespoons lemon juice
3 cups sugar
1/2 cup chopped pecans
3 tablespoons amaretto

Steps:

  • Place raisins in a small bowl. Cover with boiling water; let stand 5 minutes. Place raisins with liquid in a large saucepan. Add peaches and orange zest. Bring to a boil. Reduce heat; cover and simmer 10-15 minutes or until peaches are tender., Stir in orange and lemon juices; return to a boil. Add sugar. 4 ½ cups finely chopped, peeled peaches
2 tablespoons lemon juice
3 cups sugar
1 (1.75 ounce) package fruit pectin (such as Sure-Jell® Pectin Light for less or no sugar)
⅓ cup amaretto liqueur, or more to taste

Steps:

  • Inspect 5 half-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Mix peaches with lemon juice in a large pot immediately after chopping to prevent peaches from turning brown. Place pot over medium heat.
  • Mix 1/4 cup of the sugar with pectin and add it to the pot with the peaches. Stir well. Slowly bring to a full rolling boil that does not stop bubbling when stirred. Add the remaining sugar and stir well, scraping the bottom of the pot, to fully dissolve the sugar. Cook for 1 minute, stirring constantly.
  • Remove from heat and stir in amaretto liqueur.
  • Ladle peach jam immediately into the prepared jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and tightly screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Let rest for 24 hours without moving the jars. Gently press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

1/4 cup lemon juice
8 Small peaches, halved and pitted
1 cup mascarpone
4 tablespoons shelled, splintered pistachios, or toasted flaked almonds

Steps:

  • In small saucepan, combine sugar with 1 cup water. Place over low heat until sugar has dissolved. Raise heat to medium-high, and without stirring, allow syrup to bubble until it begins to caramelize and turn golden, about 20 minutes.
  • Mix amaretto and lemon juice together. Reduce heat under saucepan to low. Standing back from pan, slowly pour in mixture; it will spit, then simmer. Stir to dissolve any sugar strands that have formed.
  • Place peach halves in pan, in batches if necessary. Poach until just tender, 2 to 3 minutes, then transfer to plate. When all peaches have been poached, raise heat to medium-high, and boil caramel down until it is thick but still can be poured; there should be about 1 cup.
  • Place 4 peach halves on each of four plates. Drizzle with caramel. Garnish each plate with a dollop of mascarpone sprinkled with splintered pistachios.

4 cups peeled pitted and chopped fresh peaches
8 cups granulated sugar
1/4 cup fresh lemon juice
1 teaspoon butter
1 (1 ounce) packet liquid pectin
1/3 cup amaretto liqueur

Steps:

  • You'll need a water bath canner with a lid and basket/lifter, a clean funnel to fill your jars, (7 ) eight ounce glass canning jars, screw bands and inner lids, plus probably another jar to put in your fridge or can in a separate water bath.
  • Wash all of your equipment. Sterile equipment in a clean environment is your best friend when preserving any food.
  • Wash your jars, lids and screw bands in hot soapy water. Fill your canner with hot water, put the lifter in and cover and heat on high to boiling.
  • Fill a tea kettle or other pot with water and heat in case you need to add water to the canner once the jars are submerged and also for some boiling water to soften the lids.
  • Put your jars in the lifter and submerge them until you are ready to fill them.
  • Dry the screw bands and place the lids in a small pan. Once the kettle is boiling pour some boiling water over the lids to soften the rubber seals.
  • In a large non-reactive pot mix the peaches, lemon juice and sugar. Once the sugar is dissolved add the butter which will reduce foaming.
  • Heat over med-high to high heat stirring constantly until it reaches a boil that doesn't stop when you stir.
  • Stir in the pectin and boil one minute.
  • Add the Amaretto and stir inches Remove from the heat and skim any foam off with a metal spoon.
  • Remove the jars from the canner and invert on a clean dish towel to drain.
  • Turn over and fill to within 1/4″ from the rim.
  • Wipe the rims with a clean hot dishcloth and put the lids on rubber seal against the clean jar rims.
  • Add a screw band and tighten just until you get resistance- finger tip tight.
  • Put the jars in the lifter of the canner and then submerge them. Add boiling water if needed to cover the jars by 1-2″ of water.
  • Return the canner to a gentle rolling boil and process for 10 minutes if sea level. I have to add 10 minutes for altitude.
  • Consult an altitude chart on your pectin package to adjust for your altitude.
  • Once the process time is over turn off the heat and leave the jars submerged for another 5 minutes. Lift the lifter out of the water and transfer the jars without touching the lids to an clean towel on your counter or other heatproof surface.
  • Leave for 12-24 hours for the jam to gel and the lids to seal. You should hear a soft "plonk" when each seals (it's usually within a minute or two of removing them from the water) Label and store.
  • Refrigerate and use immediately any that do not seal.

8 peaches (about 3 pounds), peeled and cut into 1/4-inch slices (8 cups)
2 tablespoons granulated sugar
1 tablespoon flour
1 teaspoon vanilla extract or 1/2 teaspoon almond extract
The topping:
3/4 cup flour
1/2 cup firmly packed light brown sugar
1/4 cup granulated sugar
3/4 cup crushed amaretti cookies (about 16 cookies)
1 teaspoon ground cinnamon
1/2 cup almonds, toasted
8 tablespoons (1 stick) unsalted butter, cut into 1/2-inch pieces and chilled

Steps:

  • Position an oven rack in the center of the oven and lay a sheet of aluminum foil on the rack below to catch drippings. Preheat the oven to 375°F.
  • To make the filling:
  • Mix the peach slices with the granulated sugar, flour, and vanilla or almond extract. Transfer the peaches to a shallow 2-quart baking dish.
  • To make the topping:
  • In a food processor, pulse together the flour, the brown and granulated sugars, amaretti, and cinnamon until the amaretti are in very small bits. Add the almonds and pulse until the nuts are in small pieces.
  • Add the pieces of butter and pulse until the butter is finely broken up.Continue to pulse until the topping no longer looks sandy and is just beginning to hold together.

4 strips lemon zest (from 1 lemon)
3/4 cup amaretto
1/4 cup honey
1/4 teaspoon kosher salt
1/8 teaspoon crushed red pepper flakes
Vanilla ice cream (for serving)
1/2 cup basil leaves, torn if large

A (4-quart) slow cooker

Steps:

  • Toss peaches, lemon zest, amaretto, honey, salt, red pepper flakes, and 1 cup hot water in slow cooker. Cover and cook on high until peaches are tender when pierced with a fork, about 1 hour. Keep warm until ready to serve.
