QUICK AND EASY CORNED BEEF BREAKFAST SKILLET
Quick and easy way to make corned beef hash. You can substitute left over baked potatoes or diced frozen hash brown patties for cubed hash browns. You can use leftover corned beef (3 cups diced), or Certified Angus Beef deli corned beef.

Steps:
- Preheat oven to 325 degrees F
- Using a large ovenproof skillet, cook the hash browns and the onion in the olive oil until the potatoes are browned and onion is tender. Remove from the heat; stir in corned beef and salt.
- Make four wells in the corned beef mixture. Break one egg into each well. Sprinkle with salt and pepper.
- Cover and bake for 15-20 minutes or until eggs reach desired doneness. They will continue to cook after they are removed from the oven.
- Garnish with parsley if desired.

This was one of my favorites made by Mother, growing up in Nashville, TN. She got it from her Better Homes & Garden Cookbook (much older version than the one I got when I married). I recently tried this out on a dear upstate New Yorker friend who claimed "wasn't too crazy about beets" but loved this.

Steps:
- Lightly toss together corned beef, potatoes, beets and onion.
- Add milk, salt, and Tabasco.
- Season to taste with more salt and pepper as needed.
- Melt fat in skillet.
- Spread hash evenly over bottom.
- Cook over medium heat until underneath side is brown and crusty.

EASY SKILLET CORNED BEEF AND CABBAGE

Steps:
- Cook the bacon in large skillet over medium heat until almost crisp. Remove the bacon from the pan and set aside.
- Melt the butter in the pan with the bacon grease. Add the cabbage, stirring well to coat the cabbage in fat.
- Add about 1/3 cup water, and salt and pepper, to taste. Cover pan with a lid, and cook over medium heat for about 10-15 minutes.
- Meanwhile, chop the bacon into small pieces and cut the thinly sliced deli corned beef into strips.
- Remove the lid from the pot, and scatter corned beef and chopped bacon over top of the cabbage. Cover and cook until desired doneness.
- I personally like a little bit of crunch left to the cabbage.
- You can serve this with your favorite mashed, baked or boiled potatoes as a side dish. I like to served steamed carrots with this too.

CANNED CORNED BEEF SKILLET DISH
This is a dish that many families with roots in Hawaii will find familiar. Not so fancy but filling, fast to cook, delicious, and very versatile to serve any time of day.

Steps:
- Add the oil to your frying pan and heat on medium high heat.
- Immediately add the onions to your pan and stir occassionaly. You so not want the onions to burn. Onions should look translucent and a little brown.
- Add the garlic and diced tomato. Stir to incorporate the onions. Cook untill the tomatoes have reduced while stirring to keep the garlic from burning.
- Add the corned beef.
- Stir to mix everything together. Mixture will appear watery but this is normal. Allow to cook for a minute or two then remove pan from heat.
- To serve: over cooked rice. On plain bread. On hamburger buns. On saltine crackers. On biscuits. Even on flat bread or tortillas.
