CANNED BISCUIT DOUGH FRUIT COFFEE CAKE
Steps:
- Preheat oven to 375
- Put sugar and cinnamon and orange zest in gallon size zip lock bag and shake to combine.
- Open biscuit dough and cut each biscuit into quarters. Put quarters into the bag with the sugar mixture and shake until they are all coated.
- Grease a bundt cake pan making sure to get in all the cracks.
- Arrange fruit in the bottom of the pan evenly.
- Combine butter and extract and pour over the fruit.
- Place pieces of biscuit dough around the pan. Pieces will overlap.
- Bake for 20 minutes or until a knife inserted into the dough comes out clean.
- Allow to cool for 30 minutes before inverting the pan onto a plate that has a lip to prevent juice from spilling.
- Serve with whipped cream or a rumchata frosting drizzle

- In a large bowl, mix together the cake mix, eggs and pie filling.
- Pour into a greased and floured 9 X 13 inch pan.
- Combine the brown sugar, flour, butter, cinnamon and nuts.

This bisquick coffee cake recipe is one of my favorites. It used to be on the back of the Bisquick box, but they replaced it a few years ago. I'm posting it here not only to share it, but as a backup in case I lose my recipe card :)

Steps:
- Preheat oven to 400 degrees.
- Grease a deep pie plate, 8"x8" square pan, or 9"x9" square pan.
- Mix dough ingredients and put in baking dish.
- Mix topping ingredients with a fork or pastry mixer until crumbly.
- Spread topping mix over dough and drag a butter knife across like you were making a tic-tac-toe board several times.
- Bake for 25 minutes.
FRUIT FILLED COFFEE CAKE
I got this recipe a long time ago from a friend at a former job. I have since taken it in to meetings at work several times, with different variations on the fruit filling (I've even split the coffee cake by using two different flavors, such as apple on one side & cherry on the other). No matter what, this coffee cake ALWAYS disappears!

Steps:
- Beat together butter (or margarine) and sugar.
- Add eggs, one at a time, beating well after each addition.
- Add other ingredients (except pie filling)& combine thoroughly.
- Spread about 1/2 the batter in a 10x15x1" cookie sheet that has been lightly sprayed with cooking spray (pan must have at least 1" sides).
- Place pie filling on top of batter; top the pie filling with remaining 1/2 of batter, spreading it out so that most of the fruit is covered.
- Bake at 350 for 40-45 minutes.
- Let cool in pan on wire rack.
- Frost with powdered sugar icing, if desired.
COUNTRY BLUEBERRY COFFEE CAKE
Saw this on Paula Deen's show and had to try it. Uses refrigerated biscuit dough. I reduced the amount of sugar - the original recipe called for 1/2 cup sugar with the blueberries which was very sweet. The warm, bubbling blueberries are just wonderful.

- Preheat oven to 375 degrees.
- Generously grease a 9-inch square baking dish.
- In a small bowl, combine brown sugar and cinnamon and mix well with a fork. Set aside.
- Separate biscuit dough into 8 biscuits, and cut each biscuit into quarters.
- Dip each biscuit piece into the melted butter, then roll in the cinnamon-brown sugar mixture to coat well. Arrange in a single layer in baking dish.
- Sprinkle with 1/2 cup of the oats.
- Combine blueberries and sugar in a bowl and toss to coat.
- Spoon blueberry-sugar mixture over oats and biscuits and sprinkle with remaining 1/2 cup oats. Drizzle remaining melted butter on top.
- Bake for 25 minutes or until cake is golden brown and center is done.
- Cool for 10 minutes, serve warm.
