The Canlis Restaurant is in Seattle. To coddle an egg, bring a small saucepan of water to a simmer. Then simmer the egg for exactly 1 minute. Coddled eggs make the dressing very creamy.

2 tablespoons olive oil
1 garlic clove
1 dash salt
2 medium tomatoes, cut in 1/8s
2 heads romaine lettuce, sliced in 1-inch strips
1/4 cup green onion, chopped
1/2 cup romano cheese
1 lb bacon, cooked, chopped
1 cup crouton
3 ounces olive oil
2 lemons, juice of
1/2 teaspoon black pepper
1/4 teaspoon mint, fresh & chopped
1/4 teaspoon oregano
1 egg, coddled

Steps:

  • Into a large wooden bowl, pour 2 Tbsp oil.
  • Sprinkle with salt and rub firmly with garlic.
  • Remove garlic.
  • In the bottom of the bowl, place tomatoes.
  • Add romaine lettuce.
  • Add onion, cheese, and bacon.
  • Into a separate bowl, pour 3 oz oil, lemon juice, pepper, mint, and oregano.
  • Add the coddled egg. (Be sure to not add the shells!).
  • Whip vigorously.
  • When ready to serve, pour dressing over salad.
  • Add croutons and toss.

1 large head romaine lettuce large
1 tomatoes peeled , (up to 2)
1/4 cup Green onion chopped
1 lb bacon cooked and chopped
1 large hass avocado large, cut into ~ 1/2 in pieces
1 cup romano freshly grated
1/3 cup croutons
1/2 cup olive oil
1 lemon juiced (3 tbsp)
1/2 tsp pepper
1 coddled egg (boiled for 1 min)
1/4 tsp oregano powder
15 frest mint

Steps:

  • -make the dressing: mix pepper, lemon juice and coddled egg in bowl, whip vigorously; slowly add olive oil whipping constantly, place in mint leaves and oregano, let sit 1/2 hour while preparing the rest of the salad...while this sits... -wash and tear the romaine into bite sized pieces, place in large bowl -add green onions, 1/2 the cheese, tomatoes, 1/2 the bacon bits and the avocado pieces -back to dressing: squeeze and dispose of mint leaves, mix dressing and pour over salad...toss -add croutons and a sprinkle of romano cheese and bacon to top and serve

It should not come as a surprise that the best Caesar salad is also the most traditional version. That means it's time to bring out the anchovies and eggs -- and don't skimp on quality Parmesan cheese. We've even included garlicky homemade croutons to balance the tangy dressing.

3 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
2 cloves garlic, crushed
Kosher salt
3 cups rustic bread (about 3 ounces), torn into bite-sized pieces
2 tablespoons freshly grated Parmesan
Freshly ground black pepper
2 anchovies packed in oil
1 clove garlic
1 egg yolk, at room temperature
1 teaspoon Dijon mustard
1 tablespoon freshly squeezed lemon juice, at room temperature
1/2 cup extra-virgin olive oil
5 tablespoons freshly grated Parmesan
Kosher salt and freshly ground black pepper
2 romaine hearts, chopped (see Cook's Note)

Steps:

  • Preheat the oven to 400 degrees F.
  • For the croutons: Put the olive oil and butter in a small saucepan over medium-low heat. When the butter is completely melted add the garlic and 1/4 teaspoon kosher salt. Carefully swirl the pan to combine. Set aside for 10 minutes to allow the garlic to infuse the oil mixture.
  • Put the bread pieces on a baking sheet. Evenly pour the garlic mixture over the bread and toss to coat. Spread the bread in a single layer and bake until golden brown, 8 to 10 minutes. Stir the bread halfway through cooking to ensure even browning. Remove from the oven and sprinkle with black pepper and Parmesan. Set aside to cool.
  • For the salad: Soak the anchovies in a small bowl of water for 5 minutes. Rinse with cold water, drain and pat dry. Finely chop the anchovies and garlic, then use the side of your knife to mash them to a paste.
  • Add the anchovy paste, egg yolk, Dijon mustard and lemon juice to a large bowl and whisk to combine. While whisking, slowly drizzle in the olive oil in a steady stream until emulsified. Stir in 3 tablespoons grated Parmesan. If needed, add water, 1 teaspoon at a time to thin the dressing. Season with salt and pepper to taste.
  • Add the lettuce and croutons to a large bowl and gently toss with the dressing until coated. Top with grated Parmesan and serve immediately.

Canlis, a longtime Seattle institution, floats high above Lake Union. A menu highlight is the Canlis salad, which is in some measure a basic steakhouse salad: chopped romaine with bacon and croutons and cherry tomatoes, all cloaked in a thick, lemony dressing that recalls Caesar (you all did love him once, and not without cause). But a strong scent of the Middle East flows through it as well, courtesy of the Canlis clan's roots in Greece and Lebanon, with heaps of chopped mint and oregano mixed in with the greens. These combine with the bright, eggy taste of the dressing to elevate the entirety far beyond the confines of a salad to be eaten simply with meat and potatoes. A Canlis salad, properly prepared, is a revelation.

2 heads of romaine, outer leaves discarded, chopped
4 bacon slices, chopped
1 cup cubed fresh Italian bread
1 egg
1/4 cup freshly squeezed lemon juice
1/2 cup olive oil
Kosher salt and black pepper
1/2 cup scallions, thinly sliced
3/4 cup fresh mint, roughly chopped
1 tablespoon fresh oregano leaves, roughly chopped
12 cherry tomatoes, halved
3/4 cup freshly grated Romano cheese

Steps:

  • Wash the lettuce in cold water, dry thoroughly and put in the refrigerator to chill.
  • In a large pan set over medium-high heat, fry the bacon until it is nearly crisp, then remove to a bowl. Drain off all but one tablespoon of fat, then add the bread cubes to the pan and toss to coat. Bring heat to low and toast, tossing the bread occasionally with a spoon until it is crisp. Remove to another bowl.
  • Make the dressing. Place a whole egg in its shell into a coffee cup, then pour boiling water over the top. Allow the egg to cook for 60 seconds, then remove it. Rinse with water until cool. In a mixing bowl, whisk together the lemon juice and olive oil, then crack the coddled egg into the bowl and whisk again, vigorously, to emulsify. Add salt and pepper to taste, then set aside.
  • In a salad bowl, combine cold lettuce, scallions, mint, oregano and the reserved bacon. Toss with enough dressing to coat the lettuce, then top with the tomatoes, the croutons and a goodly shower of cheese.

This authentic version (get out those anchovies and eggs) from Mark Bittman does not disappoint.

About 1/2 cup extra virgin olive oil
1 cup rustic bread, cut into 1-inch cubes
Salt
freshly ground black pepper
1 clove garlic, halved
2 eggs
2 tablespoons freshly squeezed lemon juice
2 to 3 tablespoons minced anchovies, or to taste
Dash Worcestershire sauce
1 large head romaine lettuce, washed, dried and torn into pieces
1/2 cup freshly grated Parmesan

Steps:

  • Put 2 tablespoons of the oil in a skillet large enough to hold the bread in a single layer and turn heat to medium. When oil shimmers, add bread and sprinkle with salt and pepper; brown lightly on all sides, adding a little more oil if necessary. Remove and set aside.
  • Rub the inside of a salad bowl with the garlic clove; discard it. Bring a small pot of water to a boil. Pierce a tiny hole in the broad end of each egg with a pin or needle and boil them for 60 to 90 seconds; they will just begin to firm up. Crack them into the salad bowl, being sure to scoop out the white that clings to the shell.
  • Beat eggs with a fork. Gradually add lemon juice and 6 tablespoons oil, beating all the while. Stir in anchovies and Worcestershire. Taste and add salt if needed, and lots of pepper. Toss well with lettuce; top with Parmesan and croutons; toss again at table. Serve immediately.
