Steps:
- Preheat oven to 250 degrees F (120 degrees C).
- Mix sugar, cinnamon, and salt together in a bowl.
- Whisk egg white and water together in a separate bowl until frothy. Toss pecans in the egg white mixture. Mix sugar mixture into pecan mixture until pecans are evenly coated. Spread coated pecans onto a baking sheet.
- Bake in the preheated oven, stirring every 15 minutes, until pecans are evenly browned, 1 hour.

YUMMY CANDY COATED PECANS
I'm not typically a "nut" person. My friend had my husband and I over for dinner and she made these and put them in a salad. My husband isn't normally a nut person either but he begged me to get the recipe from her (not typical). You can eat them plain but we like them in a simple salad with balsamic vinegarette dressing. Oh so good!

- Preheat oven to 275.
- Line a cookie sheet with wax paper and spray it with nonstick cooking spray.
- Beat egg white until stiff.

- Bake for 10-15 minutes or until browned.

- Beat egg white until stiff. Add brown sugar and vanilla. Stir until smooth. Mix in pecans and stir until coated. Pour the nuts onto the prepared cookie sheet.
- Bake until browned, approximately 10 to 15 minutes.

SOUTHERN COATED PECANS
A very old recipe which I might have found in a Junior League cookbook. Sweet with cinnamon and vanilla but not overpowering so you can still taste the pecans. They're very quick to make and nice to include in gift baskets. This is a simple candy recipe that's much more forgiving than most. Total cooking time is about 15 minutes.

This is a recipe that I borrowed from a great friend and chef, Chef James. This recipe is easy and the pecans come out delicious. They have a slight sweetness from the honey, a salty, nutty flavor from the butter and of course the spicy cayenne kick. These are fantastic in salads or just by the handful.

- Pre heat oven to 350 degrees.
- To toast the pecans, place evenly on a cookie sheet. Bake for 5-10 minutes at 350 degrees, checking often. They will burn quickly!
- In a 4-quart saucepan, place all ingredients, except pecans, and heat until mixture reaches 250 degrees. Turn off heat and add pecans to saucepan and mix well.
- Spread coated pecans evenly on cookie sheet lined with parchment paper or cooking spray. Bake at 350 degrees for 15 minutes. Check the pecans midway during cooking, give them a mix using a spatula, spread evenly on cookie sheet and continue cooking.
- Cool and enjoy.

- Place pecans in a shallow baking pan in a 250° oven for 10 minutes or until warmed. Grease a 15x10x1-in. baking pan with 1 tablespoon butter; set aside. , Grease the sides of a large heavy saucepan with remaining butter; add sugar, water, salt and cinnamon. Bring to a boil, stirring constantly to dissolve sugar. - Mix onion powder, garlic powder, 1 teaspoon salt, curry powder, and cayenne pepper together in a small bowl.
