1 -2 tablespoon sugar
1/4 teaspoon cinnamon (optional)

Steps:

  • In a heavy bottom pan heat to medium high heat.
  • Place nuts and butter, when butter is melted and nuts are coated with the butter sprinkle sugar and cinnamon if wanted over nuts stirring till carmelized.
  • Pour out on parchment paper separate nuts and cool.

Nonstick vegetable spray
6 tablespoons plus 3 more tablespoons sugar
3 tablespoons orange-tangerine juice
2 cups walnut halves
1/2 teaspoon ground cinnamon
2 heads butter lettuce, washed and dried
2 (8-ounce) cans mandarin orange segments
1/2 red onion, very thinly sliced
1 cup purchased Asian-style salad dressing (such as miso dressing or ginger dressing)

Steps:

  • Preheat oven to 375 degrees F.
  • Line a large cookie sheet with foil and spray with nonstick spray. In a 10-inch skillet over medium heat, add 6 tablespoons sugar and orange-tangerine juice. Bring to a simmer, and then add walnuts. Cook until sugar is absorbed and mixture starts to caramelize around walnuts, stirring constantly, about 2 minutes.
  • In a small bowl, mix cinnamon and remaining 3 tablespoons sugar. Toss walnuts in cinnamon-sugar. Place walnuts in single layer on prepared cookie sheet. Bake until walnuts appear crystallized and toasted, about 8 minutes. Set aside
  • Place 4 to 6 dry lettuce leaves on each plate. Randomly place orange segments, onion slices, and walnuts on top of each lettuce bed. Drizzle 2 tablespoons of dressing on top of each salad and serve.

Steps:

  • 1. Lightly spray a baking sheet with nonstick cooking spray and set aside. Place the walnuts and sugar in a nonstick skillet over high heat and stir with a wooden spoon as the sugar begins to dissolve and caramelize. Stir continuously to lightly toast the walnuts and coat with sugar. When walnuts and sugar are dark amber and golden brown, quickly remove them from the pan onto a prepared baking sheet. 1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup candied walnuts, finely chopped (see chef's note below)
1 stalk celery, finely chopped
2 teaspoons lemon juice

salt and pepper

  • 1. Mix all ingredients together in a large bowl.
  • 2. Cover and refrigerate for at least 2 hours.
  • 3. Chef's Note: To candy walnuts, add 2 teaspoons butter and 1/2 cup walnuts to saute pan. Sprinkle 1 teaspoon sugar over walnuts. Warm over medium heat until walnuts are toasted and sugar carmelized (approx. 10 minutes).

Toss these caramelized walnuts into your salad, over popcorn, or straight into your mouth. Crunch. Crunch. I love this easy method of making the candied nuts where everything goes into the pan at once. Other methods I've tried left me with globs of candy on the nuts rather than a more even coating. It also roasts the nuts at the same time so you don't have to pre-toast them, then add them back to the pan to be coated, blah, blah. Who needs extra steps? It seriously takes about 5 minutes on the stove and 5 minutes to cool. P.S. This recipe can easily be doubled.

1 cup walnut halves/pieces (you can also use this recipe for candied pecans)
1/4 cup white granulated sugar ((not coarse sugar))
1 Tbsp unsalted butter

Steps:

  • Heat a medium non-stick skillet over medium heat, add 1 cup walnuts, 1/4 cup granulated sugar and 1 Tbsp butter.
  • Heat over medium heat for 5 minutes, stirring frequently so your mixture doesn't burn (especially towards the end). When the sugar mixture starts melting, stir constantly until all sugar is melted and nuts are coated.
  • Transfer immediately onto a sheet of parchment paper and separate the nuts right away. Using two spatulas will make this task go faster. You don't want to give the nuts a chance to turn into a wad of inseparable delicious goodness unless you are the only person who will be enjoying the wad ;). Seriously, move quickly from the time the nuts are coated until they are separated out on the parchment paper.
  • Once the coating hardens (5-7 minutes), you can transfer them to a bowl and enjoy!

2 tablespoon honey
1/4 cup cherry jam
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
10 ounces baby spinach
1 pint blackberries
1/4 cup thinly sliced red onion
1/2 cup Candied Walnuts, recipe follows
1 small chunk Parmesan or pecorino
2 tablespoons unsalted butter
1 1/4 cups walnut halves
1/4 cup granulated sugar
1/2 teaspoon cinnamon
Kosher salt and freshly ground black pepper

Steps:

  • For the dressing: Whisk together the vinegar, mustard, honey, jam, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl. Whisk in the oil in a slow stream and continue whisking until the dressing is emulsified.
  • For the salad: Toss together the spinach, blackberries, onions and Candied Walnuts in a large salad bowl. Drizzle with the dressing and toss. Using a vegetable peeler, shave some cheese over the top.
  • Line a baking sheet with parchment paper and set aside.
  • Melt the butter in a medium saucepan over low heat. Add the walnuts and stir to coat. Raise the heat to medium, add the sugar and cook until the sugar is dissolved and caramelized, stirring often, about 5 minutes. 85g stoned dates , cut into small pieces
120g bag of rocket
100g shop-bought croûtons , crumbled
100g walnuts , halved
25g caster sugar
6 tbsp walnut oil
2 tbsp balsamic vinegar

  • Heat oven to 190C/170C fan/gas 5. To make the candied walnuts, shake the walnut halves in 2 tbsp water, then toss in the sugar. Scatter over a baking sheet and bake in the oven for 6-8 mins until golden brown. Remove from the oven and allow to cool.
  • Carefully peel the rind off the brie and discard. Put the gooey inside in a medium-sized bowl. Using a spoon or small whisk, whip the brie until pale and spoonable. To make the dressing, whisk the oil and vinegar together, then season.

  • To the pan with the residual caramel, add the vinegar and orange juice. Warm the pan, whisking until the caramel, vinegar and orange juice are well combined. Remove from the heat. Whisk in the mustard and oil. Adjust the seasoning.
  • Arrange the endive and radicchio leaves in a single layer on a family-style large platter. Intersperse the orange segments and walnuts with the endive and radicchio. Season with salt to taste. Drizzle with all of the dressing. Top with the blue cheese and parsley. Serve immediately.

  • Add the walnuts to the mixture and mix with a wooden spoon until they’re all well coated. Spread them on a foil-lined baking sheet and sprinkle them evenly with the salt. Put them in the oven and bake for about 12 minutes. Then rotate the baking sheet and bake for another 12 minutes; the nuts should be dry, not sticky. Remove them from the oven and let them cool.
