FRENCH CANADIAN (NOT BOSTON) BAKED BEANS
Steps:
- Pour the beans onto a plate, and pick-over looking for bad beans, or stones. Place beans in bowl, cover with water by at least 2 inches, and soak overnight.
- Preheat oven to 250 degrees F.
- Drain beans and place in 4-quart bean pot. Add onion, dry mustard, pepper, salt, and maple syrup. Add water to cover. Cut salt pork into 1-inch pieces and place on top of beans. Bake covered, approximately 8 hours. Check each hour to see if water needs to be added. You can add more maple syrup in place of water for flavor, if desired.
- Serve the beans with brown bread, franks, or ham. For breakfast, serve with eggs, bacon, and home-fries.
CANADIAN BAKED BEANS WITH MAPLE SYRUP (NO MOLASSES)
These dark savoury beans fill the house with wonderful aroma on a cold Canadian day. Real Maple Syrup is far superior to those liquid sugary types. I like to leave the onion whole and take it out after (cut it up and eat seperate). Great served with hunks of rustic bread and pork chops. Make lots of it and you can take it for lunches. I'm going to freeze the leftovers flat in bags but because they are salted I'll use them up within a months time. Preparation time is not including overnight soak

- Soak beans overnight to cut down on cooking time. Drain and place in a 4 quart bean pot.
- Mix seasonings and Maple Syrup together and stir into beans. Add enough water to cover.
- Peel Onion and remove root and blossom ends. Push whole onion down into beans and place the salt pork next to it.
- Bake covered in a 250 degree oven for about 8 hours.
- Check on them every hour or so and see if you need to add water so they never dry out. When finished if you want the sauce to be thicker then you can always stir in some refried bean flakes and let sit to thicken.

Steps:
- Soak beans in cold water to cover them overnight; DO NOT DRAIN.
- Place beans, and water in which they were soaked, in saucepan and simmer for 1/2 hour.
- Place beans a mixing bowl; add all remaining ingredients. Mix well.
- Add additional water, if desired.
- Pour into a casserole pot/ dish.
- Cover and bake at 300 deg F for 6-8 hours, removing cover during last 1/2 hour of baking.
- ****Add boiling water 2-3 times to keep beans moist and covered with liquid; stir occasionally. Do not add water during last 1/2 hour of baking.

MOLASSES BAKED BEANS RECIPE
These classic baked beans have East Coast roots - the use of molasses versus maple syrup is a Maritime tradition stemming from New England, in particular Boston.

Steps:
- Place the dried beans into a Dutch oven with 6 cups (1.5 L) of water. Soak overnight.
- Drain and pour beans back into the pot with enough water to cover the beans by a couple of inches, cook for 30 minutes until they are tender but still firm. Drain beans, making sure to reserve cooking liquid, set aside.
- Preheat the oven to 325 °F (160 °C). While the oven is preheating, cook pork over medium-high heat in the Dutch Oven until fat is rendered and pork is beginning to brown, then add the onion cooking until tender.
- Add the beans back to the pot, along with molasses, brown sugar, apple cider vinegar, ground mustard, salt and pepper and 3 cups (750 mL) of reserved bean water.
- Bake uncovered for 3 to 5 hours until the beans are tender, and the sauce has thickened, and the edges of the pot get sticky. (Note: if beans get dry, add another cup of water.)

OLD FASHIONED FRENCH CANADIAN BAKED BEANS
This was a staple for me growing up in Quebec and brings back many happy memories. A perfect winter comfort food!!! I have tweaked an original recipe and wanted to share it with you. Great at breakfast with fried egg and sausage. A hearty meal with crusty bread and salad. It takes some time but well worth the wait -- I hope you enjoy them. Special note: some people prefer using salt pork when preparing baked beans - I use sliced bacon instead.

Steps:
- Cover beans with water and soak overnight.
- Rinse beans then bring to a boil in approximately 1 quart of water, bay leaf and garlic - simmer for 30 minutes.
- Turn off heat and let beans stand for approximately 1 1/2 hours until soft. Drain and reserve the bean liquid. Discard bay leaf and garlic.
- Mix together remaining ingredients (excluding beans and bacon).
- Add beans to bean pot (or any covered dish).
- Stir in molasses mixture to beans. Top off with some of the reserved bean liquid.
- Arrange bacon on top.
- Cover and bake at 300 degrees for 7 hours. For the final hour of cooking, remove cover to let bean brown up nicely.
- Note: check occasionally and keep beans covered with reserved bean liquid during cooking.
