Steps:

  • Peel onions and cut each one into quarters, keeping onions together.
  • Place 1 tablespoon of butter and 1 clove of garlic in the middle of each onion.
  • Double wrap each onion in foil and place on hot coals.
  • Cook for 30 to 40 minutes.
  • Carefully remove from coals and unwrap. Season with salt and pepper, then eat.
  • You can also serve with a Ranch dip or hot sauce.

1/4 cup butter, cubed
1/4 cup honey
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon garlic salt

Steps:

  • Cut each onion into 12 wedges; divide among eight pieces of double-layered heavy-duty foil (about 12 in. square). Top onions with butter, honey and seasonings. Fold foil to seal packets tightly. Grill, covered, over medium heat for 10 minutes on each side or until onions are tender.

6 potatoes, sliced
¼ cup diced onion
2 tablespoons cold margarine
¼ cup grated Parmesan cheese
¾ cup shredded mozzarella cheese
¾ cup shredded Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Build a campfire and allow the fire to burn until it has accumulated a bed of coals. Rake the coals into a flat bed on one side of the fire.
  • Cut 2 lengths of heavy duty foil approximately 18 inches square, placing one on top of the other for strength. Spray top one with non-stick spray. Spread potatoes on foil leaving plenty of room to fold up later. Scatter the onion over potatoes; slice the margarine over the potatoes; layer the Parmesan, mozzarella, and Cheddar cheeses over the potatoes; season with salt and pepper. Bring opposite edges of foil together and seal.
  • Place the packet directly onto your campfire and cook until the potatoes are soft, about 35 minutes.

We sometimes leave out the sausage and serve the potatoes as a side dish. Either way, it's so easy, and the spuds can be served right from the foil pouch for easy cleanup. 3 pounds red potatoes, cut into 1/2-inch cubes
2 packages (12 ounces each) smoked sausage links, cut into 1/2-inch slices
4 bacon strips, cooked and crumbled
1 medium onion, chopped
2 tablespoons chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon pepper
Additional chopped fresh parsley, optional

Steps:

  • Prepare campfire or grill for medium heat. In a large bowl, toss potatoes with sausage, bacon, onion, parsley, salts and pepper. , Divide mixture among eight 18x12-in. pieces of heavy-duty nonstick foil, placing food on dull side of foil. These are easy to make for camping, my husband loves them! We prepare them at home and then leave them in the cooler until we are ready to cook. You can use any combination of meat and vegetables that you like. Do not try to use less olive oil or foil or your dinner will burn. Be careful when opening foil as steam will have formed inside and can burn you.

1 pound skinless, boneless chicken breast meat - cubed
2 onions, diced
1 (8 ounce) package sliced fresh mushrooms
1 yellow bell pepper, seeded and sliced into strips
1 red bell pepper, seeded and sliced into strips
4 cloves garlic, sliced
4 small potatoes, cubed
¼ cup olive oil
1 lemon, juiced

Steps:

  • In a large bowl, or a large zip-top bag, combine the chicken, onion, mushrooms, yellow pepper, red pepper, garlic, and potatoes. Pour in the olive oil and lemon juice, then mix well.
  • Evenly divide the mixture between 4 large sheets of aluminum foil. Top each with another sheet of foil, and roll up the edges tightly. Wrap each packet again, securely in another sheet of foil to double wrap.
  • Cook in the hot coals of a campfire until the chicken is opaque and the potatoes are tender, around 40 minutes.
