⅓ cup milk
½ cup shredded Cheddar cheese
2 tablespoons dry bread crumbs
1 tablespoon butter or margarine, melted

Steps:

  • Arrange broccoli and chicken in 9-inch pie plate or 2-quart shallow baking dish.
  • Mix soup and milk and pour over all.
  • Sprinkle with cheese. Mix bread crumbs with butter and sprinkle on top.
  • Bake 400 degrees F for 25 minutes or until hot.

1/2 cup milk
1 small onion, finely chopped
1/4 cup grated parmesan cheese
1/4 cup sour cream
1 1/2 cups cubed cooked turkey or 1 1/2 cups chicken
1 small zucchini, cut in half and thinly sliced
1 1/2 cups hot cooked very thin spaghetti
extra parmesan cheese (optional)

Steps:

  • Mix soup, milk, onion, cheese& sour cream in large bowl.
  • Add chicken, zucchini& spaghetti.
  • Toss to coat.
  • Spoon into 1 1/2 qt.
  • casserole dish.
  • Bake at 375 F for 30 min.
  • or until hot.
  • Serve w/ additional cheese if desired.

3 cups zucchini, sliced
4 cups rotisserie chicken, shredded
1 cup cream of chicken soup or 1 cup mushroom soup
1 cup carrot, shredded
1 cup sour cream
1/2 cup chopped onion
1 (4 ounce) can sliced water chestnuts, drained
1 (4 ounce) can mushrooms, drained
1 cup cheddar cheese, shredded
1/2 cup butter, melted
1 (8 ounce) package seasoned stuffing mix

Steps:

  • Cook sliced zucchini for 5 minutes in boiling salted water. Combine soup, carrots, sour cream, onions, water chestnuts, and mushrooms. Lightly fold zucchini into mixture. Add chicken and cheddar cheese. Mix melted butter with stuffing mix. Spread all but 1 cup stuffing mix in a 9 x 13 inch pan. Put mixture over stuffing. Cover with remaining stuffing and bake at 350 Fahrenheit for 45 minutes.

1/2 cup water
1/2 cup chunky salsa
2 cups MINUTE White Rice, uncooked

Steps:

  • Preheat oven to 425°F.
  • In medium nonstick skillet over medium-heat, cook chicken 5 minutes or until no longer pink and juices evaporate, stirring often.
  • Add soup and salsa.
  • Heat to a boil, stirring occasionally.
  • Place tortillas on 2 baking sheets.
  • Top half of each tortilla with about 1/3 cup soup mixture.
  • Spread to within 1/2 inch of edge.
  • Moisten edges of tortilla with water.
  • Fold over and press edges together.
  • Bake 5 min.
  • or until hot.
  • Serve with Fiesta Rice.

1 (10 3/4 ounce) can condensed cheddar cheese soup (I like Cambells)
1/2 cup pace salsa
12 flour tortillas
4 green onions, thinly sliced
1 small avocado, sliced (optional)

Steps:

  • In large shallow dish, arange chicken. Pour dressing over chicken, turning to coat. Cover, refridgerate about 30 minute.
  • To grill: Remove chicken from bowl and arrange on grill directly above medium coals. Grill uncovered about 15 min, turning once during cooking.
  • In saucepan combine salsa and soup. Over medium heat, heat through, stirring occasionally.
  • Meanwhile, heat tortillas according to package.
  • Slice chicken into thin strips. Arrange down center of each tortilla, top with desired amount of onions, avocado, and soup mixture.

1 large sweet onion, thinly sliced
1 teaspoon olive oil
4 large fresh button mushrooms, thinly sliced
2 tablespoons tomato paste
2 tablespoons chopped fresh basil
1 teaspoon chopped fresh oregano
1 cup chicken broth or stock
2 boneless skinless chicken breasts (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
1 medium zucchini, thinly sliced

Steps:

  • Prepare grill for medium heat or preheat oven to 450°. In a large skillet, cook onion in oil over medium-high heat until crisp-tender, 4-5 minutes. Add mushrooms; cook until tender, 4-5 minutes. Stir in tomato paste, basil and oregano; cook until tomato paste starts to caramelize, 6-8 minutes. Stir in broth, stirring to loosen browned bits from pan. Bring to a boil; cook until sauce has thickened, 8-10 minutes. Remove from heat; cool slightly. , Cut each chicken breast into 3 long strips. Divide chicken strips between two 18x12-in. pieces of heavy-duty nonstick foil, placing food on dull side of foil; sprinkle with salt and pepper and top with zucchini. Spoon tomato mixture over zucchini. Fold foil around mixture, sealing tightly., Place packets on grill or in oven; cook until chicken is no longer pink, 15-20 minutes, turning once. Open packets carefully to allow steam to escape. If desired, top with additional basil.
