1/2 cup calvados (a type of French apple brandy)
2 cups apple cider
1 medium shallot, finely chopped
1/2 cup heavy cream
2 tablespoons butter, in 1/2-inch cubes

Steps:

  • Put calvados, cider, and shallots in a saucepan.
  • Bring to a rapid boil and simmer until volume is reduced by half.
  • Strain out the shallots, return reduced liquid to pan.
  • Bring to a boil and whisk in cream and butter just prior to serving.

1 ounce maple syrup (grade A)
1/2 ounce fresh lemon juice
ice cube
green apple, slices

Steps:

  • In a cocktail shaker, combine the calvados, maple syrup, lemon juice and ice and shake for 10 seconds. Strain into glass filled with ice and add the green apple slices as a garnish.

1 cup sugar
5 tablespoons Calvados or brandy

Steps:

  • In saucepan over medium-high heat, combine sugar and 1 cup water. Cook, stirring occasionally, until sugar is dissolved, 4 to 5 minutes. Remove from heat; cool. Stir in Calvados.

Whipped cream becomes light-yet richer-with the addition of Calvados. It echoes the apples in the torte but also goes beautifully with the pumpkin plum tart.

1/2 vanilla bean (halved crosswise), halved lengthwise, or 1 teaspoon pure vanilla extract
1 cup chilled heavy cream
1 tablespoon Calvados or other apple brandy

Steps:

  • Scrape seeds from bean with tip of a knife into a bowl (reserve pod for another use). Add remaining ingredients and beat with a mixer until cream just holds soft peaks.

3/4 cup Calvados Soaking Syrup
1/2 teaspoon sugar
1/2 cup fresh cranberries
12 sprigs rosemary

Steps:

  • Pour soaking syrup into a medium bowl; place sugar in a large one. Insert a wooden toothpick into a cranberry. Dip a cranberry into syrup, tap off any excess liquid, and roll in sugar. Set aside on parchment. Repeat.
  • Dip a rosemary sprig in syrup; tap off any excess liquid. Dip into sugar, and tap off excess sugar. Set aside on parchment. Repeat.

The secret to a super moist cake is soaking the cake in a syrup before decorating it- this is done while the cake is still in the pan after the cake has been out of the oven for at least 5 minutes.

1 cup granulated sugar
2 cups water
2 tablespoons rum

Steps:

  • My favorite method is to poke each layer with a toothpick all over the top, then pour the syrup on top.
  • In a saucepan dissolve the sugar with the water, bring to a boil, cover and remove from heat, let the syrup cool to room temperature.
  • Add the 2-tablespoons of rum and stir.
  • Allow it to set up well before finishing the cake- this will take about 2 hours.

2 qt filtered apple juice
1 1/2 cups brewed black tea such as English Breakfast
1 1/2 cups Calvados
8 cinnamon sticks

Steps:

  • Boil apple juice in a 4- to 5-quart wide heavy pot over high heat until syrupy and reduced to about 1 1/2 cups, about 50 minutes.
  • Combine apple syrup, tea, and Calvados in a 1 1/2- to 2-quart saucepan and heat over moderate heat until hot (do not boil). Divide toddy among 8 small cups and serve with a cinnamon stick in each.
