CALIFORNIA SALAD
My sister-in-law made this salad for a family dinner just before my husband and I were married. In a hurry I wrote the recipe down. I've shared this recipe often through the years of our marriage. Recently at a dinner, my SIL asked if I made this recipe often. I replied that yes I did and every year I have to make California Salad. The look on her face was priceless and her reply was "I thought I gave you this recipe years ago!". After visiting on this topic further, we discovered I had abbreviated cauliflower to Calif. Salad thus it's name. I hope you enjoy!

Steps:
- In large serving salad bowl layer torn lettuce, broken cauliflower, chopped green onions, crumbled bacon and shredded cheddar cheese.
- In small bowl mix together sugar and mayonnaise well.
- Pour over the top of layered salad- cover and chill until ready to serve.
- TOSS JUST BEFORE SERVING.

ANNIE'S TURKEY SALAD
This recipe can be made with leftover turkey, or a turkey breast. It is my great-grandmother's recipe. The cook time will not include the baking of the turkey, just making the salad. Keeping the salad somewhat chunky is part of what makes it good. No food processors, please. I serve this on a bed of red leaf lettuce and garnish with red and green seedless grapes and pecan halves. Cubed jellied cranberry sauce is very good with it, so I place that on the plate around the salad. Serve with assorted crackers or breads.

Steps:
- Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
- In a large bowl, thoroughly mix the eggs, turkey, pickles, prepared sandwich and salad sauce and mayonnaise. Chill in the refrigerator approximately 3 hours before serving.

CALIFORNIA TURKEY SCALOPPINE

Steps:
- Pound turkey slices between two sheets of waxed paper until thin.
- Marinate in wine or lemon juice in refrigerator 30 minutes to one hour.
- Beat egg slightly with water. Combine bread crumbs with flour, salt, paprika and parsley.
- Dip turkey slices in egg, then coat with bread crumb mixture. Chill for 1 hour.
- In large skillet heat 2 Tbl olice oil. Saute turkey about 3 minutes on each side, until golden brown. Remove to shallow baking pan.
- Place tomato and avocado on each turkey scallopini, then top with cheese.
- Place under broiler until cheese melts.
- Arrange on platter or individual plates, allowing 2 slices per person. Garnish with fresh parsley.
TURKEY MACARONI SALAD
Made this for my son using canned turkey in place of Tuna because he won't eat seafood. This includes cherry tomatoes giving a nice sweet juicy bite. A good make ahead recipe.

- In a large bowl mix all ingredients except the macaroni till well combined. Then toss in the macaroni. Chill for a couple hours to overnight.
- Season with salt if desired.

Steps:
- In skillet, cook bacon until crisp. Drain, crumble and set aside.
- While bacon is cooking, toss turkey with dressing, chives, lemon juice and horseradish. Let stand 10 minutes.
- Add mayo and pepper and toss until turkey is well coated. Add lettuce and toss gently. Sprinkle bacon on top and serve.
