This Corn Casserole Recipe is one of our favorite side dishes not only for Thanksgiving and Christmas, but year-round! Corn Casserole is made with a buttery cornbread base infused with sour cream, buttermilk, cheese, creamed corn, corn kernels and chives to create an uber moist, creamy cornbread-like casserole with a soft golden crust that's the perfect balance of savory, sweet, rich, creamy, and buttery; the dance of texture and flavor is heavenly! This Corn Casserole recipe is also ridiculously easy, MAKE AHEAD, customizable and belongs on your holiday table!

Number Of Ingredients 16

1 cup flour
1 cup yellow cornmeal
1/2 cup granulated sugar
1 tablespoon baking powder
1 teaspoon baking soda
1/2 tsp salt
1/4 tsp EACH chili powder, dried thyme
1 15 oz. can whole sweet corn (rinsed and drained)
1 14.75 oz. can cream style corn
1 cup sour cream
1/2 cup buttermilk (see notes for DIY)
1/2 cup butter (melted)
2 eggs (at room temperature)
1 cup freshly grated sharp cheddar cheese
1 4 oz. can mild chopped green chilies,
3 tablespoons chopped chives

Steps:

  • Preheat oven to 325 degrees F. Lightly grease a 9x13 baking dish.
  • Whisk Dry Ingredients in a large bowl. Add Wet Ingredients; gently whisk eggs, then mix all the ingredients just until combined. Pour mixture into prepared baking dish.
  • Bake at 325 degrees for 40-50 minutes or until a toothpick inserted in the center comes out with just a few crumbs. Let stand 5-10 minutes before serving. Best if served warm.

One 15-ounce can whole corn kernels, drained
One 15-ounce can creamed corn
1 large egg
1 1/2 cups shredded sharp Cheddar
1 cup yellow cornmeal
1 cup sour cream
6 tablespoons unsalted butter, melted
1/4 cup chopped fresh chives
1/4 cup sugar
2 teaspoons baking soda
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the whole corn, creamed corn, egg, Cheddar, cornmeal, sour cream, butter, chives, sugar, baking soda, 1 1/2 teaspoons salt and a generous amount of black pepper to a large bowl and stir until well combined.
  • Pour the mixture into a 2-quart baking dish and bake until lightly golden on the outside and set in the middle, 30 to 35 minutes.

16 ears corn, still in the husks
8 tablespoons (1 stick) salted butter
1 1/3 cups heavy cream
Kosher salt and freshly ground black pepper

Steps:

  • Cut the corn from the cobs into a bowl, then use the blunt side of the knife to press and scrape the cob all the way down to get all the bits of kernel and creamy milk inside.
  • Add butter to a very large skillet over medium-high heat and melt. Add the corn and toss. Add the cream and some salt and pepper to taste, then simmer for 20 minutes. Garnish with more fresh pepper.

1 pound bacon, cut into small pieces
1/2 onion, finely chopped
1 clove garlic, minced
2/3 cup cornmeal
2/3 cup flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup sour cream
1/2 cup butter, melted
1 egg
one 15-ounce can corn, drained
one 15-ounce can cream-style corn
1 1/2 cups sharp white cheddar
Chopped chives

Steps:

  • Preheat the oven to 350 degrees. In a pan over medium heat, fry the bacon pieces until crispy. Remove from the pan, but leave some of the bacon grease to sauté the onions. Add the onions and a sprinkle of salt to the pan and cook until softened. Add in the garlic and cook for another minute. Take the pan off the heat. Chop the bacon into bits.
  • In a bowl, combine the cornmeal, flour, sugar, baking powder, and salt. In a separate bowl, whisk the sour cream, butter, and egg until smooth. Then, stir in the corn, cream corn, the onion mixture, half of the bacon. Add in the dry ingredients, and stir until just combined.
  • Pour into a greased casserole dish. Bake for 35 minutes. Remove from the oven and top with the cheese and remaining bacon. Bake for another 5 minutes. Sprinkle chopped chives over the top.

2 pounds ground beef
1 medium green pepper, chopped
3/4 cup chopped onion
1 can (14-3/4 ounces) cream-style corn
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 can (10 ounces) tomatoes with green chilies, undrained
1 can (8 ounces) tomato sauce
1 jar (4-1/2 ounces) whole mushrooms, drained
1 jar (4 ounces) chopped pimientos, drained
1 can (2-1/4 ounces) sliced ripe olives, drained
1-1/2 teaspoons celery salt
1/2 teaspoon ground mustard
1/2 teaspoon chili powder
1/4 teaspoon pepper
8 ounces wide egg noodles, cooked and drained
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef, green pepper and onion over medium heat until meat is no longer pink and vegetables are tender; drain. Stir in the next 11 ingredients. Add noodles. , Pour into a greased 13x9-in. baking dish. Cover and bake 50 minutes. Sprinkle with cheese; bake 10 minutes longer or until cheese is melted.

Creamed corn is one of my favorite comfort food dishes. Here, I've used my recipe for that dish in a different way that's perfect for gatherings with family and friends: a casserole! Boxed corn muffin mix, Cheddar cheese and sour cream are added to my creamed corn and bake up into an irresistible side dish that everyone will love.

Number Of Ingredients 11

Nonstick cooking spray, for the baking dish
8 ears fresh corn, shucked
4 tablespoons unsalted butter
1/4 cup whole milk
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
One 8.5-ounce package cornbread mix, such as Jiffy
One 8-ounce carton sour cream
2 large eggs
One 8-ounce block sharp Cheddar, shredded
2 green onions, thinly sliced, optional

Steps:

  • Preheat the oven to 350 degrees F. Coat a 3-quart baking dish with cooking spray.
  • Cut the corn kernels from the cobs (about 8 cups) and scrape the cobs to remove all the liquid. Melt the butter in a large skillet over medium heat. Add the corn, milk, salt and pepper. Simmer until the corn is softened and the mixture begins to thicken, about 5 minutes. Remove from the heat.
  • Stir together the cornbread mix, sour cream, eggs and half of the cheese in a bowl. Stir in the creamed corn. Pour the mixture into the prepared dish. Sprinkle with the remaining cheese. Bake until the casserole is browned and set, 35 to 40 minutes. Sprinkle with the green onions before serving, if desired.

It is always a huge hit, both as a Thanksgiving dish, but also a great side dish for a summer cookout. 3/4 cup yellow cornmeal
1/3 cup salad oil
2 large eggs, slightly beaten
1 (3 7/8 ounce) can of sliced black olives, drained

1 (4 ounce) can of diced ortega green chilies
2 cups of grated mild cheddar cheese, save 1/2 cup for the top

6 cups fresh corn kernels
Salt and black pepper
1/2 teaspoon ground nutmeg
2 tablespoons vegetable oil
2 cups chopped onions
6 whole eggs, beaten
1 cup milk
2 cups grated aged white cheddar
2 teaspoons oil

Steps:

  • Preheat the oven to 350 degrees F.
  • Carefully remove the corn from the cob with a knife and put in a food processor. Transfer to a large bowl. Coarsely puree with salt, pepper, and nutmeg. In a saute pan, add the oil and the onions and saute until translucent. Add the onions to the corn mixture. Add the beaten eggs, milk and half of the grated Cheddar and combine. Use 2 teaspoons of oil to coat a 13 by 9-inch baking dish. Transfer the corn mixture to the dish and top with the rest of the grated Cheddar. Place the dish in the oven and bake for 30 to 40 minutes or until the top of the casserole is golden brown.

2 tablespoons brown sugar

1 small jar (2 ounces) pimentos, chopped

Steps:

  • Preheat oven to 350 degrees. In a bowl, mix the corn kernels with the flour. Add the remaining ingredients and mix well. Pour into a baking dish and bake for 1 hour.
