BEST EVER CHICKEN AND DUMPLINGS
I got this recipe off of Food Network. It is Tyler Florence's recipe. This is definitely the best chicken and dumplings I have ever had. I have tried other recipes of his and so far they are all delicious. You won't be disappointed in these. It really is easy to make. It only takes a while because of the chicken baking first and then making the chicken stock next.

Steps:
- For the Roasted chicken:.
- Preheat oven to 375°F.
- Remove neck and giblets from cavity of chicken and discard them.
- Rinse the chicken and cavity with cold water inside and out.
- Pat dry with paper towels.
- Season body and cavity of chicken generously with salt and pepper.
- In small bowl mash together the lemon juice, chopped herbs, and butter.
- Rub the herbed butter all over the chicken as well as under the skin.
- Put the lemon halves, onion, garlic, and whole herbs inside the cavity of chicken.
- Tie the chicken legs with twine.
- Roast in oven breast side up for 1 hour or until done and no longer pink.
- Shred the meat when cool enough to handle.
- Discard the skin and SAVE the chicken bones for the stock.
- Chicken Stock:
- Coat a large stockpot with olive oil.
- Place over medium heat.
- Saute the veggies in pot for 3 minutes. Add the reserved chicken bones, herbs, and water.
- Simmer for 1 hour.
- Strain the stock to remove the solids and set aside.
- Dumplings:
- Sift the dry ingredients in a large bowl.
- In a small bowl lightly beat the eggs and milk together.
- Pour the liquid in the dry ingredients and gently fold.
- Mix just until the dough comes together.
- It should be thick and cake like.
- Cover and set aside while making sauce.
- Supreme Sauce:.
- Melt butter and heat the oil over medium heat in dutch oven.
- Add carrots, celery, garlic, and bay leaves.
- Saute until vegetables are soft (about 5 minutes or so).
- Stir in the flour to make a roux.
- Continue to stir and cook for about 2 min to coat the flour and get rid of the starchy taste.
- Slowly stir in chicken stock, one cup at a time.
- Stir well after each addition.
- Let sauce simmer until thick enough to coat back of a spoon, about 15 minute.
- Stir in heavy cream.
- Fold reserved shredded chicken in sauce and bring up to a simmer.
- Add salt and pepper to taste.
- Dumplings:.
- Using 2 spoons, drop by heaping tablespoonfuls into hot mixture.
- The dumplings should cover the top of sauce but not be touching or overcrowded.
- Let the dumplings poach for 10 to 15 minutes until they are firm and puffy.
CHICKEN AND DUMPLINGS, GRANDMA STYLE
You can't get much more comfort food-y than this. No more mushy or yucky dumplings--these are wonderful. Very easy to make, and very delicious to eat!

Steps:
- For the chicken: Heat oil in a large Dutch oven or large covered skillet.
- Add the chicken and brown for 2 minutes on each side.
- Stir in onion and celery, sauté for a few minutes, and add 3 cups of the water, bay leaf, bouillon, salt and pepper.
- Bring to a boil, reduce heat and simmer for 30 minutes, covered.
- Then remove the chicken and add the carrots, cover and simmer until carrots are tender, about 10 minutes.
- While carrots are cooking, remove the chicken from the bones.
- Whisk together the 1/3 cup of flour and the remaining 1/2 cup water until smooth.
- Add flour/water mixture and chicken meat back to the pan, cover and continue to simmer.
- For the dumplings: Combine flour, baking powder, salt and parsley in a large bowl.
- Make a well in the center of the dry ingredients and add the milk, egg and oil.
- Stir quickly to make the batter.
- For each dumpling, spoon a rounded tbsp of batter into the simmering broth.
- Cover and simmer for another 13-15 minutes, but DO NOT STIR.
- Ladle servings into big bowls and eat up!
CHRIS' CHICKEN AND DUMPLINGS
This is a recipe that I have been working on for a long time I hope you enjoy. If you try different variations please let me know how they work. This recipe can be frozen and reheated at a later time.

Steps:
- Place Chicken into large pot of boiling water.
- Add First 8 ingredients and cook over medium heat until chicken is done and tender.
- Remove chicken and cut into bite size pieces.
- Return chicken pieces to pot and add both soups and simmer for 15 minutes.
- In a mixing bowl, add 4 dumpling ingredients and mix well.
- Cut the butter crisco in to flour mixture.
- Add milk and mix well forming a dough ball.
- Use a rolling pin to roll the dough to about 1/8" thick.
- Cut into squares.
- After Chicken mixture has cooked for the 15 minutes stated above -- drop dumplings in one piece at a time.
- Cook over low heat for 15 - 20 minutes until dumplings are done.
- Serve and Enjoy!

- Preheat oven to 325 degrees F. Coat a 2 1/2-quart casserole with cooking spray.
- In a medium bowl, combine milk and oil. Gradually stir in flour, baking powder, and salt.
- Mix well into a dough consistency and set aside.
- Place chicken breasts in bottom of casserole.
- Cover chicken with onion, celery, and carrots. Evenly sprinkle sage and pepper over vegetables; pour broth over dish.
- Using the dough mixture, form 2-inch balls and drop into casserole. Cover tightly and bake for 1 1/2 hours.

My mom made a similar recipe for this comforting dish, and I still remember the wonderful aroma of chicken and dumplings cooking throughout the house. She didn't make it often, but when she did, what a treat. I especially loved the light, tender dumplings, which is still my most favorite part of this dish. (In a pinch, Bisquick dumplings are also very good). For those of you, like my good friend Cindy, who like a more Southern style of dumpling (heavier, chewier), the recipe is at the bottom. Steps:
- Combine chicken, celery, carrots, onion, chicken broth, parsley, chicken bouillon granules, salt and pepper in a large pan or dutch oven; add enough water to cover chicken.

- Remove skin from chicken and tear meat away from bones.

- *SOUTHERN STYLE DUMPLINGS (heavier and chewier) 2 cups flour, 1 cup chicken broth, 2 tsp baking powder, 2 beaten eggs. Combine flour, broth, baking powder and eggs; mix well to form a stiff batter. Drop by tablespoonfuls into simmering soup. Cover and simmer for 15 to 20 minutes.
CALICO CHICKEN AND DUMPLINGS
This stew is definitely in the "comfort foods" category. Grandma made it almost every Sunday for the family dinner. (Grandpa had a chicken farm.) I actually think my version is better. The addition of the frozen vegetables add color and you can add as many as you want to.

Steps:
- Place chicken, celery, onion, parsley, parsnips in a large Dutch oven and cover with water.
- Bring to a boil and lower heat to medium low, just hot enough to maintain a slow simmer.
- When chicken is tender, remove the chicken to a bowl.
- Whisk the flour into about 1/2 cup of the chicken broth from the pot.
- When smooth, return to the pot, stir and heat to thicken.
- Add seasoning salt to your taste.
- When the gravy tastes just right, return the chicken and add the frozen vegetables to the pot.
- Prepare the dumplings: Sift flour, baking powder, and salt together.
- Stir in parsley, chives; thyme and marjoram if you're using them.
- Beat the milk and egg together and add to the dry ingredients.
- Stir with a fork just until mixed.
- Don't beat or handle too much.
- Bring chicken and gravy to a simmer.
- Drop heaping tablespoons of the dumpling batter all over the surface of the stew.
- Replace cover and steam for about 10 minutes.
- If you have more batter than you have room, make a second batch.
- Don't overcrowd the dumplings.
