- Preheat oven to 325°. In a large skillet, cook beef and onion over medium heat until beef is no longer pink, 5-7 minutes, breaking up beef into crumbles; drain. Stir in remaining ingredients. Transfer to a greased 2-qt. cast-iron pan or baking dish. , Bake, uncovered, until the beans are as thick as desired, 45-60 minutes.

SLOW COOKER CALICO BEANS
Calico beans are a satisfying cross between chili, baked beans, and a sloppy joe filling. Full of a homemade barbecue-style sauce, these calico beans are meaty, tangy, salty, and deliciously perfect for any barbecue, picnic, or potluck you are heading to!

- Combine all ingredients in a large slow cooker, and stir gently until combined. Cook on low for at least 4 hours and up to 8 hours.
CALICO BEANS
Calico beans (aka cowboy beans or trucker beans) get their name from the variety of bean colors in the dish. Here we use a trio of canned beans: white navy beans, deep red kidney beans and light brown pork and beans. They're baked with bacon and ground beef in a tangy-sweet sauce until bubbling, resulting in the perfect summer side dish to accompany grilled meats. Calico beans are also great on their own as a main course, topped with shredded cheese and hot sauce.

- Position an oven rack in the middle of the oven and preheat to 325 degrees F.
- Put the bacon in a large skillet and cook over medium heat, stirring occasionally, until crispy, 8 to 10 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate. Pour off all but 1 tablespoon of the bacon fat from the skillet. Add the onion and ground beef and cook, breaking up the beef, until the onion is softened and the beef is crumbled and fully cooked, about 5 minutes. If necessary, drain any excess moisture released from the meat. Add the cooked bacon, kidney beans, navy beans, pork and beans, ketchup, brown sugar, dry mustard, vinegar and salt. Stir together and then transfer to a 9-by-13-inch baking dish.
- Bake until bubbling and caramelized on top, 35 to 40 minutes.

- Preheat oven to 350 degrees F (175 C).
- Place bacon and ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
- In a four quart casserole dish, mix together the bacon, ground beef, pork and beans, kidney beans, butter beans, lima beans, ketchup, onion, vinegar, dry mustard and celery.
- Cover and bake for 1 hour.

BLACK BEANS IN CHIPOTLE ADOBO SAUCE

- Combine the beans, onion, bay leaf and water in a large saucepan. Bring to a boil, then let boil for 1 minute. Lower the heat to medium and simmer, uncovered, for 40 minutes, until the beans are very tender and about half the water has evaporated. Remove the bay leaf and onion before serving.
- While the beans are cooking, prepare the chipotle adobo sauce: In a heavy bottomed skillet over medium heat, saute the onion and garlic in the olive oil until the onion is very soft, 10 to 12 minutes. Stir in the chipotles and adobo sauce, cook for 30 seconds, and remove from heat.
- Allow to cool a few minutes, empty the sauce into a food processor bowl, and briefly pulse until a chunky sauce forms. You may also use an immersion blender to do this. Serve the sauce drizzled over individual servings of beans.

- Place all but the steak in a blender. Puree until smooth.
- Season steaks with salt and pepper. Place in a ziplock bag and pour the sauce over meat.
- Chill for 2 hours.
- Remove meat and simmer sauce till warm.
- Grill steaks to desired doneness.
- Remove meat when done and let sit 10 minutes.
- Add the dripping of the meat to the sauce.
- Slice meat and serve over rice.
- Dollop the sauce over meat.

CALICO BEANS WITH ADOBO SAUCE
Great beef and bean dish for the crock-pot. Goes over well at potluck parties. The chipotle peppers in adobo sauce add a nice background flavor. I found this recipe in one of the many crock-pot cookbooks my husband has. A tip for using chipotle peppers in adobo sauce: open the can, de-seed the peppers and put them, and the sauce, in a food processor. Process and store in the refrigerator for easy use in any dish you'd like.

- Fry hamburger, onion, and garlic until cooked. Drain off grease. Add cooked and crumbled bacon.
- Empty cans of drained and rinsed beans into crock pot. Add meat mixture. Add sauce. Stir. Heat on low for 4 hours. Can also be made on the stove top and simmered to boiling. Serve with bread or rolls.
- This is great re-heated and great for taking to work for lunches.
