CHOCOLATE MINT CAKE MIX COOKIES
Cake mix cookies are easy to make and fun to eat, especially when they are sandwiched around a minty buttercream! These cookies are festive and delicious!

- Preheat the oven to 350 degrees. Line baking sheets with parchment paper and set aside.
- In a bowl, stir together the cake mix, vegetable oil, and eggs until completely combined. Roll the dough into 1-inch balls. Place the balls on the prepared baking sheet.
- Bake the cookies for 8 minutes. Allow the cookies to cool for about 5 minutes before removing to a cooling rack.
- To prepare the frosting, beat the butter in the bowl of a stand mixer until creamy. Slowly beat in the powdered sugar one cup at a time. Add extract and milk, stirring until the buttercream has a spreadable consistency. Stir in the food coloring and fold in the chopped Andes Mints.
- Carefully spread frosting on the bottoms of half of the cookies; top with remaining cookies.

- Using an electric mixer on medium-low speed, beat cream in a large bowl until medium-stiff peaks form. Gently fold in chocolate syrup and peppermint extract. Transfer half of the cream mixture to a medium bowl; cover and chill until ready to use.
- Spread a thin layer of remaining cream mixture on bottom of a platter. Top with 4 ice cream sandwiches, placing 3 side by side and 1 along bottom of row for a square-shaped base, or 4 side by side for a rectangular-shaped base. Top with a thin layer of cream mixture and sprinkle with 1/4 cup cookies. Continue layering sandwiches, cream, and cookies, ending with a layer of cream, until all sandwiches are used (you should have 4 layers; reserve remaining 1/4 cup cookies). Wipe any excess cream off platter, then freeze until set, at least 1 hour or up to overnight.
- Using a spatula, frost top and sides of cake with reserved cream mixture. Sprinkle reserved 1/4 cup cookies over cake. Freeze again 30 minutes, then slice and serve.

- Preheat the oven to 350 degrees F. Coat two baking sheets with cooking spray.
- Beat the cake mix, eggs, butter and 1/4 cup water in a large bowl with an electric mixer on medium speed until smooth and no bits of dry cake mix are left. Stir in the chocolate chips and peppermint extract.
- Drop the batter onto the prepared baking sheets, using about 2 tablespoonfuls for each cookie (a small ice cream scoop will make this task easier) and spacing them about 1 1/2 inches apart. Bake until set around the edges but still soft in the center, about 10 minutes.

- Melt the butter in a pan, leave to cool for a few minutes, then pour into a large bowl. Whisk in both sugars and the egg until combined.
- Use a wooden spoon to mix in the flour and baking powder until the mixture comes together into a dough. Beat in the peppermint extract, then fold in the chocolate chips. Wrap well and chill for 1 hr.
- Heat the oven to 180C/160C fan/gas 4. Divide the cookie dough into 16 pieces (about 45g each), and roll each piece into a ball using your hands. Arrange the dough balls on two baking trays lined with baking parchment, well spaced apart, and press them down slightly. Bake for 10 mins, then remove the trays from the oven and tap sharply on a work surface to flatten the cookies. Return to the oven and repeat this after 2 mins, then again after another 2 mins (they should bake for 14 mins in total). Leave to cool completely on the trays.
- Melt the chopped chocolate in a heatproof bowl over a pan of simmering water, or in 15-second bursts in the microwave, stirring between each burst. Line a baking tray with baking parchment. Dip one half of each cookie into the melted chocolate, place on the lined tray and sprinkle with candy cane pieces. Transfer the tray to the fridge and chill for 30 mins to set.

This is quick and easy! Chilling makes handling these easier. Option for a lemon glazed cookie--all you have to do is in place of the water use the frozen lemon concentrate for a real tart cookie and/or use lemon cake mix. Then mix a bunch of powdered sugar with the frozen lemon contentrate thats at room temperature for a nice tart icing!
