This recipe has overturned a lifetime's prejudice - which is good, but unsettling. I had always been a committed believer that the only true cheesecake was the proper, baked cheesecake, but now I'm not so sure. This improper, unbaked cheesecake, feature of many a 1970s dessert trolley, has entirely won me over. It's light, it has tang, it is rapturously good. The fact that it is speedily easy to make is more reason for general hilarity and joy. Even in the spirit of retro-accuracy, please do not be tempted to open a jar of cherry pie filling over the cake. I use some French cherry concoction that seems to be pretty universally available and has no added sugar, but anything labelled 'conserve' as opposed to 'jam' should be safe. And, if you feel like it, when cherries are in season, rather strew the top with a couple of handfuls of beautiful fruit.

1 1/4 cups graham cracker crumbs
2 tablespoons sugar
3/4 stick soft unsalted butter
10 ounces cream cheese
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/2 teaspoon lemon juice
1 cup heavy cream
1 (10-ounce) jar black cherry spread (recommended: St Dalfour Rhapsodie de Fruit)

Steps:

  • Blitz the biscuits in a food processor until beginning to turn to crumbs, then add the sugar and butter and whiz again to make the mixture clump. If using graham cracker crumbs, you can use a bowl and wooden spoon to mix the butter in, with the sugar added.
  • Press this mixture into a 8-inch springform tin; press a little up the sides to form a slight ridge.
  • Beat together the cream cheese, sugar, vanilla and lemon juice in a bowl until smooth.
  • Lightly whip the cream, and then fold it into the cream cheese mixture.
  • Spoon the cheesecake filling on top of the biscuit base and smooth with a spatula, put it in the refrigerator for 3 hours or overnight.
  • When you are ready to serve the cheesecake, un-mold and spread the black cherry spread over the top.

One 15.25-ounce box devil's food cake mix, such as Duncan Hines
One 3.9-ounce package instant chocolate pudding mix
4 large egg whites
3/4 cup cherry cola, such as Cherry Coke ®
1/2 cup vegetable oil
1/2 cups finely chopped maraschino cherries
5 1/4 cups confectioners' sugar
6 sticks (1 1/2 pounds) unsalted butter, at room temperature
1/4 teaspoon kosher salt
5 tablespoons maraschino cherry liquid plus 1 cup finely chopped maraschino cherries
8 ounces semisweet chocolate, chopped
3/4 cup heavy cream
1 1/2 cups whole maraschino cherries with stems

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Coat two 8-inch round cake pans with cooking spray, then line with parchment and spray the parchment.
  • Combine the cake mix and pudding mix in a stand mixer fitted with the paddle attachment and mix on low speed to blend. With the mixer still running, add the egg whites, cherry cola and vegetable oil and mix until combined. Raise the speed to medium and mix until increased in volume, lighter in color and smooth, about 5 minutes. Fold in the maraschino cherries. Divide the batter between the prepared baking pans; smooth into even layers using an offset spatula.
  • Bake until a skewer inserted in the center comes out clean and the edges pull away from the sides of the pan, about 15 minutes. Transfer to a rack and let cool in the pans, about 10 minutes, then turn out onto racks and let cool completely, about 1 hour.??
  • For the frosting: Mix the confectioners' sugar, butter and salt together in a stand mixer fitted with the whisk attachment. Mix on low speed until well blended, then increase the speed to high and whip until light and fluffy, 3 to 5 minutes. Add the maraschino cherry liquid and continue to whip until bright pink and spreadable. Add the chopped cherries and mix on low speed until evenly distributed.
  • Using a serrated knife and sawing in long, even strokes, carefully halve the cake layers horizontally. Place 1 layer, cut-side up, on a platter or cake stand; spread 1 1/2 cups frosting on top. Stack another cake layer on top and spread another 1 1/2 cups frosting on top. Repeat with the remaining 2 cake layers, then cover the top and sides with a thin layer of frosting (this is the crumb coat) and use a bench scraper or large offset spatula to smooth out the sides and top (it's okay if some cake shows through). Refrigerate 15 minutes, then add another 1/2-inch layer of frosting to the top of the cake and smooth out to make a perfectly flat top. Refrigerate until ready to cover with ganache.
  • For the ganache: Meanwhile, place the chocolate in a heatproof bowl and heat the cream in a small saucepan over medium-high heat until beginning to boil. Pour the cream over the chocolate and let sit, stirring occasionally, until the mixture is completely smooth and the chocolate is melted, about 5 minutes. Let cool 30 minutes, then pour over the chilled cake so that the top is completely coated and chocolate drips decoratively down the sides. Let set at room temperature 30 minutes, then top with the whole cherries in the center of the cake and serve.

12 digestive biscuits , crushed
50g melted butter
50g caster sugar
300g light soft cheese
2 eggs
50g caster sugar
400g can red or black cherry pie filling (we used Hartley's)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Combine the crushed biscuits with the melted butter and sugar, then press onto the base and sides of a 20cm springform tin. Chill.
  • Blend the cheese, eggs and sugar until smooth, pour into the case and bake for 30 mins or until set. Cool for 30 mins, then top with the cherry pie filling. Serve chilled.

Steps:

  • Step 1 Preheat oven to 300 degrees. Spray a 9 x 13 pan with non-stick cooking spray and set aside. Step 2 Measure out 1 cup of cake mix and set aside. Step 3 In a large bowl, combine the remaining cake mix, 1 egg, and canola oil. Stir until moist and crumbly. Step 4 Press the mixture into the prepared 9 x 13 pan covering the bottom and ¾ up the sides of the pan. Step 5 In a mixing bowl, beat together cream cheese and sugar until fluffy. Then beat in the remaining 3 eggs one at a time. Add the reserved 1 cup of cake mix to the cream cheese mixure and beat for 1 minute Step 6 Once combined, slowly mix in the milk, lemon juice and vanilla to the cream cheese mixture until combined and smooth. 1 prepared graham cracker crust (I use Keebler)
2 (8 ounce) packages cream cheese
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1 can cherry pie filling (I use Comstock)

Steps:

  • Preheat oven to 350 degrees.
  • Place the cream cheese in a bowl in the microwave.
  • Microwave it on the defrost setting for a couple of minutes to slightly soften the cream cheese (This is so that you don't kill your mixer when beating the cream cheese).
  • Add sugar to cream cheese and beat it with an electric mixer until smooth.
  • Add eggs and vanilla and blend until smooth.
  • Pour into ready made crust.
  • Bake at 350 degrees for 25 to 30 minutes.
  • Note: The cheesecake is done when the sides are puffed- The center will not be as puffed- It will be possible to jiggle the center slightly but it will not be runny.
  • Let cool.
  • Top with cherry pie filling and chill.

  • Preheat oven to 350 degrees and line a 10x15x1" rimmed baking sheet with parchment paper. Grease lightly (optional - it will climb higher if you leave ungreased)
  • Prepare angel food cake mix according to package directions and spread into prepared pan. Bake for 20 minutes or until light golden brown. It will rise up and even above the edge of the pan but will not overflow.
  • Lay a clean lint-free kitchen towel on the counter and dust with 1/4 cup powdered sugar. Flip hot cake out onto the prepared towel and immediately roll up starting at the short end, with the towel inside.
  • Set aside to cool to room temperature, placing in the fridge or freezer if you want to speed up the process.
  • To make the filling, beat cream cheese in a large bowl until smooth. Add 3/4 cup powdered sugar, cream and vanilla and beat until thick and stiff peaks form. This can take some time, up to 5 minutes.
  • Make sure that it is completely cool and then unroll the cake. Spread with 3/4 of the cream cheese filling, and then spread with 3/4 of the cherry pie filling.
  • Carefully roll back up (no towel this time!), starting at the short end. Cover roll with remaining cream cheese frosting and cherry pie filling. Refrigerate at least 4 hours before slicing for clean slices.

Steps:

  • Preheat oven to 325F and grease the sides of a 9″ springform pan.
  • Mix the cracker crumbs and melted butter together in a small bowl. Press into the bottom of the springform pan. Bake for 10 minutes and set aside to cool.
  • Meanwhile, in a large bowl, beat the cream cheese and sugar together until combined.
  • Add in the eggs, one at a time, mixing well in between on low speed.

4 cups fresh cherries stems removed (pitted and halved)
1/2 cup water
2/3 cup sugar
Juice from one lemon
3 tablespoons cornstarch
1 1/4 tablespoons butter (melted, divided)
1 1/4 cup raw pistachios
9 graham crackers (about 1 sleeve)
pinch coarse kosher salt
4 (8-ounce) cream cheese packages cream cheese (softened to room temperature)
1/4 teaspoon vanilla extract
zest of 1 lemon (divided)
1 1/4 cups sugar
1 cup fresh cherry sauce (recipe follows)
4 eggs
3 tablespoons all purpose flour (regular and gluten free flour both work in this recipe.)
2 cups fresh cherries ( pitted and halved)
1 1/2 tablespoons sugar
zest and juice of 1 lemon (divided)
1/3 cup fresh cherry sauce (recipe follows, plus more for serving)

Steps:

  • Add the halved, pitted cherries to a saucepan, stir in the water, sugar, lemon juice, and cornstarch. Bring the mixture just to a boil over medium heat, as soon as you see the first bubbles form and start to pop, reduce the heat to a low simmer and cook for 10 minutes, stirring frequently. Using the back of the spoon to break up the cherries as it cooks.
  • Once thickened remove the cherry sauce from the heat and let it cool to room temperature. Blend until smooth. The filling can be made up to 3 days in advance and stored in the refrigerator until you are ready to make the cheesecake
  • Preheat the oven to 350°F and brush the walls and the base of a 9-inch springform pan with 1/4 tablespoon of the melted butter.
  • Add the pistachios to the bowl of a food processor and pulse 10-12 times until coarse crumbs are formed. Remove 1/4 cup of the pistachio crumbs and set aside.
  • Add the graham crackers to the food processor and process until the mixture has reached the consistency of fine crumbs. Slowly stream in the remianing melted butter with the food processor running. Stop to scrape sides if necessary, set aside.
  • Sprinkle the reserved 1/4 cup pistachio crumbs into the prepared pan. Tilt and roll the pan until the sides of the springform pan are coated in pistachio crumbs. Press the mixture in the food processor into the bottom of the pan to form the crust.
  • Bake for 10 minutes. Remove from the oven and cool completley while preparing the filling.
  • In the bowl of a stand mixer add the softened cream cheese, vanilla, lemon zest, and sugar. Beat until light and fluffy, about 2 to 3 minutes.
  • Add the cherry sauce and beat until incorporated.
  • Beat in the eggs, 1 at a time, then add the flour. Beat until incorporated. Pour the filling onto the crust in the prepared pan and smooth the top.
  • Place the filled springform pan inside of the 8x8 baking dish and place both pans in the oven. Before closing the oven door, carefully fill the pan 1/3 of the way up the sides of the springform pan with very hot water.
  • Bake until the center of the cheesecake moves slightly when the pan is gently shaken, about 1 hour and 20 minutes.

1 ½ cups milk
3 Tbsp lemon juice
1 Tbsp vanilla
2 (21 oz) cans Lucky Leaf Cherry Pie Filling

Steps:

  • Preheat oven to 300 degrees. Spray a 9 x13 pan with non-stick cooking spray. Set aside.
  • Measure out 1 cup of cake mix and set aside.
  • In a large bowl, combine the remaining cake mix, 1 egg, and canola oil. Stir until most and crumbly.
  • Press the mixture into the prepared 9 x 13 pan covering the bottom and ¾ up the sides of the pan.
  • In a mixing bowl, beat together cream cheese and sugar until fluffy. Then beat in the remaining 3 eggs one at a time.
  • Add the reserved 1 cup of cake mix to the cream cheese mixture and beat for 1 minute.
  • Once combined slowly mix in the milk, lemon juice and vanilla to the cream cheese mixture until combined and smooth.
  • Pour the mixture into the prepared crust.
  • Bake at 300 for 45-55 minutes until the center is set. It will still wiggle a little but will be more like set gelatin.
  • Allow cheesecake to cool completely and then refrigerate for at least 1 hour.
  • To serve, cut into squares and top with pie filling. Serves 20.

2 tablespoons vegetable oil
2 (8 ounce) packages cream cheese, softened

1 (21 ounce) can cherry pie filling

Steps:

  • Stir together the remaining cake mix, (not the 1 cup reserved) 1 egg, and 2 T oil.
  • Press this mixture into 9x13 cake pan on bottom and up the side 3/4 to top.
  • Blend cheese and sugar.
  • Add 3 eggs and reserved 1 cup of cake mix.
  • Beat 1 minute at medium speed.
  • Gradually add milk, juice, and vanilla. Mix until smooth.
  • Pour into the crust.
  • Bake at 300°F for 45 to 55 minutes.
  • COOL, when cool, top with cherry pie filling.

For the base
400g dark chocolate digestive biscuits
3 tbsp cocoa powder
160g unsalted butter, melted
Oil for greasing
For the filling
560g full-fat cream cheese (we like Philadelphia)
100g mascarpone
200g caster sugar
90ml soured cream
3 large free-range eggs
1 tsp vanilla bean paste
50g plain flour
For the topping
390g jar Opies black cherries with kirsch (from Tesco and Waitrose)
2 tbsp caster sugar
Splash amaretto, rum or kirsch
You'll also need
20cm loose-bottomed cake tin

Steps:

  • To make the base, whizz the biscuits and cocoa in a food processor until very finely ground. Whizz in the melted butter, then tip into a lightly oiled 20cm loose-bottomed cake tin. With your fingertips or a metal spoon, smooth it evenly over the base and up the sides to form a tart case. Chill for 30 minutes. Heat the oven to 160°C/140°C fan/gas 3.
  • To make the filling, whip the cream cheese, mascarpone, 200g sugar and soured cream together with an electric mixer until smooth. Beat in the eggs one at a time, then quickly beat in the vanilla paste. Sift over the flour, then fold it in with a balloon whisk.
  • Spoon the filling into the tart, smoothing the top (it shouldn't come above the sides of the tart). Bake for 50-60 minutes until set and lightly golden - it should still wobble in the centre when you nudge it. Remove from the oven and leave to cool completely (see Make Ahead).
  • To make the topping, drain the cherries, reserving the liquid. Put the liquid in a saucepan with the 2 tbsp sugar. Heat to simmering and reduce for 15-20 minutes until syrupy (remove a spoonful and let it cool for a few minutes to check the consistency). Allow to cool, then stir through your booze of choice. Taste for balance, then stir the cherries back in. Just before serving, top the cheesecake with the cherries.

Steps:

  • Preheat oven to 350 degrees.
  • Spray inside of glass or ceramic 9×13 Casserole Dish with non-stick cooking spray
  • Empty cans of Cherry Pie Filling into bottom of baking dish, and spread out evenly.
  • Scoop dollops of Cream Cheese on top Cherry Pie Filling. I did 20 dollops as shown in the picture.
  • In medium mixing bowl, combine dry Cake Mix and melted Butter, and stir until crumbly. {break up any large chunks into small crumbles with spoon}.
  • Pour Cake/Butter crumble mixture over Cherry/Cream Cheese layer in baking dish, and spread out evenly.
  • Bake for 30 minutes, or until sides are hot and bubbly.
  • Top with Whip Cream or a scoop of Vanilla Ice Cream. ENJOY!!
