500 grams Chicken , chopped to bite size
Oil , to cook
2 Onions , roughly chopped
2 Green Chillies
3 Tomatoes , deseeded
2 teaspoons Ginger Garlic Paste
1 tablespoon Curd (Dahi / Yogurt)
1/2 Lemon , juiced
1 tablespoon Chicken masala
Salt , to taste
Coriander (Dhania) Leaves , chopped, to garnish

Steps:

  • To begin making Chicken In Tomato Onion Gravy Recipe, take onions, green chillies and tomatoes (de seeded) in a mixer jar and grind to a smooth paste.
  • In a pressure cooker, add the onion-chilli and tomato paste, curd, salt, chicken masala powder, lemon juice and ginger garlic paste. Stir to combine.
  • Add the chicken pieces and about half cup of water and close the lid of the pressure cooker and cook on high flame for about 3 whistles or till the chicken is cooked till tender.
  • Once the pressure is released on its own, heat a bit of oil in a kadai and once the oil is hot, transfer the gravy of the cooked chicken from the pressure cooker. Retain the cooked chicken in the pressure cooker. you may do this by refraining the chicken with a slotted spoon while pouring the gravy.
  • Cook for a few minutes while stirring, till the gravy starts bubbling and thickening.
  • Once the gravy is thickened to desired consistency, add the chicken pieces to the kadai, close a lid and cook on a low flame for about 5 minutes or till the flavours seep in a bit more in the chicken pieces.
  • Garnish with chopped coriander leaves and serv.

Mama made countless batches of biscuits and tomato gravy in her lifetime. I'm sure she learned to make this from her mother: Carmen Inez Shirley. This is the dish that puts my feet back under my mama's table. Serve with love over hot buttermilk biscuits along with bacon or sausage for breakfast, brunch, lunch or dinner.

2 large tomatoes , peeled, cored, and chopped
1 cup chicken stock , low sodium or unsalted
1/4 cup bacon drippings or butter or a combination
1/4 cup all-purpose flour
1/2 to 1 cup milk or cream, water, or more broth
Optional: 2 to 3 tablespoons tomato paste, or to taste
1 dash kosher salt
1 dash freshly ground black pepper, to taste
Garnish: fresh parsley, chopped

Steps:

  • Gather the ingredients.
  • Put the chopped tomatoes in a saucepan with 1 cup of the chicken stock. Place the saucepan over medium-high heat and bring to a boil.
  • Reduce the heat to low and continue to simmer the tomatoes while you prepare the roux.
  • Put the bacon drippings or butter in a medium saucepan and place it over medium-low heat.
  • When the fat has melted and the foaming subsides, add the flour.
  • Cook, whisking constantly until the roux is just light brown. It should be about the color of peanut butter. Don't let it burn.
  • Remove the pan from the heat and gradually stir in the simmering tomato and broth mixture.
  • Return the tomato mixture to the heat and stir in 1/4 cup of milk, cream, water, or stock.
  • Whisk in tomato paste, if using, along with kosher salt and freshly ground black pepper. Cook, stirring until hot and bubbling. If too thick, add more liquid (milk, cream, water or stock) as needed.
  • Garnish the sauce with a sprinkling of chopped fresh parsley and serve.

1 -2 leftover pork spareribs
1/4 cup extra virgin olive oil
2 large onions, chopped
4 garlic cloves, crushed
1 lb italian sweet sausage
2 (28 ounce) cans crushed tomatoes
2 teaspoons dried oregano
2 tablespoons sugar
1/2 cup parmesan cheese
4 tablespoons dried parsley flakes
2 bay leaves
2 tablespoons dried basil
1 (4 ounce) can tomato paste
1/2 cup red wine (Lambrusco)

Steps:

  • In a large dutch oven, saute the onions in the oil until tender. Add the garlic and saute about 30 seconds, stirring often. Take pot off burner so garlic won't cook further. Add in oregano, parsley, bay leaves, basil, and tomato paste. Put the pot back on the burner. Mix ingredients well and stir constantly for about 1-2 minutes. Add tomatoes, sugar, spareribs, Parmesan, and wine. Stir well and take it back off the burner.
  • Poke several holes in each of the Italian sausages. Cook the sausages in microwave until they are halfway done. Take out of microwave and discard grease. Cut each sausage in half. Drop the sausages into the pot of tomato gravy. Stir a little.
  • Put the pot back on the burner. (**Add the braciole if you made them.) Cook slowly with a lid partly on for 1 1/2 hours. Check it often. Stir as needed. You may add a little water if it gets too thick for your taste.
  • (You may also add meatballs if you made them.).

1 package of giblets and neck from a turkey
1 teaspoon vegetable oil, or to taste
2 tablespoons minced green bell pepper
2 cups water
1 (14 ounce) can turkey broth
2 tablespoons cornstarch
1 tablespoon all-purpose flour
½ cup cooked turkey, cut into small cubes
2 teaspoons milk
2 teaspoons distilled white vinegar
1 teaspoon white sugar
1 teaspoon salt
½ teaspoon coarsely ground black pepper
¼ teaspoon cayenne pepper
⅛ teaspoon garlic powder
⅛ teaspoon onion powder
1 pinch dried parsley flakes

Steps:

  • Place giblets and neck in a saucepan with enough water to cover by 2 inches; bring to a boil, reduce heat to low, and simmer until cooked through, 30 to 45 minutes. Transfer giblets and neck to a cutting board.
  • Finely mince heart, liver, and gizzard meat; reserve 1/3 cup minced meat. Remove meat from neck and finely mince. Mash neck meat in a mortar with a pestle.
  • Heat oil in large saucepan over medium-high heat. Saute green bell pepper in hot oil until fragrant and slightly softened, about 1 minute. Pour water and broth into saucepan. Immediately whisk cornstarch and flour into broth mixture until smooth.
  • Stir minced meat, mashed neck meat, cubed turkey, milk, vinegar, sugar, salt, black pepper, cayenne pepper, garlic powder, onion powder, and dried parsley flakes into broth mixture; bring to a boil, reduce heat to low, and simmer, whisking occasionally, until gravy is thick, 30 to 35 minutes.
