CAJUN SPICED TOFU

Steps:
- Add all the ingredients of the Cajun Seasoning to a mixing bowl and mix well
- Add the Flour, Chickpea Brine to their own bowls
- Place each strip of tofu into the Flour to cover them
- Then take the floured tofu strips and soak them in the chick pea brine
- After that, place the wet tofu into the cajun seasoning and cover well
- Drizzle olive oil over a hot frying pan on high heat
- Fry each strip of cajun seasoned tofu and flip when crispy on the underside
CAJUN TOFU

- In a shallow dish (I used an 8x8 baking pan), combine the olive oil, soy sauce, maple syrup, and cajun seasoning.
- Add the tofu and turn each piece over to coat it in the marinade. Arrange the tofu in a single layer and let marinate at least 15 minutes, turning once.
- Preheat the oven to 400ºF. Line a baking sheet with parchment or aluminum foil.
- Transfer the tofu to the prepared baking sheet making sure you leave room between each piece so they're not touching. Bake 45-60 minutes, turning once, or until browned and crisp on the outside.

CAJUN TOFU
This was inspired by a recent trip to New Orleans. I wanted something vegetarian, but with Cajun taste & this is what I came up with. It's easy enough for a weeknight dinner, but tastes like you've been cooking a while. You can serve it over rice, pasta or, if you want to be really southern, grits.

Steps:
- Mix the first 9 ingredients to make a spice mix. Set aside.
- Heat butter and olive oil in a large pot.
- Add onion and saute until starting to brown.
- Add garlic and 3 Tbsp of the spice mix.
- Stir and cook a couple minutes.
- Add pepper and celery and cook a couple more minutes.
- Add tomato sauce, bay leaf and tofu.
- Mix well.
- Bring to a boil and then simmer 10 minute.
- Add hot sauce to taste.

BARBECUE TOFU WITH CAJUN RICE

- Heat 1 tablespoon olive oil in a saucepan over medium heat. Add the onion and celery; cook, stirring, until softened, 4 minutes. Add the garlic and cook 1 minute. Add the rice and Cajun seasoning and cook, stirring, until lightly toasted, about 1 minute. Increase the heat to medium high; stir in 2 cups water and 3/4 teaspoon salt. Bring to a simmer, then reduce the heat to low; cover and cook until tender, about 15 minutes. Uncover and set aside.
- Wrap the tofu in paper towels and set on a plate. Weigh down with a bowl; let drain 10 minutes. Cut in half lengthwise, then slice 1/2 inch thick.
- Heat a large nonstick skillet over medium-high heat. Add 1 tablespoon olive oil, the bell peppers, and salt and pepper to taste. Cook, stirring, until the peppers start browning, 4 minutes; transfer to a plate.
- Add the remaining 1 tablespoon olive oil and the tofu to the skillet in a single layer. Cook until browned, about 4 minutes per side. Stir in the bell peppers, barbecue sauce and scallions. Stir the parsley into the rice; top with the tofu.

- In a plastic bag or in a bowl, crush up all of the corn flakes, until they are in nearly uniform small flakes. Then put them in a large bowl and set aside.

- Drain the package of tofu and wrap the tofu block around a layer of paper towels. Press the tofu by placing it between 2 large plates. Weigh down the top plate with something heavy, like a bag of flour. Let the tofu sit for 15 to 20 minutes.
- In a medium bowl, mix 1 1/2 tablespoons of olive oil, soy sauce, honey, cajun spice powder, garlic powder (if using) and salt. Rub the tofu with the marinade. Let the tofu sit for at least 15 minutes or cover the bowl and marinade the tofu overnight in the refrigerator.
- Heat a grill pan over medium-high heat. Drizzle about 1 to 1 1/2 tablespoons of olive oil over the grill pan. Add the tofu slices on top of the pan. Arrange them so that the tofu slice are laid diagonally, along the 2 and 8 ‘o clock position or 4 and 10 ‘o clock position. Cook the tofu until you see grill marks on the tofu, about 2 to 3 minutes. Flip the tofu over and repeat on the other side.

- Press the tofu (wrap in paper towel, then kitchen towel and place a couple of heavy books on it for 15 minutes or use a tofu press). Then slice into 1/4 inch thick slices. Preheat the oven to 350 degrees F.
- Mix the cajun spices with lime juice, olive oil and salt to make a paste. Rub the cajun paste on the tofu and let it chill for at least 15 mins (to an hour) to pick up the flavor. * See Note.. - Drain the liquid from the tofu package and dry the tofu with paper towels. Cut into about 1-inch slices.
- Put the slices onto 2-3 paper towels and season them with Cajun seasoning and salt. Flip and season again.
- Place 2 more paper towels on top of the tofu slices and press gently with your hands. This way, you’ll remove any excess moisture and press the seasonings into the tofu.

- Squeeze any excess water out of the tofu, if you use extra firm tofu there may only be a tiny bit. Use a tofu press or wrap in kitchen towel, place on a chopping board and place heavy books on top for 20 mins.
