SARA'S SPINACH PIE

3 tablespoons olive oil, more as needed
2 large yellow onions, finely chopped
Sea salt
2 pounds fresh spinach, washed and thoroughly dried
Vegetable oil or nonstick spray, for oiling pan
1 pound feta cheese, rinsed in cool water, then crumbled
12 ounces ricotta cheese, drained
5 ounces (about 2 cups) finely grated Parmigiano-Reggiano
5 large eggs, lightly beaten
Freshly ground black pepper
1 to 2 tablespoons finely chopped fresh dill, or to taste

Steps:

  • In a large skillet over low heat, heat olive oil. Add onions and pinch of salt, and sauté until soft and beginning to turn golden, 30 to 40 minutes. Transfer to a large mixing bowl.
  • Return pan to medium heat. Working in batches and adding oil 1 tablespoon at a time as needed, sauté spinach until wilted, then transfer to a bowl. Coarsely chop cooked spinach, then squeeze hard to remove as much excess liquid as possible.
  • Preheat oven to 325 degrees. Lightly oil a shallow 9-by-13-inch baking dish and set aside. In a large bowl, combine feta, ricotta, Parmigiano-Reggiano, eggs and a generous amount of pepper. Mix well. Add spinach and onions and mix thoroughly. Add dill, and toss to blend. Spoon into baking dish, pat down evenly and drizzle lightly with olive oil.
  • Bake pie for 30 minutes. Raise heat to 350 degrees and bake until lightly firm in center and golden on top, about 20 more minutes. If top begins to brown too much, cover lightly with foil. To serve, allow pie to cool slightly before cutting into squares. It may also be served cold.

This is a quick and flavorful way to prepare spinach during a busy weeknight. It goes great with a homestyle meal or when making something lite and healthy. Regular butter or whole milk can be substituted. I use whipped butter and low-fat milk to reduce saturated fat. Fresh spinach may be used, although I recommend frozen, but will need to be boiled until tender, finely chopped, and dried very well. Double the sauce ingredients to make a slightly creamy texture. Recipe makes 2 regular or 3 small servings. Hope you like it.

1 (16 ounce) package frozen chopped spinach, thawed and drained
3 eggs
1 ½ cups heavy cream
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon ground nutmeg
½ cup shredded Swiss cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9 inch pie pan with non-stick cooking spray.
  • Melt 2 tablespoons butter in a large saucepan over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Squeeze extra water out of the spinach and add the spinach to the skillet. Continue cooking until the spinach is heated through and the extra water evaporates. Spoon mixture into pie pan.
  • In a large bowl, beat together eggs and cream. Stir in salt, pepper and nutmeg. Pour into pie pan, top with shredded Swiss cheese. dot with remaining 1 tablespoon of butter.
  • Bake 25 to 30 minutes until set and golden brown. Cool 5 minutes before serving.

2 tablespoons good olive oil
2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
3 (10-ounce) packages frozen chopped spinach, defrosted
6 extra-large eggs, beaten
2 teaspoons grated nutmeg
1/2 cup freshly grated Parmesan cheese
3 tablespoons plain dry bread crumbs
1/2 pound good feta, cut into 1/2-inch cubes
1/2 cup pignoli (pine nuts)
1/4 pound salted butter, melted
6 sheets phyllo dough, defrosted

Steps:

  • Preheat the oven to 375 degrees. In a medium saute pan on medium heat, saute the onions with the olive oil until translucent and slightly browned, 10 to 15 minutes. Add the salt and pepper and allow to cool slightly. Squeeze out and discard as much of the liquid from the spinach as possible. Put the spinach into a bowl and then gently mix in the onions, eggs, nutmeg, Parmesan cheese, bread crumbs, feta, and pignoli. Butter an ovenproof, nonstick, 8-inch saute pan and line it with 6 stacked sheets of phyllo dough, brushing each with melted butter and letting the edges hang over the pan. Pour the spinach mixture into the middle of the phyllo and neatly fold the edges up and over the top to seal in the filling. Brush the top well with melted butter. Bake for 1 hour, until the top is golden brown and the filling is set. Remove from the oven and allow to cool completely. Serve at room temperature.

I love making this. It's such a nice winter meal, and it's so easy and quick, and best of all..so economical!! Growing up, Mum made shepherds pie almost weekly. Over the years I have altered it, and this is the way my family enjoys it now. We don't serve this with anything, except maybe a nice bread roll.

500 g ground beef
1 medium onion, finely chopped
1 medium carrot, grated
1 tablespoon olive oil
2 tablespoons gravy mix
1 garlic clove, crushed
1 teaspoon cracked black pepper
1 teaspoon mixed herbs
6 potatoes
2 tablespoons butter
1/4 cup milk
2 eggs
1/2 cup cheese, grated

Steps:

  • Heat olive oil in a large saucepan. Cook onions untiil tender, add beef and carrots.
  • Stir in gravy powder, garlic, pepper, and herbs.
  • Add enough water to just cover the meat mixture, stir, cover, and simmer until thickened, stirring occasionally.
  • Remove from heat, and set aside to cool.
  • Boil the potatoes until tender. Drain, and mashe with butter and milk.
  • Using electric beaters, beat eggs into potato until creamy.
  • Pour the meat mixture into a casserole dish.
  • Top with mashed potatoes. You can spoon the potatoes on, or if you want a nicer presentation and you have the time, pipe on with a piping bag.
  • Top with grated cheese, and bake at 180C for around 30 minutes, or until cheese has melted and just started to brown.

2 cans (14.5 oz. each) diced tomatoes, undrained, divided

2 Tbsp. tomato paste
1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Chive & Onion Cream Cheese Spread
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained

Steps:

  • Heat oven to 375°F.
  • Cook potatoes in boiling water in large saucepan 20 min. or until tender.
  • Meanwhile, drain 1 can tomatoes; discard drained liquid. Brown meat with onions and celery in large skillet on medium-high heat; drain. Return meat mixture to skillet; stir in tomato paste. Add both cans tomatoes; mix well. Cook on medium-low heat 15 min. or until sauce is thickened, stirring occasionally. Spoon into 8-inch square dish sprayed with cooking spray.
  • Drain potatoes; return to pan. Add cream cheese spread; mash until cream cheese is melted and potatoes are desired consistency. Stir in spinach. Spoon over meat mixture in dish.

2 yellow onions, diced
5 bunches scallions, chopped
1 cup chopped fresh dill
1 teaspoon ground nutmeg
1 teaspoon black pepper
1/2 teaspoon salt
6 pounds spinach, chopped
4 pounds feta cheese, crumbled
7 large eggs
2 pounds phyllo dough
2 pounds butter, melted

Steps:

  • Preheat the oven to 325 degrees F.
  • To a large pot, add the olive oil and saute the onions until browned. Add the scallions, dill, nutmeg, black pepper and salt.
  • Boil the chopped spinach until blanched and still bright green, stirring occasionally. Mix it together with the ingredients in the pot. Add the crumbled feta cheese and the eggs, making sure that the mixture is slightly cool so the eggs don't scramble. Mix well.
  • Brush 1 pound of the phyllo dough with melted butter, piece by piece, layering in a large enough tray to fit the phyllo sheets. Then add the spinach mixture on top and, piece by piece, layer and brush the rest of the phyllo on top. Mark the pieces with a knife and make sure the ends are tucked in, then sprinkle with a little water.
  • Bake for 45 minutes, or until golden brown.

1 tsp rapeseed oil, plus a drop for the tins
450g wholemeal spelt flour
7g sachet fast-action dried yeast
2 tsp rapeseed oil
2 onions (320g), halved and thinly sliced
320g chestnut mushrooms, thinly sliced
4 garlic cloves, finely grated
1 tsp vegetable bouillon powder
500g baby spinach
200g ricotta
2 tbsp thyme leaves
2 tbsp tomato purée mixed with 3 tbsp water
20g vegetarian Italian-style hard cheese, finely grated
few basil leaves, to serve

Steps:

  • Heat the oven to 220C/200C fan/gas 7 and oil two 21cm loose-based shallow sandwich tins. To make the dough, tip the flour into a bowl and stir in the yeast. Pour in the 1 tsp oil and 280ml warm water, then bring together, first with a cutlery knife, then your hands, to make a soft, pliable dough. Add 20ml more water if needed. Cut into quarters and cover with a tea towel.
  • For the filling, heat the oil in a medium pan over a medium heat and fry the onions for 5 mins until they start to colour and soften. Add the mushrooms and garlic, and continue to cook, stirring frequently until cooked through. Stir in the bouillon powder and spinach, cook until wilted, then add the ricotta and thyme.
  • Take a piece of dough and roll it out so that it lines one of the sandwich tins with just a little bit of overhang. (Try not to add any extra flour when rolling if you can.) Spoon in half the filling, spread it out with the back of the spoon, then roll another piece of dough so that it fits snugly inside the tin. Fold over the overhang so that the filling is completely enclosed, then spread over half the tomato purée mixture and scatter with half the cheese. Repeat with the rest of the dough, filling and topping to make two pies, then put in a warm place for about 20 mins to prove. Bake for 15-20 mins until golden, then leave to cool in the tin for 5 mins before serving with a few leaves of basil scattered over. If you're following the Healthy Diet Plan, serve one pie between two people straightaway. Leave the other pie to cool. Will then keep chilled for up to three days. Reheat in the oven at 200C/180C fan/gas 6 for about 12-15 mins.
