- Heat the butter, olive oil and garlic in a large skillet over medium-high heat until fragrant, about 1 minute. Add the Cajun seasoning and shrimp and cook, stirring, until the shrimp begin to curl, about 1 minute. Season with salt and pepper.
- Add the tomatoes and scallions to the skillet and cook, stirring, about 1 minute. Add the rice and 1/4 cup water and continue to cook until the rice is warmed through and the shrimp are opaque, about 3 more minutes. Stir in the parsley and serve with lemon, if desired.

- -Place the corn kernels in a saucepan and cover with water. Bring to a boil, then drain and rinse with cold water. Set aside to cool.
- In a bowl, mix the cajun seasoning and the shrimp. Over medium heat, put the olive oil in a large skillet. When it's hot, add the shrimp, garlic and red pepper flakes. Cook the shrimp 2 minutes on each side. Remove from the pan to cool.
- To make the dressing, just combine the lime juice, vinegar, olive oil and chile powder with a small whisk.
- Place all salad ingredients in a large bowl and pour the dressing over. Toss gently and taste to see if it needs anything (salt, pepper, lime -- ).
- You can serve it at room temperature, or chilled. Or even slighly warm, I would imagine. It's just delicious, as well as easy and quick!

- In a large pot, over high heat, saute onion in the olive oil for 2 minutes, stirring constantly.
- Add in the celery and red and green bell peppers; stir and saute for 2 minutes.
- Add in the garlic, crushed red pepper flakes, oregano, basil, and marjoram; stir to mix.
- Reduce the heat, cover, and cook for 2 minutes.
- Add in the clam juice, tomatoes, and wine.
- Cover and simmer for 15 minutes.

Steps:
- Cook pasta until al dente.
- Finely mince olives.
- Combine oil and garlic in a heavy pan, heating over low heat until golden in color.
- Add red pepper flakes, olives and parsley.
- Stir constantly, cooking just until parsley wilts.
- Remove from heat.
- Before draining pasta, dip out 1 cup of the water.
- Drain pasta and transfer the noodles to your serving bowl.
- Toss in your olive sauce.
- Use a little of the cooking water that you saved to "wash" the remaining sauce out of the pan. Toss the water/sauce mix into the pasta.
- Add more cooking water if your pasta seems dry.
- Top with grated cheese.
