CAJUN CABBAGE JAMBALAYA
This Cajun Cabbage Jambalaya made in a skillet is wonderful and easy! Perfect to make on a busy night and the flavors are great.

Steps:
- Brown pork sausage, smoked sausage, onion, green pepper, celery and garlic in skillet until sausage is done.
- Stir in diced tomatoes, chicken broth, cabbage. Add salt, black pepper and Cajun seasoning along with rice and set simmer uncovered for 35 to 40 minutes until rice and cabbage is cooked. Makes about 8 servings.
EASY SAUSAGE & CABBAGE SKILLET

Steps:
- Heat 1 tablespoon of olive oil in a large skillet (I use my 12" for this recipe) over medium-high heat. Once the oil is hot, add sliced sausage. Sautè, flipping sausage frequently, for 1 to 2 minutes or until sausage slices have some browning. Remove from pan and set aside.
- Add remaining 1 1/2 tablespoons of oil to skillet with the garlic. Sauté for 1 minute or until garlic starts to get that golden color.
- Add shredded cabbage, salt, pepper, and crushed red pepper flakes (optional). Stir. Let cook, stirring occasionally, until cabbage is close to tender, about 10 minutes.
- Add sausage back to pan and stir until combined with cabbage. Cook for another 3 to 5 minutes until sausage is warmed and cabbage is tender. Taste and add more salt if desired.

CAJUN CABBAGE
We love this dish at our house, and whenever I take it to a potluck, it disappears just as quickly as it does at home. This pleasing recipe was given to me by my sister-in-law from Louisiana. I've made some changes in the ingredients, but the snappy Cajun flavor is still there. It's easy to increase for any number of guests.

- In a large Dutch oven, brown ground beef. Add onions and green pepper; cook until the onions are transparent. Add the rice, tomatoes, tomato sauce, water and seasonings. Cover and bake at 375° for 50-60 minutes or until the cabbage is tender.
