CAJUN CHICKEN SAUSAGE ALFREDO

kosher salt
1 lb. penne
2 tbsp. extra-virgin olive oil
1 red bell pepper, thinly sliced
2 chicken breasts, cut into 1" pieces
2 Andouille sausage, sliced into 1/2" pieces
Freshly ground black pepper
1 tbsp. Cajun seasoning
1 16-oz. jar RAGÚ Classic Alfredo Sauce
2 green onions, thinly sliced

Steps:

  • In a large pot of salted boiling water, cook penne according to package directions until al dente. Drain and set aside.
  • In a large skillet over medium heat, heat oil. Add red pepper and cook until slightly softened, about 5 minutes. Add chicken and cook until golden and cooked through, 6 to 8 minutes. Stir in sausage and cook until warmed through, about 2 minutes more. Season with salt, pepper and Cajun seasoning, then stir in RAGÚ Classic Alfredo Sauce.
  • Bring sauce to a simmer and stir in cooked pasta to coat. Remove from heat and garnish with green onions.

  • Prepare pasta according to package directions; drain and set aside.
  • Saute sausage in a large skillet over medium-high heat for 5 minutes, turning occasionally.
  • Add cream and Cajun seasoning; bring to a boil. Reduce heat; simmer gently for 3-4 minutes or until mixture begins to thicken.
  • Remove from heat, stir in Parmesan cheese. Add pasta to sauce and toss.

1 teaspoon olive oil
1 pound smoked sausage
1 clove garlic
1 small onion
2 bell peppers
2 teaspoons Cajun seasoning
1 pint heavy cream
1/2 cup shredded parmesan.
1/4 teaspoon cayenne pepper, optional

Steps:

  • Cook and drain the pasta according to the instructions on the package. Meanwhile, slice the onion, bell peppers, and smoked sausage into bite sized pieces.
  • Over medium-high heat, cook the sausage, garlic, onions and peppers in the olive oil for 5-6 minutes. or until the sausage is browned and the vegetables have softened.
  • Add the Cajun seasoning and cream. Simmer for 4-5 minutes until the sauce begins to thicken.
  • Add the parmesan and cooked pasta to the sauce. Heat through until the cheese has melted. Serve immediately.

4 scallions, chopped

Steps:

  • Bring a large pot of salted water to a boil. Cook the fettuccine according to package directions.

1 ¼ cups heavy cream
2 cups dried penne pasta
