1 egg
3 tablespoons Hidden Valley® Original Ranch® Dressing
1 14-ounce can pink salmon
2 ounces smoked salmon
⅓ cup almond flour
2 tablespoons fresh parsley
1 teaspoon Cajun seasoning
2 tablespoons avocado oil
2 teaspoons lime juice
2 tablespoons cilantro

Steps:

  • In a medium bowl, beat together the egg and dressing. Add the canned and smoked salmon, almond flour, parsley, Cajun seasoning, lime juice, and cilantro; gently stir to combine.
  • Form mixture into eight 2½ inch patties. Heat oil in a nonstick skillet over medium heat, and working in batches cook the patties until golden brown and cooked through, about 2 minutes per side.
  • Transfer cooked patties to a paper-towel lined plate and keep warm. Serve with more dressing and lemon wedges, if desired.

14 oz can pink salmon, drained with bones removed
2 oz smoked salmon (nova or lox style), roughly chopped
1 egg
3 Tbsp Hidden Valley Ranch Cilantro Lime dressing
1/3 cup almond flour
2 Tbsp fresh parsley, chopped
1 tsp cajun seasoning
2 Tbsp avocado oil (or light olive oil) for frying

Steps:

  • Beat the egg and Cilantro Lime dressing in a medium bowl.
  • Add the salmon, almond flour, parsley and cajun seasoning and stir gently until combined.
  • Form into eight 2.5 inch patties.
  • Heat the oil in a non-stick saute pan over medium heat.
  • Cook the patties (4 at a time) for about 2 minutes per side (or until golden brown.)
  • Remove cooked patties to a paper-towel lined plate and keep warm until serving.
  • Serve with Hidden Valley Ranch Cilantro Lime dressing and wedges of lemon if desired.

2 ounces potato chips, crumbled well

  • Heat skillet on Med.-high heat, with oil.
  • mix all the rest of ingredients together very well, patty, and throw on skillet. cook on each side 5-10 minutes, or until it is browned and firm.
  • remove, serve, and enjoy, I like mine with a horseradish sauce.

14 3/4 ounces salmon, drained
1/2 cup pork rind (finely ground)
1/4 cup minced onion
2 teaspoons lemon juice
2 teaspoons parsley flakes
1 minced garlic clove
2 large beaten eggs
3 tablespoons mayonnaise

Steps:

  • Mix all ingredients and refrigerate for 1/2 hour -(optional, but they handle easier).
  • Make into 4 patties and cook until browned on either side turning once.
  • I make a double batch and freeze part of it in flattened patties in zipper bags, and just thaw in the microwave, then fry.
  • Also good as a sauce on them: mix 1 part blue cheese dressing to 1 part horsy mustard, or Jack Daniels mustard, or some kind of flavored mustard -- it is yummy!

8 ounces salmon fillets
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons cajun spices
2 teaspoons oregano
oil, to brush the pan

Steps:

  • Brush a little oil in a frying pan and preheat the pan.
  • Combine the spices for the salmon in a small bowl.
  • Turn the salmon fillets in the spices, covering all sides.
  • Place the salmon fillets (skin side under) in the hot frying pan.
  • Fry for 4 minutes before turning over and frying for another 3 minutes or until done.
  • Serve with mashed potatoes and spinach.
