Cajun Nuts roasted in a bacon grease/garlic mixture are a great way to spice up snack time and go great with a cold beer.

2 tablespoons bacon grease
2 cloves garlic, (minced)
2 cups unsalted peanuts
1 cup unsalted cashews
1 cup whole unsalted almonds
1 cup pecan halves
1/2 tablespoon Cajun seasoning
1 teaspoon salt
2 teaspoons sugar
1 teaspoon black pepper
1/4 cup Lawry's seasoned salt
1 tablespoon onion powder
1 tablespoon paprika
1/2 tablespoon cayenne pepper
1/2 tablespoon garlic powder
1 teaspoon ground white pepper
1 teaspoon black pepper
1/2 teaspoon dry mustard
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme

Steps:

  • Preheat oven to 200 degrees.
  • In a small bowl, combine all ingredients for Cajun seasoning. (You will only use 1/2 tablespoon of this mixture. Save the rest for other uses.)
  • In a small pan heat bacon grease over low heat. Add garlic and cook for 2 to 3 minutes.
  • Place nuts in a large bowl.
  • Drizzle bacon fat/garlic over nuts and toss to coat.
  • Sprinkle 1/2 tablespoon of cajun seasoning, salt, sugar, and black pepper over nuts. Toss to coat evenly.
  • Pour nuts onto a large baking sheet and place in oven for 45 minutes, stirring every 15 minutes.

These roasted nuts are the perfect blend of salty, sweet, and spicy. Super delicious snack mix that only takes 30 mins to make!

1 cup cashews
1 cup almonds
1 cup pecans
1 cup brazil nuts
1 tbsp + 1 tsp cajun spice
1/2 tsp dried thyme
1 tsp sea salt
1 tbsp avocado oil
2 tbsp maple syrup

Steps:

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • Spread the cashews, almonds, pecans, brazil nuts on the baking sheet, drizzle with the avocado oil, maple syrup, and toss to coat.
  • Sprinkle with the cajun spice, dried thyme, and sea salt. Toss well to coat evenly.
  • Roast in the preheated oven for 20-30 minutes. The skin on the brazil nuts will start cracking when done. Keep an eye on the pecans so they don't burn. Toss once halfway through.
  • Cool on the baking sheet and transfer to an airtight container when completely cool. Store at room temperature for 2-3 weeks.

You'll keep going back for these nuts with Cajun seasoning and a bit of sugar and salt.

Vegetable oil, for the baking sheet
3 tablespoons sugar
1 tablespoon Cajun seasoning
2 cups salted mixed nuts

Steps:

  • Preheat the oven to 250 degrees F. Lightly oil a rimmed baking sheet.
  • Whisk together the sugar, Cajun seasoning and egg white in a medium bowl until thoroughly blended and slightly foamy. Add the nuts and toss to coat evenly. Spread on the prepared baking sheet and bake for 45 minutes, stirring every 15 minutes. Nuts will be fragrant and slightly darker but still a bit moist; they?ll crisp as they cool.
  • Cool completely on the pan. Nuts will keep in an airtight container for up to 5 days.
