FRIED CAJUN CHICKEN TENDERS
Chicken tenders with a kick! Breaded just right and full of flavor that's better than anything from a box.

Steps:
- In a large, shallow bowl or dish with sides, add the flour, cajun seasoning, onion and garlic powders. Stir to mix. Taste it to see if you want more spice. Add more if you do, but don't taste it once you've dipped any raw chicken in it. Set aside.
- In a second bowl, beat the eggs, hot sauce and water. Set aside.
- Dip one chicken tender at a time into the flour then the eggs, and then back into the flour, pressing to coat the chicken well. Repeat with the remaining tenders and set them aside while you heat the oil. Allow the chicken to rest 3 or 4 minutes before frying so the breading can "set".
- If using a 12 inch skillet, pour oil to a depth of 2 inches and heat on high to 375 (you can use a thermometer to check if you aren't sure). Slowly add three to four pieces of chicken, reduce heat to medium high, and allow them to fry until just brown on one side--about 5 minutes--then turn and cook until golden on the second side--6 to 7 minutes more. Transfer to a paper towel lined plate to drain and repeat with the other tenders. **Make sure to stay by the stove! If your oil starts to smoke, turn the heat down or pull the skillet off the burner carefully for a minute or two. If your chicken is cooking too slow and the breading is soggy or falling off, turn the heat up.

- Put hot sauce in gallon size ziplock bag with chicken and let sit in fridge for up to 2 hours.
- Mix all dry ingredients in another ziplock bag.
- Heat oil in frying pan to medium high, depending on your stove.
- Put chicken from hot sauce into dry ingredients bag and shake to coat.
- Fry until juices run clear (about 20 minutes or so).

CRISPY CHICKEN STRIPS

- Submerge the chicken strips in the buttermilk for 15 to 20 minutes (or longer if you'd like).
- In another bowl, combine the flour and seasoning salt (or other seasonings if you prefer). Mix this together well. Next, gradually drizzle 1/4 to 1/2 cup of the buttermilk into the flour mixture and stir lightly with a fork as you add it to achieve clumps.
- Heat about 1 inch vegetable oil in a large skillet over medium-low to medium heat.
- Remove a few of the buttermilk-soaked chicken strips and place them in the flour mixture, turning them over to coat thoroughly. Place them on a plate. Continue coating the chicken strips until they are all ready to cook.
- When the oil is sufficiently heated, begin cooking the strips a few at a time. Cook them for about a minute and a half or so on each side. When golden and crispy and the chicken is done, remove them to a paper-towel-lined plate. Do not allow them to burn.
- Serve with your favorite dipping sauce. Yum!
CAJUN BAKED CHICKEN STRIPS
These chicken strips have plain bread crumbs as well as panko bread crumbs for a nice breading.

- Preheat the oven to 350 degrees F (175 degrees C). Spray an 8x11-inch baking pan with cooking spray.
- Mix panko and plain bread crumbs together in a shallow bowl. Add Creole seasoning and pepper; mix thoroughly. Beat eggs in another bowl.
- Cover tenderloins in flour, then dip in egg mixture, following with a heavy coating of bread crumb mixture. Place the breaded chicken pieces in the greased pan.
- Bake in the preheated oven until golden and no longer pink in the centers, about 20 minutes, turning chicken pieces halfway through. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Combine flour, salt, and pepper in a medium bowl. Mix eggs and water together in a small bowl.
- Place some chicken strips in the flour mixture to coat, then gently shake to remove any excess flour. Coat strips in egg. Return to the flour mixture and coat again; repeat with egg mixture. Coat once more in the flour mixture, placing strips on a plate while you continue with remaining chicken.
- Let strips sit for 5 minutes to allow flour to set.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C); oil is ready if you drop some water in and it sizzles.
- Working in batches if needed, place strips in the hot oil. Cook for 8 minutes.
