1 cup all-purpose flour
1 cup cornmeal
1 teaspoon cayenne pepper
2 tablespoons sugar
1 (16-ounce) ice cold beer
2 tablespoon honey
Peanut oil
6 (6-ounce) cod fillets
Salt and freshly ground black pepper
Tartar Sauce, recipe follows
1 1/2 cups mayonnaise
2 tablespoons hot pepper relish, jarred
1/2 lemon, juiced
1 tablespoon freshly chopped parsley leaves
Pinch cayenne pepper
1 teaspoon salt
1/2 teaspoon freshly ground black pepper

Steps:

  • In a large bowl, add flour, cornmeal, cayenne and sugar and mix together. Whisk in cold beer and honey until well incorporated and free of lumps.
  • Preheat deep-fryer to 375 degrees F. with peanut oil.
  • Season cod with salt and pepper and dredge in batter. Allow excess batter to drip off and place gently into the deep-fryer. Fry for 6 to 8 minutes until golden, crisp and delicious. Drain on paper towels. Place cod on a large serving platter or individual places and serve with Tartar Sauce.
  • In a small bowl, mix all ingredients together.

- oil for deep frying
SAUCE
1/2 cup(s) miracle whip
2 tablespoon(s) creole brown mustard
2 tablespoon(s) honey
1 teaspoon(s) worcestershire sauce

Steps:

  • Mix the flour, cornmeal, baking soda, salt, cajun seasoning and beer together.
  • Dredge the fillets in the beer mixture and deep fry at 350 degrees until golden brown about 4 minutes.
  • Mix the ingredients for sauce together and serve with fish.

1/2 cup all-purpose flour
1/2 cup milk
1 egg
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon paprika

1/2 cup yellow cornmeal
1/2 cup vegetable oil

Steps:

  • in 9" pie pan stir together all ingredients except cornmeal, fish and oil.
  • on waxed paper place cornmeal, dip fish into batter, then coat both sides of fish with cornmeal.
  • in 10" skittle heat oil until hot.
  • place 3 or 4 fish fillets in hot oil.
  • cook over med heat until golden brown.

½ teaspoon salt

1 pound cod fillets
2 cups crushed cornflake crumbs
1 teaspoon Cajun seasoning
1 quart oil for frying

Steps:

  • In a medium bowl, beat together egg, beer, flour, garlic powder, salt, and pepper. Place cod in the bowl, and thoroughly coat with the mixture.

2 pounds fish fillets
3 eggs (slightly beaten)
1/2 cup milk
1/2 cup beer
3 tablespoons mustard
1/2 to 1 teaspoon Tabasco sauce
1 cup all-purpose flour
2 tablespoons salt (divided)
2 teaspoons black pepper (divided)
1/2 to 1 teaspoon cayenne pepper (divided, or to taste)
3 cups corn flour (fine yellow)
Vegetable oil (for frying)

Steps:

  • In a mixing bowl, whisk together eggs, milk, beer, mustard, Tabasco, and half of the salt and peppers.
  • Put the all-purpose flour in a plate or wide, shallow bowl.
  • In another bowl, combine the remaining salt and black pepper with cayenne pepper, and the corn flour; stir to blend thoroughly.
  • Cut fish fillets into bite-sized chunks or nuggets. Drop several chunks in the all-purpose flour and then put them in the egg mixture to coat.
  • Drop the fish into the corn flour mixture, turning to coat thoroughly.
  • Place the coated fish on a rack to dry slightly.
  • Preheat oil in deep fryer to about 370 F.
  • Working in small batches, fry the fish nuggets until they are golden brown and float to the surface, about 3 to 5 minutes. Take care not to overcook.
  • With a slotted metal spoon, remove the fish nuggets to paper towels to drain. Pat them gently with paper towels to soak up any excess oil.

½ cup water

1 pound catfish fillets, cut in strips
1 ½ cups fine cornmeal
½ cup all-purpose flour
1 teaspoon seafood seasoning, such as Old Bay™
1 quart vegetable oil for deep frying

Steps:

  • In a small bowl, mix buttermilk, water, salt, and pepper. Pour mixture into a flat pan large enough to hold the fillets. Spread fish in one layer over bottom of pan, turning to coat each side, and set aside to marinate.
  • In a 2 gallon resealable plastic bag, combine the cornmeal, flour, and seafood seasoning. Add fish to mixture, a few fillets at a time, and tumble gently to coat evenly.
  • Heat oil in deep fryer to 365 degrees F (185 degrees C).
  • Deep fry fillets until golden brown, about 3 minutes. Avoid overcrowding so fillets have room to brown properly. Fish should be slightly crisp outside, and moist and flaky inside. Drain on paper towels.
