CAJUN CORN SALAD

Cajun Corn Salad image

This corn salad is made with grilled corn, bell peppers, onion and Cajun spices, creating a sweet and spicy flavor pallet.

Provided by Lyuba Brooke

Categories     Salad

Time 35m

Number Of Ingredients 14

5 ears of corn (in husk)
1/4 cup melted butter (salted)
1 medium red bell pepper
1 medium orange bell pepper
1/3 cup minced red onion
3 Tbsp grapeseed oil
3 Tbsp minced fresh parsley
Salt
1/4 to 1/2 tsp cayenne pepper (adjust according to your heat tolerance)
1/2 tsp paprika
1 1/2 tsp dry garlic granules (or powder)
1 tsp dry onion granules (or powder)
2 tsp dry thyme
2 tsp dry oregano

Steps:

  • Cut off tops from the bell peppers and take out the seeds. Mince both red and orange bell peppers and add them to the mixing bowl. Mince red onion and parsley and add it to the bowl too. Add spices.
  • To grill corn:
  • Prepare your charcoal until it's ashed over. Move it to one half of the grill so that you have a cooler grill side and a hotter grill side. Make sure the grate is clean.
  • Snip the silk whiskers sticking out of the top of the corn husk but leave the rest of the corn in a husk. Lay it on the grill, with the bottom of the husk towards the cooler side of the grill. Close the grill and cook for 13-15 minutes, turning it every 3-4 minutes.
  • Take corn off the grill and carefully, using tongues, take off the husk and the silk. Brush corn with melted butter and place back on the grill. Close the grill and cook, turning it every 3-4 minutes, until lightly charred on all sides.
  • Take corn off the grill and cut the corn kernel off the cobs. Add corn kernel to the mixing bowl with prepared veggies.
  • Mix well.
  • Add grapeseed oil and mix everything until evenly incorporated.
  • (**I recommend using grapeseed oil because of its smooth, mild flavor. It's beautiful in salads.)

SPICY FRESH CORN SALAD

I was gifted some Cajun-flavored mayonnaise and wasn't sure what to do with it until I spotted fresh corn at the grocery store. I thought the sweetness of the corn would contrast nicely with the spicy mayonnaise, and I was right! Serve with grilled or fried shrimp, or with any summery chicken dish.

CAJUN CORN MAQUE CHOUX

Cajun Corn Maque Choux image

This classic creamy side dish takes advantage of both the sweetness and the starchiness of fresh corn. The trinity of onions, bell peppers and celery gives it a distinctive Cajun flavor, while the tomatoes add brightness. Although usually a side dish, it sometimes takes center stage with the addition of shrimp or crawfish.

Provided by Food Network

Categories     side-dish

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 11

4 ears fresh corn
4 strips bacon, diced
2 tablespoons unsalted butter
2 stalks celery, diced
1 green bell pepper, diced
1/2 large onion, diced
Kosher salt and freshly ground black pepper
1/2 cup milk
5 scallions, white and green parts, sliced (reserve the sliced green parts for garnish)
2 cloves garlic, minced
2 plum tomatoes, seeded and diced

Steps:

  • 1. Cut the kernels off of the corn into a large bowl. Using the back of the knife, scrape the sweet corn milk from the cobs to extract about 3 tablespoons and add it to the bowl. Set aside.
  • 2. Cook the bacon in a large skillet over medium heat until the fat renders and the bacon is crisp. Remove with a slotted spoon to a paper-towel-lined plate and set aside. Add the butter to the skillet and when melted, add the celery, bell peppers and onions. Season with salt and pepper and cook until the vegetables are soft, about 15 minutes. Add the milk, scallion whites, garlic, tomatoes and corn. Cook until thickened, 10 minutes.
  • 3. Serve garnished with the scallion greens and reserved bacon.

CHARRED CORN, CHICKEN & TORTILLA SALAD WITH CHIPOTLE YOGURT DRESSING

Charred corn, chicken & tortilla salad with chipotle yogurt dressing image

Try this vibrant salad with or without the chicken. If you're serving it as a side to kebabs or sausages, swap it out for some crumbled feta, if you have it

Provided by Cassie Best

Categories     Dinner, Lunch, Side dish

Time 55m

Yield Serves 4-6

Number Of Ingredients 17

1 tbsp smoked paprika , plus ½ tsp
1 tsp dried oregano
1 tbsp chipotle paste , plus 1 tsp
½ tsp cinnamon
2 garlic cloves , crushed
2 limes , 1 zested and juiced, 1 cut into wedges to serve
3 tbsp olive oil , plus extra for brushing and frying
6 boneless, skinless chicken thighs
150g natural yogurt
2 tsp honey
2 corns on the cob , husks removed if needed
2 Little Gem lettuces , halved through the core, leaves pulled apart and torn
400g can black beans , drained, rinsed and drained again
200g cherry tomatoes , halved
2 avocados , stoned, peeled, halved and cut into chunks
2 corn tortilla wraps
small bunch of coriander , leaves picked and roughly chopped

Steps:

  • Mix 1 tbsp paprika, the oregano, 1 tbsp chipotle, cinnamon, garlic, lime zest and 2 tbsp oil together in a bowl with some seasoning. Pour over the chicken thighs, turning to coat, then cover and chill for at least a few hours, or up to 24 hrs.
  • Light the barbecue and let the flames die down, or heat a griddle pan over a high heat. Mix the yogurt, lime juice, the remaining oil, ½ tsp paprika, 1 tsp chipotle and the honey with a pinch of salt. Set aside. Brush the corn cobs with a little oil, then cook it and the marinated chicken on the barbecue or in the griddle pan for about 10 mins, turning often until the chicken is cooked through (it should be charred and firm to the touch - check it's done by cutting into one of the thickest pieces) and the corn is bright yellow and juicy.
  • Transfer the chicken and corn to a board or plate and cover to keep warm. Arrange the lettuce, beans, tomatoes and avocado on a large platter or in a serving bowl, but wait to toss together until just before serving - this helps keep the lettuce leaves from wilting.
  • Cut the wraps into strips or small pieces. Heat a drizzle of oil in a frying pan and fry the strips until crisp and golden, then drain on kitchen paper. Sprinkle with salt.
  • Slice the cooked chicken into 1cm strips and cut the charred corn from the cob. Add to the salad, then drizzle over the dressing and any juice from the chicken and toss. Scatter over the coriander and crispy tortilla strips, and serve with the lime wedges on the side.
