CAJUN BLACKENED FISH {+ VIDEO}
"Blackening" is a classic Cajun cooking technique which involves searing spice coated seafood and meats in a hot skillet so the rub turns black (but not burnt). I think the black crust and white juicy flesh inside looks so stunning! I served this with a simple Corn Butter Rice Salad - refer to the Notes for the recipe. - Combine Spice Mix in a shallow dish and mix.
- Coat both sides of the fish fillets with the Spice Mix, shaking off excess.
- Heat oil in a large heavy based skillet over medium high heat.
- Add fish and cook until the rub turns black, then flip and cook the other side until the fish is cooked to your taste. (Note 2)
- Serve immediately. I served mine with a buttery Corn Rice Salad - refer to the Notes for the recipe.

BLACKENED BALSAMIC TUNA STEAKS
This easy recipe for Blackened Balsamic Tuna Steaks has it all! With blackened seasoning and a balsamic vinaigrette, the tuna is super-flavorful. Prep and cooking are a breeze!

- Pat dry the ahi tuna steaks with paper towels.
- Place the steaks in a large plastic zip top bag.
- In a small mixing bowl whisk together the balsamic vinegar, olive oil, honey, and salt; remove half of the sauce/marinade and transfer it to a small serving bowl. Set it aside.
- Pour the rest of the marinade into the plastic bag with the tuna.
- Close the bag and massage the liquid around to coat the tuna steaks. Let stand 10 minutes. (You can also refrigerate overnight.)
- In the meantime, in a small bowl combine the paprika, cayenne pepper, garlic powder, thyme, oregano, salt, and pepper.
- Sprinkle all sides of the tuna steaks with the seasoning mix, pressing down to adhere.
- Heat a cast iron skillet over medium-high heat until smoking hot.
- Add 2 tablespoons vegetable oil to the hot skillet.
- Place the tuna steaks in the pan; cook for about 2 minutes per side, for medium rare.
- Transfer the tuna steaks to a cutting board and let rest for 3 to 5 minutes.
- Thinly slice the tuna and serve with the reserved sauce.

BLACKENED TUNA BITES WITH CAJUN MUSTARD
This can be served as a dinner or an appetizer. It is positively amazing. This is my own creation inspired by my favorite dish at a local NJ restaurant. I hope you like it as much as I do.

Steps:
- Make the mustard first: Mix all ingredients in a small saucepan.
- Bring to a boil, stirring often.
- When somewhat smooth, it's done.
- Now start the tuna: TUNA Cut up tuna in large bite size pieces Coat with blackening seasoning Heat oil in pan till very hot, but not smoking Sear tuna on all sides for about 7-10 minutes total.
- Do not overcook.
- It's good for the tuna to be slightly pink on the inside.
- Serve right away with Cajun Mustard.
- This can also be made with peeled jumbo shrimp.

BLACKENED TUNA STEAKS
My favorite way to eat tuna, but the spice mix works well with blackened chicken or other types of firm fish.

Steps:
- Preheat oven to 400 deg.
- Mix first 7 ingredients in small bowl.
- Place steaks on baking sheet, brush on both sides with 1 T. oil. Sprinkle top of each with seasoning.
- Heat heavy large skillet over high heat until very hot. Add remaining 1 T. oil; swirl to coat.
- Place steaks seasoning side down in skillet. Cook until very brown on bottom (about 1 min) return steaks, browned side up to baking sheet.
- Place in oven; bake until done (about 8 min).
