12 to 16 ounces Andouille or spicy sausage , thinly sliced
1 large onion, diced
2 ribs celery , diced
2 cloves garlic, minced
1 small red bell pepper, diced, about 1/2 cup
2 tablespoons diced jalapeno peppers
4 cups beef broth
2 cans (15 ounces each) black beans, drained and rinsed
1 can (14.5 ounces) diced tomatoes with juice
2 tablespoons lemon juice
1/4 teaspoon dried leaf thyme
1 teaspoon Cajun seasoning
Salt, to taste
1/4 teaspoon pepper

Steps:

  • Gather the ingredients.
  • Heat olive oil in a large saucepan or Dutch oven . Add the sausage and cook over medium heat until browned.
  • Add onion, celery, red bell pepper, and jalapeno peppers to the pan and sauté for about 3 minutes, or until tender.
  • Add garlic and sauté for 1 minute longer.
  • Add the beef broth, beans, tomatoes, lemon juice, and remaining seasonings. Bring to a boil.
  • Cover, reduce heat to low and simmer for about 45 minutes.
  • Serve with freshly baked cornbread or crusty rolls.

2 tbsp vegetable oil
8 sausages of your choice
1 large onion (red or white), finely chopped
2 peppers (red, orange or yellow, or a mixture), sliced
3 garlic cloves, crushed
1 tbsp smoked paprika
1 tsp ground coriander
1 tsp ground cumin
1 heaped tbsp chipotle paste (optional)
400g chopped tomatoes
2 tbsp ketchup
400g can black beans, drained
handful of coriander, leaves picked, to serve (optional)
grated cheddar, natural yogurt or soured cream, and tortilla chips, jacket potatoes or rice, to serve

Steps:

  • Heat half the oil in a large pan and cook the sausages for 12-15 mins over a medium heat until brown all over and cooked through. Remove to a plate.
  • Drizzle the rest of the oil into the pan and cook the onion and peppers for 10 mins, over a low heat stirring often until all the veg has softened.
  • Stir in the garlic, all the spices and the chipotle paste, if using, and cook for another minute. Add the tomatoes, a canful of water, the ketchup and some seasoning. Bring to a simmer and cook for 20 mins half-covered with a lid or loosely covered with foil. Stir occasionally, topping up with water if the mixture starts to look too thick.
  • Slice the cooked sausages into thick coins and return to the pan, then tip in the beans. Cook for another few minutes until heated through, then spoon into bowls and scatter with coriander leaves, if using, some grated cheese and a dollop of yogurt or soured cream. Serve with tortilla chips for scooping, as a filling for jacket potatoes, or over rice.

14 ounces dried black beans, medium sized bag, soak and drained twice
1 large onion, chopped
2 celery ribs, chopped
1 teaspoon fresh cilantro
1 1/2 teaspoons dried chipotle powder
1 teaspoon onion powder
1 tablespoon instant minced garlic or 3 fresh garlic cloves
1 1/2 teaspoons cumin
2 bay leaves
kosher salt
1 lime, juice of
1/2 teaspoon lime rind
12 ounces chicken stock, canned ok
2 -3 smoked ham hocks
1 lb cajun sausage

Steps:

  • Cook sausage with 1/2 cup water in large heavy bottomed pot that the beans will be cooked in, allow water to dissipate and sausage to brown until you have a good fond going on in the pan. Once you have a good caramelized pan, remove the sausage allow to cool and fridge them.
  • Drain grease and replace with tablespoon of a light flavored oil and saute/brown your onion - salt, add celery - salt, all spices and saute till translucent - avoid burning your fond! Add stock to deglaze pan.
  • Add ham hocks (note: These tend to shed bone shards, avoid stirring once these are in the mix. Remove them after cooking is complete and pull the meat off the bone on a separate plate. Add the meat back into the mix).
  • Add beans.
  • Add enough water to just cover beans/ham hocks bring the party to a boil then reduce heat and cook until beans are soft. I used a pressure cooker, the whole meal was done in 30 minutes -- with that said, only allow pressure to get it's initial burst of steam then bring down the heat to a low simmer -- beans can foam up and clog your cooker - always monitor this process.).
  • While awaiting the beans to soften, prep lime and the lime rind, cut sausage into bite size chunks - taste sausage for heat and adjust to your preference. consider some cayenne to the mix. The Chipotle pepper does provide a subtle heat that will make your forhead sweat but no significant affect to the tongue.
  • Once the beans are cooked, add remaining ingredients and simmer another 10 minutes. I like my beans a bit soupy so I choose not to thicken it. To help thicken the dish, food process 1/3 of the beans into a paste then reincorperate them.
  • Serve over rice, perhaps corn bread or fried plantains.
  • Garnish

This came out really good, and could be made with or without the meat; just cut the broth by half if not using the beef. Serve as a one-pot main dish, or as a side dish with grilled or roasted meats. I made it with black beans, but I'm sure red beans would be good as well. Either way, this is good old 'stick to your ribs' comfort food in my book. NOTE: I pre-cook my rice and freeze it, so having prepared rice on hand is a time-saver.

1 large white onion, fine dice

  • Pick (remove any bad peas) and wash peas.
