Crunchy and amazing fish. I used Freshly caught Big Mouth Bass and it was so moist inside.

6 white fish fillets i used bass
1 c cornmeal
1/3 c flour
1/2 can(s) beer i used coors lite
1 Tbsp cajun seasoning
pinch of salt
oil for deep frying

Steps:

  • 1. Whisk together the cornmeal, flour, Cajun Seasoning, salt, and beer.
  • 2. Bring the oil to 350 degrees. Dip the fish into the cornmeal mixture.
  • 3. Fry for 5 to 7 minutes

These fried fish fillets are battered with a Cajun-style beer batter and a dash of Tabasco and some cayenne pepper add extra flavor and heat.

2 pounds fish fillets
3 eggs (slightly beaten)
1/2 cup milk
1/2 cup beer
3 tablespoons mustard
1/2 to 1 teaspoon Tabasco sauce
1 cup all-purpose flour
2 tablespoons salt (divided)
2 teaspoons black pepper (divided)
1/2 to 1 teaspoon cayenne pepper (divided, or to taste)
3 cups corn flour (fine yellow)
Vegetable oil (for frying)

Steps:

  • In a mixing bowl, whisk together eggs, milk, beer, mustard, Tabasco, and half of the salt and peppers.
  • Put the all-purpose flour in a plate or wide, shallow bowl.
  • In another bowl, combine the remaining salt and black pepper with cayenne pepper, and the corn flour; stir to blend thoroughly.
  • Cut fish fillets into bite-sized chunks or nuggets. Drop several chunks in the all-purpose flour and then put them in the egg mixture to coat.
  • Drop the fish into the corn flour mixture, turning to coat thoroughly.
  • Place the coated fish on a rack to dry slightly.
  • Preheat oil in deep fryer to about 370 F.
  • Working in small batches, fry the fish nuggets until they are golden brown and float to the surface, about 3 to 5 minutes. Take care not to overcook.
  • With a slotted metal spoon, remove the fish nuggets to paper towels to drain. Pat them gently with paper towels to soak up any excess oil.

1/2 cup unsifted all-purpose flour
1/2 cup cornstarch
2 tablespoons cajun seasoning
1 tablespoon garlic powder
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon paprika
1/2 teaspoon white pepper
1/2 teaspoon ground red pepper
1/2 teaspoon dried oregano leaves, crushed
3/4 cup beer, room temperature
1 egg, lightly beaten
1 lb catfish fillet, cut into 3- to 4-inch wide strips
vegetable oil (for frying)

Steps:

  • In a medium bowl, combine flour, cornstarch, Cajun seasoning, garlic powder, salt, baking powder, paprika, peppers, and oregano.
  • Whisk in beer and egg until smooth. Add catfish. Cover and refrigerate for 1 to 2 hours.
  • In a deep skillet or large pan, pour vegetable oil to a 3-inch depth. Heat oil to medium-high heat on stovetop.
  • When oil is hot, lift fish strips with tongs to drain excess batter. Fry catfish in oil, several pieces at a time (being careful not to overcrowd), for approximately 3 minutes per batch, or until well browned on all sides.
  • Drain on paper towels.
  • Repeat with remaining catfish, keeping cooked fish warm until ready to serve.

1/2-1 teaspoon tabasco sauce
2 tablespoons salt, divided
2 teaspoons pepper, divided
1/2-1 teaspoon cayenne pepper
3 cups fine yellow corn flour
vegetable oil for frying
COCKTAIL SAUCE
1/2 cup chili sauce
1/2 cup ketchup
2 tablespoons fresh lemon juice
1-2 tablespoon prepared horseradish
dash Worcestershire sauce
few drop hot sauce
salt to taste

Steps:

  • In a mixing bowl, whisk together eggs, milk, beer, mustard, Tabasco, and half of the salt and peppers. Cut fish fillets into bite sized pieces, or nuggets. Place fish in egg mixture, coating well cover, refrigerate, and let soak for about 1 hour. Mix corn flour with the remaining salt and peppers in a shallow, wide bowl or pie plate. Preheat oil in deep fryer to about 370°F. Remove fish from mixture and dredge with corn flour mixture. Fry fish until the fish nuggets float to the surface and turn golden brown, taking care not to overcook. Place fish nuggets on paper towels to drain, patting gently with paper towels to blot up excess oil. Use this batter to fry shrimp, oysters, and other shellfish. Serves 4*If you can't find corn flour, we suggest processing cornmeal in the blender or food processor to make it finer.

DH loves to fish, and when he brings home a "catch", this is the first recipe we go to, of coarse I have to quick grab the 1/2 cup of beer before he gets to it. You can add or delete the seasonings as your taste sees fit,Soaking in buttermilk, is the key to kicking the "fishy" taste, but this is an optional step. The original recipe comes from Ryan Newman. Prep time does not include chill time.

  • Soak fillets in 1/2 teaspoons salt and 1/3 cup buttermilk or milk (optional step).
  • COOKING:.
  • When ready to cook, in a deep skillet, heat oil (about 3" deep) to 375 degrees.
  • Allow fillets to drip dry then lightly dab them with a paper towel to insure they are not wet, dip fillets in batter, lift strips with tongs, draining excess batter, then place catfish in oil several pieces at a time (do not over crowd fillets).
  • Fry until well browned on all sides (about 3 min.), remove and drain on paper towels.

I have found that catfish nuggets are sold fairly cheap at my local grocery store. This recipe is a tasty way to make dinner on a tight budget.

1 1/2 lbs catfish nuggets
1 egg
1 cup buttermilk
1/2 cup white cornmeal
1/4 cup breadcrumbs
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne
canola oil

Steps:

  • Scramble the egg in a large bowl then whisk in the buttermilk follow by the rest of the ingredients, except fish.
  • Heat 2-3 inches of oil in a large frying pan until hot. Dip the nuggets into the batter so they are coated then gently drop into the hot oil. Fry for 5-7 minutes, until golden brown & crispy.
  • Repeat until all the fish is fried. Place the fried fish onto a paper towel lined plate to drain excess oil.
