1/2 lime, diced
1/2 small lemon, diced
1/2 small orange, diced
1 sugar cube
ginger beer, to serve
of fresh mint, to garnish (optional)

Steps:

  • Place the fruit in the bottom of a mixing glass.
  • Add the sugar cube and a dash of ginger beer.
  • Muddle to release the juices.
  • Strain into an old-fashioned glass filled with crushed ice.
  • Top with ginger beer.
  • Garnish with a sprig of fresh mint on top of the drink if desired.
  • Serve with a straw.

1 lime
1 tablespoon sugar
1/2 cup vodka or 1/2 cup sake
ice

Steps:

  • Cut the lime in quarters then cut them crosswise.
  • Put lime and sugar in a tall glass and mash with a pestle (or a wood spoon, rolling pin, etc).
  • Add the same amount of liquor on the lime juice and stirr.
  • Add ice and stirr again.
  • Here in Brazil, the guys that sell it at the beach put another glass upside down over it, hold both with one hand and shake.
  • Great trick at parties.

1/2 lime, cut into wedges
1 ounce simple syrup (equal parts sugar and water, heated until sugar dissolves, cool)
2 ounces Cachaca (Brazilian liqueur)
1 ounce passion fruit puree
Crushed Ice

Steps:

  • Place all but 1 lime wedge in bottom of an old-fashioned glass with a little bit of crushed ice and simple syrup. Muddle all ingredients together until well blended. Fill the glass with crushed ice; pour in the Cachaca, the remaining simple syrup and the passion fruit puree. Shake vigorously and serve with a straw and the remaining lime wedge.

5 tbsp golden caster sugar
200ml cachaça
ice

Steps:

  • Put the lime wedges in a large jug with the sugar, then use a muddler or the end of a rolling pin to break them down. Release as much juice from the wedges as possible, and let it mix with the sugar to create a syrup - you can also do this with a large pestle and mortar. Discard the lime peel.
  • Divide the syrup and cachaça between four glasses, then top with the crushed ice. Serve garnished with lime wedges, if you like.

2 limes , halved
6 tbsp golden granulated sugar
400g ice
200ml cachaça

Steps:

  • Cut each of the lime halves into four chunks. Put in a large mortar with the sugar and squish well with a pestle to break them down - they will release their juices, leaving you with a sweet lime syrup. Remove the lime peel, squeeze to release the last bits of juice, then discard. Transfer the lime syrup to a small plastic container and freeze for at least 4 hrs, ideally overnight.
  • When you're ready to make the cocktail, put the ice in a blender suitable for crushing ice, then add the frozen syrup and cachaça. Blend at a high speed until smooth and thick. Transfer to cocktail glasses or tumblers and serve immediately.
