CABBAGE WITH ROASTED BESAN FLOUR
Roasted besan flour adds fine taste, texture and aroma to the stuff. I tried this with cabbage and it was a lip smacking side dish

Steps:
- Heat a wok and in medium flame dry roast the besan flour carefully to golden brown without burning it and keep aside.
- Heat oil in a pan. Saute it with mustard seeds and cumin seeds.
- After it splutters add the onions and fry till colour changes and now add the garlic and give a stir.
- Add salt and stir.
- Now add the cabbage.
- Don't add water or don't close the lid.
- Let the cabbage get cooked by stirring then and there for 10 minutes in medium flame.
- Now add the red chilly powder and mix well.
- Add the rosted besan flour and stir for a minute.
- Garnish with curry leaves.

- Preheat oven to 425 degrees F (220 degrees C).
- Brush each cabbage piece on both sides with olive oil and season with salt and black pepper. Arrange in a single layer on a baking sheet.
- Bake in the preheated oven until tender, 40 to 55 minutes.

Steps:
- Heat the oven to 200C/180C fan/gas 6. Arrange the cabbage wedges in a roasting tin, drizzle over half the oil and sprinkle with the ras el hanout and some salt. Rub the oil and spices into the wedges to coat, then roast for 15 mins.
- Tip the butter beans, tomatoes, harissa, lemon rind and 1 tsp sugar into a bowl, season and stir to combine. After the cabbage wedges have had 15 mins, carefully pour the butter bean mixture in the tin around the cabbage. Put the feta on a baking tray lined with baking parchment, drizzle with the remaining oil and scatter with the chilli flakes. Return the tin with the cabbage and beans to the oven for a further 20 mins alongside the feta.
- Spoon the roasted cabbage wedges and beans onto plates or into shallow bowls along with chunks of the baked feta. Scatter with some parsley leaves and dill fronds, then drizzle with a little more olive oil before serving.

- In a large mixing bowl, take the shredded cabbage and sprinkle salt on it. Set aside for 5 to 10 mins so that it will leave water.
- Now add all the main ingredients in to the bowl and mix well with hands to form a dough, it will be sticky but don't worry.
- You will not need any water as the cabbage is wet and oozed out water. But if it is too dry please sprinkle some water.
- Now take portions of the sticky dough, make it into a shape of big russet potato by using both hands and place it on a greased steamer. You will get 3 to 4 of these.
